SAUTEED MUSHROOMS WITH HERBS
The secret to mushrooms that are beautifully browned and not watery is taking a hands-off approach. Stirring them as they caramelize releases the mushrooms' liquid and causes them to steam, so leaving them alone is the way to go.

Steps:
- Heat oil in a large skillet over medium-high heat. Cook mushrooms, cap sides down, without stirring, until caps are caramelized, 4 to 5 minutes.
- Reduce heat to medium. Toss mushrooms, and season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook until mushrooms are well browned, about 5 minutes more. Add garlic, butter, and thyme. Cook until garlic is golden and fragrant, about 2 minutes. Remove skillet from heat. Add wine. Return skillet to heat, and cook until wine is evaporated, about 4 minutes. Garnish with parsley. Serve warm.
SAUTEED PHEASANT WITH HERBS (FAISAN SAUTE AUX HERBES)

Steps:
- Sprinkle the pheasant pieces with salt and pepper.
- Heat the butter in a skillet and add the pieces skin side down. Cook about two or three minutes until skin is golden brown. Turn the pieces and continue cooking about three minutes more.
- Add the garlic, bay leaf, thyme and wine. Cover and cook 20 minutes or until the pheasant is tender.
- Transfer the pheasant pieces to a serving dish. Swirl the three tablespoons of cold butter into the pan sauce. Pour and scrape the sauce (including garlic and thyme sprig) over the pheasant and serve sprinkled with chopped parsley.

SAUTEED CUCUMBER WITH HERBS
Who's have thought about sauteed Cucumber? Try this for something different, elegant and tasty. Borrowed and adapted from a book called "Salads and Summer Dishes".Note: Now that I have been making this a while I thought I'd pass some tips... using dried rosemary results in less flavour, fresh gives more, but it's a bit of a "tough"herb, so I put it in with the onion and slow and *gently* saute them both. when adding the sour cream, be careful because if the mix is too hot it will split a little and presentation will be less, but even if it splits, don't worry the favour of the infused rosmary in the sour cream is wonderful... I even used my fingers to get the last of it onto the cucumber! And the cuccumber itself? Wow I am very pleasently surprised, I hope that you try this and share a whole new delicious way of eating cuccumber. ZWT REGION: France.

Steps:
- Using a sharp fork, score the cucumber by running the tines down the length of the cucumber (makes it pretty).
- Cut the cucumber into 5 cm lengths (2 inch) and then each piece length-ways into quarters, removing the seeds.
- Melt butter in frypan, add shallots/onion and saute until golden brown (about 5 minutes).
- Add cucumber pieces, together with rosemary, sugar, salt and pepper, cook for 5 minutes only, stir frequently.
- Remove pan from the heat and stir in sour cream, garnish with rosemary sprigs and serve immediately.

- Melt butter in heavy large skillet over medium-high heat. Add chayote, 1 tablespoon parsley, and garlic.
- Sauté until chayote is crisp-tender, about 3 minutes. Stir in green onions.
- Transfer to bowl; sprinkle with 1 tablespoon parsley.
CHICKEN SAUTé FINE HERBES
Steps:
- Brown the chicken pieces in the butter, turning each piece to color evenly. When pieces are browned, add salt and pepper to taste and 1/2 to 3/4 cup white wine. Cook gently until tender. Five minutes before removing the pan, add three tablespoons finely chopped herbs in any of the following combinations: fresh tarragon and parsley; fresh tarragon, parsley, and chives; parsley and rosemary; parsley and chevril; parsley, chives, and dill. Add a little additional wine if necessary and turn the chicken pieces to bathe them well with the herb mixture. Remove chicken to platter and pour pan juices over it.
