CHEESY POTATO PANCAKES WITH SAUSAGE
I have not tried this recipe. I got this recipe from the Sunday coupons. I plan to use homemade pancake mix and sugar free log cabin syrup.

Steps:
- Cook and crumble sausage patties in large skillet over medium heat until no longer pink. Drain, if necessary.
- Spray skillet or griddle with no stick spray. Heat skillet over medium-high heat or electric griddle to 375.
- Combine pancake mix and potato flakes in large bowl, whisk together milk, eggs, oil and syrup, if using. Add liquids to dry ingredients, stirring just until large lumps disappear. Blend in carrots, green onions, parmesan cheese and cooked sausage.
- Pour 1/4 cup batter for each pancake onto hot skillet or griddle. Cook for 3 minutes. Turn. Cook 2-3 minutes more or until golden brown. Place 3 or 4 pancakes on dinner plate. Sprinkle with cheddar cheese and serve.

SWEDISH SAUSAGE POTATO CAKES
The source for this recipe is The Flavor of Wisconsin by Harva Hachten, a collection of recipes. This recipe was submitted by Dagmar Noel in Waukesha, WI. It can be a supper dish, as well as breakfast or lunch. The time indicated does not include mashing the potatoes. For best results, use a well seasoned raw pork sausage with plenty of flavor. That's what will season the dish. Also, be sure to use firm leftover mashed potatoes (definitely not potato puree). They will work much better to hold the patties together. Although the recipe didn't mention this, you can coat them in breadcrumbs before frying the patties to give them a crispy exterior and then serve them with a Swedish mustard sauce.

Steps:
- Crumble and brown the sausage. Drain and reserve the drippings.
- Add browned sausage, potatoes, egg, and about a tablespoon of drippings in a bowl. Add salt to taste.
- Form into 4 patties, and fry in some of the reserved drippings, browning both sides (add some vegetable oil, if needed).
- Serve hot.

- In a large bowl, combine the first 7 ingredients. In a shallow bowl, mix bread crumbs, garlic powder, onion powder and cayenne., Shape 2 teaspoons cream cheese into a ball. Wrap 1/4 cup of potato mixture around cream cheese to cover completely. Drop into crumb mixture. Gently coat and shape into a 1/2-in.-thick patty. Repeat with remaining cream cheese and potato mixture., In an electric skillet or deep-fat fryer, heat oil to 375°. Fry stuffed pancakes, a few at a time, until golden brown, 1-2 minutes on each side. Drain on paper towels.

- Into a large bowl, grate potatoes on the star grater*. It should be the consistency of applesauce. Use a spoon to skim off any excess potato liquid that floats to the top. Note: If grating by hand, protect your fingers and use safety gloves.
