2 cups packaged pancake mix or 2 cups Bisquick
1 cup milk
1 (16 ounce) package brown and serve sausages
1 (16 ounce) can peach slices in heavy syrup
1/4 cup sugar
1 tablespoon cornstarch
3/4 cup maple syrup
1 tablespoon margarine or 1 tablespoon butter

Steps:

  • Prepare pancake or bisquick mix with the milk.
  • Turn into a greased 13x9 inch baking dish.
  • Drain peaches, reserving 1/2 cup of the syrup and set aside.
  • Halve the sausages cross wise-same for the peaches.
  • Arrange the sausages and peaches on top of batter-ie.

  • Bake at 350 degrees for 20 minutes.
  • Remove from oven, let cool for 15 minutes or so, cover with foil and refrigerate overnight.
  • Next morning heat oven to 350 degrees and cook casserole for 20 minutes.
  • Serve with warm syrup Syrup: In a medium saucepan whisk together sugar and cornstarch until no lumps remain.
  • Turn heat to medium high, adding the reserved peach syrup, cooking to thick and bubbly.
  • Stir in maple syrup and margarine.
  • Serve warm.

Butter, for greasing
1/2 loaf of sliced white loaf bread
1 pound fresh bulk pork sausage with sage
10 ounces sharp Cheddar, grated
2 cups half-and-half
1 teaspoon dry mustard
1 teaspoon salt
5 large eggs, lightly beaten

Steps:

  • Cut the bread into 1-inch cubes and spread in the bottom of a greased 9- by 13- by 2- inch casserole dish.
  • In a medium skillet, brown the sausage over medium heat until fully cooked and no longer pink. Remove the sausage with a slotted spoon to drain the fat. Spread the cooked sausage over the bread and top with the cheese. Then stir together the, half-and-half, dry mustard, salt and eggs. Pour this mixture over the cheese. Cover the casserole with aluminum foil and refrigerate for 8 hours or overnight.
  • The next day, preheat the oven to 350 degrees F.
  • Bake the covered casserole until set and slightly golden, about 50 minutes. Remove from the oven and allow the casserole to set for 15 minutes before serving.

Overnight Sausage Breakfast Casserole with sausage, peppers, cheese and Italian seasoning is one my favorite make ahead breakfasts!

14 slices bread (crust removed, cubed and dried (see note))
1 package Johnsonville Naturals Italian Sausage
3 green onions (sliced)
½ red bell pepper (finely diced)
½ green bell pepper (finely diced)
2 cups shredded Italian blend cheese
2 cups mozzarella cheese
6 eggs
3 cups milk
1 teaspoon Italian seasoning
pepper to taste

Steps:

  • Remove casing from sausage and cook over medium high heat until no pink remains. Drain any fat.
  • Layer ½ of the cubes in a greased 9×13 pan. Top with ½ of each the sausage, green onions, peppers, and cheese. Repeat layers ending with cheese.
  • Combine eggs, milk, & seasonings Pour egg mixture over bread ensuring all of the bread has been covered. Refrigerate overnight (or at least 3 hours).
  • Remove from fridge and place in the oven while preheating the oven to 350°F. Bake covered with foil 65-75 minutes or until a knife inserted in the center comes out clean. (If you are baking 2 pans increase cooking time will need to increase).

1 ½ pounds bulk Italian sausage
3 cups milk
1 ½ cups shredded Cheddar cheese
9 large eggs, beaten
3 slices bread, cubed
1 ½ teaspoons dry mustard

Steps:

  • Spray a 9x13-inch casserole with cooking spray.
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Transfer to the prepared casserole.
  • Mix milk, Cheddar cheese, eggs, bread cubes, dry mustard, and salt together in a large bowl. Pour over the sausage. Cover and place in the refrigerator, 8 hours to overnight.

1/4 cup sugar
1 tablespoon cornstarch
3/4 cup maple syrup
1 tablespoon butter

1 large egg, beaten
2 tablespoons canola oil
1 package (7 ounces) frozen fully cooked breakfast sausage links, thawed and halved lengthwise

Steps:

  • Drain peaches, reserving juice; set aside. In a small saucepan, combine sugar and cornstarch; stir in 1/2 cup reserved peach juice until smooth. Bring to a boil. Cook and stir for 1-2 minutes or until thickened. Stir in syrup and butter; set aside and keep warm. , Combine the remaining juice and enough water to measure 1 cup. In a small bowl, combine the pancake mix, egg, oil and juice mixture. Pour into a greased 13x9-in. baking dish. 1 medium onion, finely chopped

1/2 teaspoon pepper
1 small zucchini, halved lengthwise and sliced
1 cup chopped fresh mushrooms
6 garlic cloves, minced
1 can (15 ounces) tomato sauce
1 jar (14 ounces) pasta sauce with meat
2 cups shredded part-skim mozzarella cheese

Steps:

  • Preheat oven to 350°. Cook pasta according to package directions for al dente; drain and transfer to greased 13x9-in. baking dish. Meanwhile, in a large skillet, cook sausage over medium heat until no longer pink, 6-8 minutes, breaking into crumbles; drain and remove from pan., In same skillet, heat butter and oil over medium-high heat. Add onion, carrot, oregano, salt and pepper; cook and stir 5 minutes. This recipe is easy, turns out well every time, can be quickly made the morning of, and is easily tailored to your tastes. Plus, my husband loves it!

1 (16 ounce) bag frozen hash browns (Seasoned or unseasoned to your taste)
1/4 cup melted butter
1 lb sausage (we prefer homemade or Jimmy Dean's sage)
1/2 yellow onion, chopped
6 jumbo eggs
12 ounces shredded cheddar cheese
16 ounces small curd cottage cheese

Steps:

  • Brown sausage. Drain.
  • Grease a 13x9 pan. In the pan, mix together the melted butter and frozen hash browns. Smooth into bottom layer.
  • In another bowl, mix together the sausage, eggs, onion, cheddar and cottage cheese.
  • Pour mixture over the hashbrowns.
  • Bake for an hour at 375 degrees. It's done when a toothpick comes out clean.

Transfer casserole mixture to a gallon ziploc bag. Remove as much air as possible from ziploc bag and seal. Place in refrigerator for at least 4 hours or over night.
