Steps:
- Heat a large skillet over medium-high heat; swirl in half of oil and half of butter. Add half of mushrooms and half of thyme; cook, stirring occasionally, until mushrooms have released most of their moisture and become golden, about 14 minutes. Add half of cognac and cook, scraping up browned bits from bottom of pan. Season with salt and pepper. Transfer to a bowl.
- Repeat with second half of all ingredients. Return first batch to skillet until heated through before serving.

- Heat the butter in a skillet over medium heat. Add the mushrooms and garlic; cook and stir until the mushrooms are a light golden brown, about 10 minutes. Stir in the basil.
- Reduce heat to low, and pour the wine into the skillet. Simmer until most of the wine has evaporated. Serve immediately.

SAUTEED WILD MUSHROOMS WITH SHALLOTS AND GARLIC

Steps:
- Trim the mushrooms, wash them in cold water and drain well.
- If the mushrooms are large, slice them or cut them in halves or quarters.
- Heat a large, heavy skillet and add the olive oil. When it is very hot and almost smoking, add the mushrooms, salt and pepper. Cook over high heat, shaking and tossing the skillet so that the mushrooms cook evenly until they are browned and crisp. They should be almost mahogany in color.
- Add the butter, and quickly sprinkle in the bread crumbs, shallots and garlic, and toss well for 10 seconds. Add the parsley and serve immediately.

- Melt butter in a large cast-iron skillet or frying pan over medium-high heat for 2 minutes until it starts to sizzle. Add quartered mushrooms and sauté for 5-7 minutes until the mushrooms start to shrink and lose moisture. Stir occasionally to cook evenly. You don't want to stir it too often.
- Add Italian seasoning, salt and pepper. Stir well to mix and continue to cook the mushrooms for 2-3 minutes until they turn golden brown (but not dark brown yet). Salt will further remove water inside the mushrooms.
- Add soy sauce and garlic. Sauté for another 2-3 minutes. Soy sauce will enhance the caramelization process, which makes the mushrooms develop a characteristic rich brown colour by slowly breaking down its natural sugar.

- In a large skillet, heat butter and olive oil on low heat. Add shallots, garlic and saute until soften and translucent about 2 minutes.
- First, add in to the mixture the white button mushrooms only. Cook mushrooms for 3 to 5 minutes or until mushrooms are tender. White mushrooms are not as delicate as exotic mushrooms and need a more time to cook.
- Next, add the exotic mushroom blend, cayenne pepper, salt and parsley. Pour in the Cognac and raise heat to high for 1 minute, allowing the alcohol to infuse with mushrooms. Lower heat and cover.
