Sausagemeat and Carrot Pasta image

This unusual combination of ingredients leads to a comfort food overload.

Number Of Ingredients 10

8oz Pork Sausagemeat
1 tablespoon of Oil
1/2 of Butter
1 Onion, Chopped
1 tin of Chopped Tomatoes
1 Bay Leaf
120ml of Chicken Stock
1 teaspoon of Dried Oregano
12 ounces of Fussili Pasta
3 ounces Mature Cheddar Cheese

Steps:

  • If using whole sausage remove meat from skins.
  • Grate/shred the carrots
  • Heat the oil and butter in a saucepan and cook the onion until translucent.
  • Add the sausage meat and lightly brown, breaking it up with a fork.
  • Add the carrot and stir for a few minutes
  • Add the tomatoes, stock bay leaf and oregano and cook, covered over a low heat for 30 minutes.
  • Taste for seasoning-if the sausages are spicy you may not need any
  • Cook and drain pasta
  • Mix pasta with the sauce and serve.
  • Serve cheese separately.

I know it sounds odd but it really is quite delicious. The carrots combine with the sausage to form an unexpectedly good sauce which is thick and satisfying. It's so easy to make and a favourite supper dish in our house-even the kids love it! Use the best sausage you can-it makes a difference! This dish freezes really well and keeps in the fridge for up to 3 days!

8 ounces pork sausage
1 tablespoon oil
1/2 ounce butter
1/2 onion, chopped
3 carrots
14 ounces tomatoes
4 fluid ounces chicken stock
1 bay leaf
1 teaspoon dried oregano
12 ounces pasta (macaroni or rigatoni)
3 ounces freshly grated parmesan cheese or 3 ounces Mature cheddar cheese
seasoning

Steps:

1 apple
1 onion
2 tomatoes
1 teaspoon sugar
4 ounces sausage meat
knob butter

Steps:

  • Prepare the mashed potato or make up the instant potato as instructed on the packet. Peel, core and slice the apple. Peel and chop the onion. Slice the fresh tomatoes, or drain and slice the tinned tomatoes.
  • Place the apple slices in the base of a greased, ovenproof dish. Sprinkle with the sugar. If using sausages, slit the sausage skins to remove the sausage meat and dispose of the skins. Mix the chopped onion with the sausage meat or skinned sausages and spread the sausage mixture over the apples.
  • Spoon the mashed potato round the dish to make a border or nest for the sausage. Cover the sausage with the tomatoes. Dot the potato with the butter, and bake in an oven (400F/200C/Gas Mark 6) for 30 minutes, until the sausage is cooked and the potato is crisp and golden brown on top.

2 Kielbasa sausage rings, cut into 2-inch pieces
8 potatoes, peeled and quartered
1 onion, cut into chunks
1 (8 ounce) package baby carrots
4 cloves garlic, crushed
salt and ground black pepper to taste
3 tablespoons olive oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix Kielbasa, potatoes, onion, baby carrots, and garlic in a roasting pan; season with salt and pepper. Drizzle olive oil over the mixture; stir to coat. Cover the baking dish with aluminum foil.
  • Bake in preheated oven for 1 hour. Remove aluminum foil and bake until potatoes are completely cooked, about 30 minutes more.

This recipe uses a method in which pasta is cooked like risotto. Sometimes the noodle is toasted first, but always the broth is stirred into the pasta as it cooks. The flavor is intensified and the dish makes its own sauce.

12 ounces medium-thick carrots, peeled
6 ounces chanterelles, brushed, trimmed and quartered if large
4 tablespoons extra-virgin olive oil
5 cups chicken stock
1 medium onion, finely chopped
8 ounces Italian sweet sausage, casing removed, crumbled
12 ounces whole wheat or farro penne
Salt and ground black pepper
1/4 cup pitted black olives, halved
2 tablespoons minced parsley
Grated Grana Padano, for serving

Steps:

  • Heat oven to 425 degrees. Massage carrots and chanterelles with 3 tablespoons oil, spread on a baking sheet and roast about 25 minutes, until carrots are tender but not soft. Place stock in a saucepan and keep warm on a slow simmer.
  • Meanwhile, heat remaining 1 tablespoon oil in a 4-quart sauté pan. Add onion and sauté on medium until it starts to brown. Add sausage meat, lower heat and cook, breaking it up with a fork until it loses its redness and is uniformly crumbly. Stir in 1/2 cup stock to deglaze pan.
  • Stir in pasta. Cook on medium-low, stirring fairly frequently and adding stock 1/2 cup at a time as it's absorbed, until pasta is almost al dente, 20 to 25 minutes.
  • Slice roasted carrots 1/2-inch thick and add them and the chanterelles to the pasta. Add remaining stock and season with salt and pepper. Add olives and parsley. The pasta should be quite moist but not soupy. Serve with cheese alongside.

8 Sausages, any but nice spicy or herby ones work better than plain ones.
1 Large onion
1/2 teaspoon mustard powder
large splash Worcester sauce
4 - 5 cloves Garlic
1 bottle Red wine
pasta or spaghetti
seasoning
2 tins of chopped tomatoes
splash Olive Oil

Steps:

  • peel sausages, discard the skin, Chop the onions
  • mix up the sausage meat with the seasoning, worcester sauce, and mustard powder (get it nice and squishy!)
  • cook Onions in the Olive oil, then add the meat and cook through, add a generous dash of red wine, (drink remaining wine! - thats my favourite bit) - add the garlic, and tomatoes, reduce the sauce to taste
  • cook pasta or spaghetti
  • mix together, eat, expect other half to clean the mess up.
