Savoury Oatmeal with Cheese and Mushrooms! image

A rich, satisfying oatmeal with cheese recipe with a savoury boost!

Number Of Ingredients 11

50 g Oats (Whole, steel-cut, or rolled)
100-150 ml Milk of Choice (Avoid soy milk and those with additives. (I used 150ml organic semi-skimmed cow's milk).)
100 g White Button Mushrooms
30 g Natural Cheese (pref. raw, unpasteurised, and organic. (I used goat's, but choose your favourite).)
1 medium Tomato
1 tsp Oregano
½ tsp Thyme
½ tsp Cayenne Chili Powder
½ tsp Garlic Powder (or 2 diced fresh garlic cloves.)
to taste Black Pepper
to taste Salt ((I prefer black salt for this recipe).)

Steps:

  • If you haven't done so already, I highly recommend fermenting or at least soaking your oats before cooking. This should be done with all grains maximum nutrition, health benefits, and flavour!
  • Drain the oats in a strainer or colander (optionally reuse / save 1-2tbsp oats and water for next batch). Return them to the bowl.
  • Brush or lightly rinse the mushrooms if necessary. Chop the stalks into small pieces and finally dice the mushrooms.
  • Add the mushrooms to a microwave-safe bowl and sprinkle with garlic powder. Add a tablespoon of water and microwave for 3 to 4 minutes, covered with a microwave-safe plate.
  • Whilst the mushrooms are cooking, add 100-150 ml milk to your oats and stir.
  • Using a tea towel or oven gloves, remove the cooked mushrooms from the microwave and set aside. Microwave oats for 3 minutes on high.
  • When the oats are cooked, stir in your mushrooms and season with oregano, thyme, and chili powder if using.
  • Slice a tomato and decorate oats as desired. Grate or crumble your chosen cheese overtop, season with salt and pepper to taste, and return to the microwave for 30-60 seconds.
  • OPTIONAL: Serve up with your favourite protein! I actually mixed tuna in with this just like you might pasta - it's delicious, trust me.
  • Now indulge and enjoy your easy oatmeal with cheese!

I eat steel cut oats every day for breakfast, but was getting really tired of the "same old same old." I thought "they use rice for sweet and for savory, why not oatmeal?" Here is the first recipe that I came up with. I do cook my oatmeal ahead of time in a crock pot. I use half unsweetened soy milk and half water for the liquid.

1 cup cooked steel cut oatmeal
1/2 cup chopped mushroom (I like portobellos)
1 spring onion, finely chopped
1 small garlic clove, finely chopped
1/2 teaspoon Mrs. Dash table blend seasoning
salt
pepper
1 tablespoon olive oil

Steps:

  • Heat up the oil in a skillet. Add the onion and garlic and cook just until softened. Add the mushrooms and Mrs. Dash, cover and cook for about 5 minutes. Add the oatmeal and serve.

  • Heat 1 tsp of olive oil in a large skillet over medium heat then add the shallots and stir for 1-2 minutes. Next, add the steel cut oats, rolled oats, water, and salt and stir. Bring mixture to a boil, then reduce heat to a a simmer and simmer the oats for 4-8 minutes, stirring occasionally.
  • While oats are cooking, heat the remaining oil in a separate skillet, then add the brussels sprouts and sweet potato, and cook over medium-high heat, stirring occasionally until they're cooked. Note: you may need to add more oil so that they cook faster.
  • Once the sprouts and potatoes are cooked, turn the heat down to low and use a spatula to create a hole in the center of the skillet; then, crack an egg in the center. If you're cooking two eggs, create two holes. Fry the egg(s) until it's cooked all the way through.

  • In a large Dutch oven or a deep sauté pan, heat the olive oil over medium-high heat. Add the onions and cook, stirring frequently, until just beginning to soften, about 2 minutes. Add the mushrooms and cook, stirring frequently, until softened, about 8 minutes. Add the salt and pepper; stir. Add the garlic and cook, stirring constantly, for 30 seconds. Add the oats and stir until toasted and fragrant, about 2 minutes.
  • Add the chicken broth along with 2 cups water and the thyme, and bring the pan to a simmer. Let the oats cook, stirring often, until they have absorbed almost all of the liquid, about 12 minutes. Stir in the spinach, 1 cup at a time, and allow it to wilt into the thickened oatmeal. Season to taste with salt and pepper. Serve each portion topped with 1 tablespoon grated Parmesan cheese and additional fresh thyme, if desired.
  • Optional, for a heartier meal: Spray a large nonstick skillet with cooking oil and set it over medium-high heat. Once hot, add the eggs and cook until the whites are opaque and the yolk is set but still runny (or to your desired doneness), 6 to 8 minutes. Serve 1 fried egg on top of each oatmeal portion.
