1 1/2 cups uncooked shredded sweet potato (about 1/2 potato)
1/2 cup sugar
1/3 cup vegetable oil
2 eggs
1 cup Gold Medal™ all-purpose flour
1/2 cup Gold Medal™ whole wheat flour
2 teaspoons instant minced onion
1 teaspoon dried rosemary leaves, crumbled
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
1 tablespoon sesame seed

Steps:

  • Heat oven to 350°. Grease bottom only of round pan, 9x1 1/2 inches, with shortening.
  • Mix sweet potato, sugar, oil and eggs in large bowl. Stir in remaining ingredients except sesame seed. Spread in pan. Sprinkle sesame seed over batter.
  • Bake 25 to 30 minutes or until toothpick inserted in center comes out clean. Serve warm.

This savory bread will taste almost like a good stuffing if you use sage in your herbs mix. It is baked in a heavy skillet in the oven, like cornbread.

110 grams (1 1/8 cups) rolled oats
70 grams (1/2 cup plus 1 tablespoon) whole wheat pastry flour
10 grams (2 1/4 teaspoons) baking powder
4 1/2 grams (scant 3/4 teaspoon) salt
1 gram (1/4 teaspoon) freshly ground pepper
150 grams (1/2 cup plus 1 tablespoon) milk
110 grams (2 extra large) egg
1/2 cup fresh herbs, such as parsley leaves, sage, marjoram, thyme, dill, chopped (1/3 cup chopped)
50 grams (3 tablespoons) grated onion
4 tablespoons extra virgin olive oil

Steps:

  • Preheat the oven to 400 degrees.
  • Place the oats in the bowl of a stand mixer or into the bowl of a food processor fitted with the steel blade. Sift together the flour, baking powder, salt, and ground pepper and add to the oats. Add the remaining ingredients except 2 tablespoons of the olive oil and mix at medium speed or pulse together until well blended. Scrape down the sides of the bowl and the beater and mix again for about 30 seconds.
  • Add 2 tablespoons of the oil to a 9-inch cast iron skillet and place in the oven for 5 minutes. Remove from the oven and spread the batter in the pan.
  • Place in the oven and bake 30 minutes, until the top is nicely browned and a tester comes out clean when inserted in the middle. Remove from the heat and serve hot, or allow to cool on a rack.

½ cup vegetable oil
2 eggs
1 ¾ cups sifted all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt

1 cup cooked and mashed sweet potatoes
½ cup chopped pecans

Steps:

  • Combine sugar and oil; beat well. Add eggs and beat. Combine flour, baking soda, salt, cinnamon and nutmeg. Stir flour mixture into egg mixture alternately with water. Stir in sweet potatoes and chopped nuts.

1 teaspoon ground nutmeg

Steps:

300g steamed sweet potato (about 1 +1/3 cups mashed)
3 large eggs
1/4 cup olive oil
1 cup cassava flour (150g)
1 Tbsp fresh thyme
1 tsp baking soda
1/2 tsp salt
1/2 cup water

Steps:

  • Preheat oven to 350 degrees F.
  • Wash sweet potato and cut into cubes, then steam in a steamer pot until tender. Cool to room temperature.
  • Add cooled sweet potato, egg and olive oil to food processor* Blend until well mixed.
  • Add in cassava flour, thyme, baking soda and salt. Mix with a spatula, then blend.
  • Add in water, mix with a spatula and then blend until smooth.
  • Pour batter into a lined 8" x 4" baking pan. Bake at 350 degrees for 60 minutes.
  • Remove bread from oven and cool in pan to room temperature, or for at least 15 minutes. Then, transfer to a cooling rack to further cool and release some moisture.

3 cups whole grain spelt flour
2 1/2 cups mashed sweet potatoes
1 tsp dried garlic
1 tsp dried rosemary
1 tsp dried parsley
1 tsp onion powder
1 tbsp flaxseed meal
1 tsp baking powder
1/2 tsp baking soda
3/4 tsp salt
1 tsp maple syrup
1 tbsp olive oil
1/4 cup water
1 tbsp white sesame seeds

Steps:

  • Preheat oven at 375 degree Fahrenheit and prepare 9*5 inch bread pan by greasing and dusting it.
  • In a bowl combine all the ingredients (except water and sesame seeds) and knead very well with hands so that sweet potatoes are well mixed.
  • Add water gradually to it for soft dough. (Tortilla like dough). The dough should be soft but not runny. It should stick well and should be firm at the same time. Knead for 3-4 minutes. The more you knead the dough the softer and fluffy the bread would be.
  • Now shape the dough as per your baking pan. Don't press it from above too much. It's ok to have a small oblong shape as well like artisan breads. Place the dough in the pan.
  • Sprinkle the sesame seeds on its top and bake in the middle rack for 25 minutes. Then turn the pan to the other side for even baking and bake again for another 15 minutes or until the tester comes out clean.
  • Take it out of the oven and let it cool for a while. Cut into desired slices and eat with vegan margarine/butter or any topping of your choice.

Roasted, puréed sweet potatoes lend moisture, flavor and a rich golden color to this hybrid breakfast bread and pastry. Here, a batter-like layer added to the yeasted dough, referred to as a wine loaf, helps prevent those gaps that often form in swirled breads. This recipe bakes beautifully in a small Pullman loaf pan, but any 1 1/2-pound-capacity loaf pan will do. If you can spare a slice, it makes a beautiful overnight French toast.

2 1/4 teaspoons active dry yeast (from a 3/4-ounce packet)
2 3/4 cups/390 grams bread flour, plus more for kneading
2 1/2 teaspoons kosher salt
1/2 teaspoon freshly grated nutmeg
1/4 teaspoon ground mace
5 tablespoons/70 grams unsalted butter, at room temperature, plus more for greasing
1/3 cup/75 grams dark brown sugar
1 large egg
3/4 cup/210 grams sweet potato purée (from about 1 large sweet potato; see Tip)
1 tablespoon heavy cream, half-and-half or milk, for brushing
1 cup/150 grams golden or dark raisins (or a combination)
1/3 cup/40 grams bread flour
1/4 teaspoon baking powder
1/4 teaspoon kosher salt
1 teaspoon ground cinnamon, plus more for sprinkling
1 1/2 tablespoons/20 grams unsalted butter, room temperature
2 tablespoons dark brown sugar
1 large egg

Steps:

  • Prepare the dough: In a small bowl, mix together the warm water and yeast. Let sit, undisturbed, for 1 minute, then whisk to dissolve. Let sit until frothy, about 5 minutes.
  • In a medium bowl, whisk together 2 3/4 cups flour, salt, nutmeg and mace. Set aside.
  • In a large bowl, using a wooden spoon, beat together the 5 tablespoons butter and the sugar to form a paste. You are not looking for a lot of air; you just want the mixture to look cohesive.
  • Break the egg into a small bowl or cup and stir with a fork to break up the yolk a bit, then add to the creamed sugar base. Beat with a sturdy wooden spoon to combine. Add the sweet potato purée and continue beating until mostly incorporated; the mixture will look curdled. Stir in the yeast mixture.
  • Add the flour mixture and stir to create a soft, shaggy dough. Turn it out onto a flour-dusted surface and knead and fold the edges of the dough into the center until it comes together.
  • Continue kneading for about 8 minutes, adding flour as necessary if the dough gets sticky until you form a smooth but tender ball. This is a wetter dough and may absorb up to 1/4 cup more flour, so keep adding as you knead. (Alternately, this whole process can be done in a mixer, using the beater attachment on low to combine the butter and sugar until creamy. Stream in the beaten egg, followed by the sweet potato purée and finish with the flour. Once all the flour is added, switch to the dough hook and mix on medium-low for 6 to 8 minutes. Three minutes into kneading, check for tackiness and add flour if the dough does not come cleanly off the hook.)
  • Scrape any leftover bits from the large bowl and discard. Grease with a little butter or oil, nest the dough in the bowl turning it once to coat lightly. Cover with a plate, pot lid or wet towel and let sit in a warm place until doubled in volume 1 1/2 to 2 hours.
  • Punch down the dough, fold the edges into the center, flip the dough over and cover with a pot lid or an inverted plate. Chill overnight in the refrigerator (or at least 8 hours).
  • The next morning, soak the raisins in boiling water to cover and let them sit for 10 minutes to plump. Drain well and set aside. Grease a 1 1/2-pound-capacity loaf pan (such as a 9-by-4-inch small Pullman or a 10-by-5-inch loaf pan) with softened butter or oil.
  • Make the wine loaf: In a small bowl, whisk together the flour, baking powder, salt and cinnamon. In a separate small bowl, beat together the butter and sugar to make a paste. Add the egg and beat to combine. Add the flour mixture and stir until smooth and uniform. Keep at room temperature.
  • Remove dough from the fridge; it should be puffy and nearly doubled in size. Turn the dough out onto a lightly floured surface. Roll the dough out into an oblong sheet that is about 18-by-6 inches, using a little flour if necessary to keep it from sticking.
  • Spread the wine loaf across the surface of the dough in a thin, even layer, using an offset spatula or sturdy rubber spatula.
  • Scatter the plumped raisins over the battered dough, pressing lightly to adhere, then sprinkle very lightly with additional cinnamon to lightly coat.
  • Roll the dough up lengthwise, shaping it into a tight 6-inch-long log. When finished, rock the loaf back and forth a bit on the surface and press on both ends with your hands to even it out. You want the loaf to fit snugly in the bottom of the pan. To adjust the dimensions, roll it a little more to elongate it or press the ends a few more times to make it shorter. Lift it up and slip the loaf into the buttered loaf pan, seam-side down.
  • Let rise at room temperature, covered loosely with a sheet of lightly greased plastic wrap, until doubled and brimming in your pan, about 3 hours.
  • When your loaf looks close to ready, heat the oven to 375 degrees and position a rack in the center.
  • Brush the surface of the loaf with cream, and bake for 50 minutes to 1 hour 15 minutes, rotating after 30 minutes to ensure even coloring. The loaf should be a deep golden brown and register 200 degrees when tested with a thermometer. (If the loaf is browning too quickly, you can tent with aluminum foil halfway through baking.)
  • Remove from the oven and, using oven mitts or towels, bang the pan on all sides on the counter to release the loaf, carefully unmolding it onto a cooling rack. Let loaf cool completely before slicing. (If you cut it when hot, you may dry out the interior.) Store bread in an extra large sealed bag for 2 to 3 days, slice it before bagging for easy toasting. You can also freeze it in resealable freezer-safe plastic bags, whole or sliced.

TEDDY'S SPICY SWEET POTATO BREAD

I created this recipe after my husband found out he had high cholesterol levels. Everyone who tries this bread loves it, so far! Some of the ingredients are not easy to find (taro starch, for example) unless you have an Asian grocery nearby. Substitutions can easily be made, however. My goal was to make a healthier yummy bread and here it is!

3 egg whites
1 ½ cups pureed sweet potatoes
½ cup safflower oil
¼ cup almond milk
1 tablespoon taro starch
¾ cup dark brown sugar

1 teaspoon vanilla extract
1 cup whole wheat flour
½ cup glutinous rice flour
¼ cup all-purpose flour
1 tablespoon ground cinnamon
2 teaspoons baking soda
1 teaspoon ground ginger
1 teaspoon ground nutmeg
½ teaspoon ground allspice
½ teaspoon ground cloves
1 pinch salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 8x4-inch pan with 1 teaspoon safflower oil.
  • Beat egg whites briefly in a large bowl using an electric mixer. Blend in sweet potatoes and 1/2 cup safflower oil on low speed.
  • Heat almond milk on the stovetop or microwave until hot but not boiling. Stir in taro starch until dissolved; mixture will be smooth and thick. Blend taro mixture into the sweet potato mixture. Add brown sugar, white sugar, and vanilla extract; continue blending until smooth.
  • Stir whole wheat flour, rice flour, all-purpose flour, cinnamon, baking soda, ginger, nutmeg, allspice, cloves, and salt together. Mix into the sweet potato mixture until batter is smooth and blended. Pour into the prepared pan.
  • Bake in the preheated oven until top springs back when pressed, about 1 hour. Let bread cool for at least 15 minutes before removing from the pan.
