8 ounces noodles
4 -5 tablespoons vegetable oil
2 large onions, chopped
salt & freshly ground black pepper, to taste
1/2-1 teaspoon paprika, depending on taste,plus
extra paprika, for sprinkling
2 large eggs, beaten well

Steps:

  • Preheat oven to 350 degrees.
  • Cook noodles uncovered in a large pot of boiling salted water over high heat about 4 minutes or until nearly tender but firmer than usual.
  • Drain, rinse with cold water, then drain well again.
  • Transfer to a large bowl.
  • Heat 3 to 4 tablespoons oil in large skillet over medium-low heat.
  • Add onions and saute about 20 minutes or until very tender and light brown, (but not burned!) stirring occasionally.
  • Add salt, pepper, and 1 teaspoon paprika, and saute about 5 minutes or until well browned.
  • Cool slightly.
  • Stir onion mixture into noodles.
  • Adjust seasoning, mixture should be seasoned generously.
  • Add eggs and mix well.
  • Oil a 2 quart baking dish and add noodle mixture.
  • Sprinkle with remaining tablespoon oil, then dust with paprika.
  • Bake uncovered 1 hour or until set.
  • Serve from baking dish.

1/2 lb broad egg noodle
2 -3 stalks broccoli
1/4 head cauliflower
1 tablespoon vegetable oil
1 medium onion, peeled and chopped
1 cup sliced mushrooms
1 teaspoon pressed garlic
1/2 lb part-skim ricotta cheese
1 cup shredded low-fat cheddar cheese
1/2 teaspoon dried mustard
salt and pepper

Steps:

  • Preheat oven to 350 degrees.
  • Grease a 9-by-9-inch nonstick pan.
  • Cook the noodles according to package directions and set aside.
  • Coarsely chop the broccoli and cauliflower.
  • Steam the vegetables together for 4 or 5 minutes.
  • Set aside to cool.
  • Heat the oil in a skillet.
  • Add the onion, mushrooms and garlic.
  • Sauté for 10 minutes.
  • In a large bowl, combine the noodles, broccoli, cauliflower, onion, mushrooms, ricotta cheese, 1/2 cup of the cheddar cheese and dry mustard.
  • Toss to thoroughly mix.
  • Add salt and pepper to taste.
  • Place the mixture in the nonstick pan.
  • Sprinkle the remaining cheddar cheese all over the top of the kugel.
  • Bake for 30 minutes, or until the cheese bubbles and browns slightly.

1 large onion, thinly sliced

4 scallions, chopped, white and green parts separated
Three 10-ounce packages frozen cut spinach, thawed and drained
4 large eggs, lightly beaten
2 cups heavy cream
1 cup sour cream
3 cups crumbled feta (about 16 ounces)
1/3 cup chopped fresh dill
1/3 cup chopped fresh parsley
1/8 teaspoon freshly grated nutmeg
3 tablespoons grated Parmesan

Steps:

  • Preheat the oven to 350 degrees F. Spray a 9-by-13-inch glass baking dish with cooking spray.
  • Bring a large pot of salted water to boil and cook the egg noodles until al dente according to package instructions. Drain the noodles, drizzle with 1 tablespoon of the olive oil and set aside in a large bowl.
  • Heat the remaining 2 tablespoons olive oil in a large skillet over medium heat. Add the onion and scallion whites and cook, stirring occasionally, until translucent and softened, about 7 minutes.
  • Add the garlic to the skillet and cook, cooking frequently, until softened, about 2 minutes. Mix in the scallion greens and spinach and cook until spinach is warmed through, about 3 minutes.   • Mix the eggs, cream, sour cream, 2 cups of the feta, dill, parsley, nutmeg, 1 teaspoon salt and several grinds of pepper in a medium bowl. Pour into the bowl with the noodles and gently mix until evenly incorporated. Transfer the noodle mixture to the prepared baking dish and sprinkle the top with the Parmesan and remaining 1 cup feta. Bake, rotating halfway through, until the top is golden brown and the custard is set, about 45 minutes. Let cool for 10 minutes before serving.

1 cup ricotta cheese
1 cup golden raisins

Steps:

  • Preheat the oven to 350 degrees F. Butter a 10 by 13 by 2 1/4-inch baking dish.

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the egg noodles, and return to a boil. 1 pound broad egg noodles
6 large eggs
2 cups (16 ounces) sour cream, room temperature
1 cup sugar
12 ounces cream cheese, room temperature
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 large Granny Smith apples, (about 12 ounces total), peeled, cored, and chopped into 1/2-inch pieces (about 3 cups)

Steps:

  • Preheat oven to 350 degrees. Butter a 13-by-9-inch baking dish; set aside. Bring a large pot of salted water to a boil. Add noodles; cook until al dente according to package instructions, about 6 minutes. Drain noodles; return to pot. Set aside.
  • Put eggs and sour cream into the bowl of an electric mixer fitted with the paddle attachment; mix on medium speed until combined. Mix in 3/4 cup sugar, 3/4 cup butter, and the cream cheese. Set aside.
