1/2 cup 2% milk
1/2 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon pepper
4 tilapia fillets (4 ounces each)
Olive oil-flavored cooking spray
3 garlic cloves, minced
1 tablespoon butter
2 teaspoons olive oil
1/2 small lemon, sliced
1/2 medium lime, sliced
1/2 small navel orange, sliced
3 tablespoons lemon juice
3 tablespoons lime juice
2 tablespoons orange juice
2 green onions, finely chopped

Steps:

  • Place milk in a shallow bowl. In another shallow bowl, combine the flour, salt and pepper. Dip fish in milk, then coat with flour mixture., Spray fillets with cooking spray. In a large nonstick skillet, cook fish over medium-high heat for 3-4 minutes on each side or until fish flakes easily with a fork. Remove and keep warm., In the same pan, saute garlic in butter and oil for 1 minute. Add the lemon, lime and orange slices, juices and onions; cook 1 minute longer. Serve with fish.

2/3 cup orange juice
1/3 cup soy sauce
1 tablespoon honey
four 6 ounce tilapia fillet
1 tablespoon vegetable oil

Steps:

  • Add orange juice, soy sauce, and honey to a resealable plastic bag. stir to dissolve the honey and add in the fish fillets. Seal the bag and press out any excess air. Turn over a few times to coat the fish. Marinate at room temperature for 15 to 20 minutes, turning the bag halfway through. Do not marinate any longer or the acid in the orange juice will cause the fish to become mushy. Remove the fish from the bag, reserve the marinade, and pat the fillets dry.
  • In a large nonstick skillet, heat the oil over medium-high heat until it shimmers. Add the fillets in batches and cook until golden brown, about 3 minutes per side.
  • Transfer the fillets to plates, add about half of the reserved marinade to the pan, and boil until it coats the back of a spoon. Check for seasoning and serve over the fish.

3/4 cup chicken stock
1/4 cup lemon juice
1 1/2 teaspoons capers, drained
1 teaspoon butter
6 tilapia fillets (1.5 pounds total)
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup all-purpose flour
olive oil
2 teaspoons butter
lemon wedge

Steps:

  • Whisk together chicken stock, lemon juice and capers. Lightly crush the capers.
  • Season the tilapia fillets with salt and pepper. Then dredge them in flour, shaking off any excess. Set aside.
  • In a large skillet, melt one teaspoon of butter over medium heat. Turn up the heat to medium-high and brown the butter (it should be a golden brown color). Add the fillets to the pan. Sauté for about 3 minutes on each side (they are done when the fish flakes easily with a fork). Add olive oil to the pan as needed if the pan becomes too dry. Transfer fillets to plates.
  • Pour the broth mixture into pan, being careful of splatter - it will instantly boil, steam and hiss. Scrape the bottom of the pan to loosen any browned bits. Continue heating and stirring until the mixture is reduced to about 1/2 cup. Remove the pan from the burner and whisk in two teaspoons of butter. Spoon two tablespoons of mixture, give or take, over each fillet.

1 teaspoon lemon-pepper seasoning, or to taste
1 teaspoon ground cumin, or to taste
1 teaspoon paprika, or to taste
1 teaspoon dried mustard, or to taste
garlic powder, or to taste
4 (4 ounce) fillets tilapia
cooking spray

Steps:

  • Mix olive oil, lemon pepper, cumin, paprika, dried mustard, and garlic powder together in a small bowl. Brush each tilapia fillet with mixture using a pastry brush. Flip; brush the other side. Cover with aluminum foil and refrigerate for 1 hour.
  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Spray a large piece of foil with cooking spray and place on the grill. Transfer tilapia onto the foil.
  • Cook fillets on the preheated grill until they're easily flaked with a fork, about 5 minutes per side. Serve.

1 lemon
3 pounds uncooked medium shrimp, peeled and deveined
1 tablespoon olive oil
1 small onion, chopped
2 ribs celery, chopped
2 cloves garlic, crushed and chopped
salt and ground black pepper to taste
1 sprig fresh rosemary, chopped, or to taste
¼ teaspoon dried basil
¼ teaspoon dried oregano
¼ teaspoon ground coriander
1 bay leaf
¾ cup white wine, or to taste
1 teaspoon Worcestershire sauce, or to taste

Steps:

  • Squeeze lemon over shrimp and set aside.
  • Heat olive oil over medium heat. Add onion, celery, and garlic. Season with salt and pepper and cook until tender, about 5 minutes. Stir in rosemary, basil, oregano, coriander, and bay leaf. Add white wine and Worcestershire sauce; cook until sauce is slightly reduced and flavors come together, 8 to 10 minutes.
  • Add shrimp to the sauce and cook until pink, 5 to 7 minutes more.

Steps:

  • Sprinkle the fillets on both sides with salt. In a large skillet, heat the oil over medium heat until it's hot but not smoking. Add the tilapia to the pan and cook until the fish is opaque, about 3 minutes per side. Remove from the pan and keep warm.
  • Wipe out the skillet and prepare the citrus-garlic sauce. Arrange the fillets on 4 individual plates or on a platter. Pour the sauce over the fillets and serve.

Coarse salt
16 bulbs baby fennel, root ends trimmed and tops trimmed on the bias
Zest of 1 lemon, cut into 1-by-1/16-inch strips
1 cup white-wine vinegar
1 cup sugar
Extra-virgin olive oil
2 oranges, preferably Mineola
Juice of 4 oranges, preferably Mineola
4 (6-to-8-ounce) halibut steaks, skin-on
10 coriander seeds
4 sprigs fresh bay leaves
Fresh cilantro sprigs, for garnish

Steps:

  • Bring a large pot of water to a boil over high heat; prepare an ice-water bath. Add salt to boiling water; return to a boil. Add fennel and cook until just tender, about 3 minutes. Drain and immediately transfer to ice-water bath to cool; drain and set aside.
  • Place lemon zest in a small saucepan and add enough water to cover. Place over medium high heat and bring to a boil; drain, return lemon zest to saucepan and repeat process twice more.
  • Place vinegar and sugar in a medium saucepan. Bring to a boil over medium heat, stirring occasionally, until sugar is dissolved. Remove from heat and add lemon zest; let steep for at least 10 minutes.
  • Slice the top and bottom of 2 oranges with a paring knife. Set one of the flat sides on your work surface. From top to bottom, following the curve of the fruit, cut away peel and white pith. Trim off any remaining pith. Holding the orange over a small saucepan, cut along both sides of each segment, staying close to the membrane, to release. Drizzle with olive oil and toss to combine; set aside.
  • In a medium skillet, bring orange juice to a boil over medium-high heat. Cook until thickened, about 3 minutes. Transfer to a medium heatproof bowl and drizzle with olive oil; set sauce aside.
  • Meanwhile, add just enough olive oil to coat bottom of nonstick skillet; place over high heat. When oil is hot, add fish and cook, turning once until opaque, about 7 minutes.
  • Heat a large dry skillet over medium-high heat. Add coriander seeds and toast until fragrant, 4 minutes. Remove from pan and crack slightly with the back of a spoon. Add to saucepan with orange segments and place over medium-low heat to warm.
  • Place fennel in a medium skillet; drizzle with olive oil. Add bay leaves and place over medium-low heat until warmed, about 2 minutes.
  • Divide fish and fennel evenly between 4 plates. Top fish with orange segments and steeped lemon zest; spoon over sauce. Garnish with cilantro. Serve immediately.
