1/4 teaspoon salt
1 egg, beaten
1 (29 ounce) can canned peach halves

Steps:

  • Combine sausage, onion, crouton crumbs, salt and egg.
  • Form into 8 balls.
  • Arrange peach halves, cut side up in shallow baking dish. Sprinkle with cloves. Place sausage ball in each.
  • Bake at 350 for 45 minutes.
  • Bate with pan juices while baking.
  • Drain off fat.

These sausage balls are the perfect bite-size combination of cheese, meat and biscuits -- all rolled into one. A staple around the holidays in the South, they are perfect on their own as an appetizer, or served as a side dish at your holiday table.

1 pound spicy Italian sausage, casings removed
4 cups grated extra-sharp Cheddar
2 cups baking mix, such as Bisquick
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt

Steps:

  • Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
  • In a large bowl, combine the sausage, Cheddar, baking mix, garlic powder and salt and knead with your hands until a homogenous dough forms (this will take about 5 minutes). Pinch off golf ball-size pieces of dough, roll them into balls and arrange them 1 inch apart on the prepared baking sheets.
  • Bake until the sausage balls are golden brown and cooked through, about 25 minutes. Let cool for 5 minutes and serve warm or at room temperature. Store any leftover sausage balls in an airtight container for up to 1 week.

  • Heat oven to 350ºF. Line cookie sheet with parchment paper (or spray baking sheet with cooking spray if you don't have parchment paper.).

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Combine sausage, cheese and about 2 cups of the baking mix; use hands to mix well. Gradually add in as much of the additional baking mix as possible.
  • Roll into 1 to 1 1/2 inch balls. Roll balls in any excess baking mix to coat.

2 pounds bulk hot Italian sausage
½ cup red wine vinegar
½ cup ketchup
½ cup brown sugar
1 tablespoon soy sauce
½ teaspoon ground ginger

Steps:

  • Roll sausage into 100 very small balls using no more than 1 1/2 teaspoons meat per ball.
  • Stir red wine vinegar, ketchup, brown sugar, soy sauce, and ground ginger together in a large saucepan over medium heat; bring to a simmer, reduce heat to low, and cook at a simmer until beginning to thicken, about 15 minutes.
  • Heat a skillet over medium heat. Fry sausage balls in batches in the hot skillet until browned on all sides and no longer pink in the center, 3 to 5 minutes per batch. Remove cooked sausage balls with a slotted spoon to the saucepan and stir into the sauce to coat.

1 can (15-1/4 ounces) peach halves
3/4 cup soft bread crumbs
1 tablespoon chopped onion
1 egg
1/2 teaspoon salt
1/8 teaspoon pepper
6 ounces bulk pork sausage

Steps:

  • Drain peaches, reserving 4 peach halves and 1/4 cup syrup (refrigerate remaining peaches and syrup for another use). In a bowl, combine bread crumbs, onion, egg, salt and pepper. Add sausage; mix well. Shape about 1/4 cupfuls of sausage mixture into balls; place each ball in the indentation of a peach half. Place peaches in a small greased baking dish. Bake, uncovered, at 350° for 30 minutes; drain. Pour reserved syrup over sausage; bake 5-10 minutes longer or until meat is no longer pink and syrup is heated through.

1 pound fresh, ground pork sausage
1 egg, beaten
⅓ cup cracker meal
½ teaspoon dried sage
½ cup ketchup
1 tablespoon white vinegar
1 ½ teaspoons brown sugar
1 tablespoon soy sauce

Steps:

  • In a medium-sized mixing bowl, combine sausage, egg, crushed crackers and sage. Separate the mixture into two balls.
  • Heat a skillet to a high heat and brown the sausage balls. Drain on paper towels. Transfer the balls to a container with a lid.
  • Combine ketchup, vinegar, brown sugar and soy sauce in a small pot. Stir while heating the sauce. Let the sauce come to a boil, then reduce the heat to simmer. Let the sauce simmer for 20 minutes before pouring the sauce over the balls.
  • Allow to cool, then cover the balls and sauce, and refrigerate overnight. Reheat before serving.
