Serve these simply prepared pork chops with our Apricot-Mustard Sauce.

4 bone-in pork loin chops (6 to 8 ounces each)
1 tablespoon olive oil
Coarse salt and ground pepper

Steps:

  • Season 4 bone-in pork loin chops with coarse salt and ground pepper. Heat 1 tablespoon olive oil in a large skillet over medium-high. Cook pork chops until browned and cooked through, 3 to 5 minutes per side.
  • Serve with Apricot-Mustard Sauce if desired.

1 teaspoon crushed dried rosemary
1 teaspoon dried basil
1 teaspoon minced garlic
1 pinch black pepper
2 tablespoons olive oil
4 pork chops
1 cup fresh lemon juice
½ cup crumbled feta cheese with basil and sun-dried tomatoes

Steps:

  • In a small bowl, stir together rosemary, basil, garlic, and pepper.
  • Heat olive oil in a large skillet over medium heat. Dip pork chops in lemon juice, and sprinkle both sides with herb mixture. Place pork chops in skillet, and sear both sides, about 7 minutes per side. Reduce heat to low. Sprinkle feta on top of chops; cover skillet, and cook until cheese begins to melt, about 5 minutes.

4 pork chops
4 cloves garlic, chopped
2 shallots, chopped
1 bunch scallion, chopped (julienne green part of 2 for garnish)
1 ounce black olives
1 ounce capers
1 can whole tomato in puree (10 oz)
1 cup chicken stock
2 ounces feta cheese, crumbled
1 cup fried onions (more or less, crush some into powder, leave some whole)
olive oil

Steps:

  • 1. In a saucepan, sweat garlic, shallots, and scallions with olive oil until soft. Add black olives, capers, can of tomatoes, and chicken stock. Simmer until flavors come together and acidity is cooked out. Strain through a mesh basket, leaving some texture. Season to taste.
  • 2. Season pork and heat sauté pan with oil. Sear pork chops and finish cooking in oven until medium. Let rest and sprinkle with crushed onion strips.

2 tablespoons olive oil, divided
1 large onion, halved and thinly sliced
4 pork loin chops, 1 inch thick
salt to taste
black pepper to taste
1 pinch garlic powder to taste
½ pint red grape tomatoes, halved
½ pint yellow grape tomatoes, halved
3 cloves garlic, diced
1 tablespoon dried basil
2 ½ teaspoons balsamic vinegar
4 ounces feta cheese, crumbled

Steps:

  • Heat 1 tablespoon oil in a skillet over medium heat. Stir in the onion and cook until golden brown. Set aside.
  • Heat 1/2 tablespoon oil in the skillet. Season pork chops with salt, pepper, and garlic powder, and place in the skillet. Cook to desired doneness. Set aside and keep warm.
  • Heat remaining oil in the skillet. Return onions to skillet, and stir in tomatoes, garlic, and basil. Cook and stir about 3 minutes, until tomatoes are tender. Thin-cut bone-in lean pork rib chops cook in minutes and offer a hearty, meaty richness that can be extra satisfying. Choose chops that don't have striations of fat in the meat; if they have a large fat cap, simply trim it off before cooking.

1/2 teaspoon dried thyme
1/2 teaspoon sweet paprika
1 teaspoon kosher salt

4 1/2- to 3/4-inch-thick lean bone-in pork rib chops
1 tablespoon canola oil
2 medium zucchini, halved lengthwise and sliced crosswise into 1/4-inch-thick pieces
1/4 teaspoon kosher salt
2 tablespoons finely chopped fresh parsley (basil, mint, or oregano is great, too)
1 medium tomato, finely chopped
1 teaspoon olive oil
Juice of 1/2 lemon
1/4 cup finely crumbled feta cheese (about 2 ounces)

Steps:

  • To season and cook the pork chops: Stir together the oregano, thyme, paprika, salt, and pepper in a small bowl. Set the pork chops on a cutting board and season both sides of each chop with the spice blend.
  • Heat a large skillet over high heat for 1 minute. Add the canola oil, and once it shimmers, add the chops. Reduce the heat to medium-high and cook, without moving the chops, until they are nicely browned, 3 to 4 minutes. Flip the chops and cook on the other side until browned and the centers resist light pressure, 2 to 3 minutes more. Transfer to a plate and set aside.
  • To cook the zucchini: Add the zucchini to the skillet with the salt and cook, stirring occasionally, until the zucchini softens, 3 to 4 minutes. Stir in the herbs, then transfer the zucchini to a medium bowl. Stir in the tomato, olive oil, and lemon juice, then sprinkle with the feta cheese.
  • Divide the zucchini among 4 plates and serve with the pork chops.

1 onion, chopped
1 bell pepper - chopped, your color choice
1 (15 ounce) can tomato sauce
garlic powder to taste

Steps:

  • Heat enough oil to just cover the bottom of a large skillet over medium high heat. Dredge the pork chops in flour, add to pan and brown well on both sides. Remove chops and set aside.
  • Add the onion and bell pepper and cook and stir for 5 minutes, or until almost tender. Return pork chops to skillet and pour in the tomato sauce. Allow the sauce to start bubbling and then reduce heat to low.
