SPICY SHRIMP AND TOMATOES WITH SCALLION RICE
The sauce for these shrimp is made by simply tossing quickly sauteed tomatoes and shrimp in a bowl with what is known as compound butter: room temperature butter that has been flavored by mashing in something tasty like herbs or seasoning--in this case, lemon zest and hot sauce. You can make the butter and cook the shrimp and tomatoes in the time it takes to cook the rice.

Steps:
- Melt 2 tablespoons of the butter in a medium saucepan over medium heat; add the scallion whites and cook, stirring occasionally, until soft and translucent, about 3 minutes. Add 1 1/2 cups water, the rice, 1/2 teaspoon salt and the bay leaf, increase the heat to medium high and bring to a simmer. Stir a few times, cover, reduce the heat to low and simmer until the rice is tender and the water is absorbed, about 17 minutes. Remove from the heat and set aside.
- Meanwhile, zest the lemon into a large mixing bowl and add the remaining 4 tablespoons butter, the hot sauce and a pinch of salt. Stir until well combined. Gently stir in half of the parsley, reserving the remaining parsley for garnish. Cut the zested lemon into wedges and reserve.
- Sprinkle the shrimp liberally with salt and pepper. Heat 1 tablespoon of the olive oil in a large skillet over medium-high heat. Add the tomatoes and some salt and cook, shaking the skillet frequently, until the tomatoes just start to pop, about 5 minutes. Transfer to the mixing bowl with the butter. Heat the remaining 1 tablespoon olive oil in the skillet. Add the shrimp and cook until the bottoms turn pink, about 1 1/2 minutes; flip and cook until just cooked through, about 1 minute more. Add the shrimp to the tomatoes and toss gently to coat everything with the butter and mush the tomatoes a bit more.
- Fluff the rice and stir in the scallion greens. Divide the rice among 4 dinner plates, top with the shrimp, tomatoes and sauce, scatter the remaining parsley leaves over the top and put a lemon wedge on each plate. Serve immediately, with extra hot sauce.

- Preheat a grill to high heat.
- In a large saucepan over medium-high heat, add the peanut oil. Add the rice and toast it in the oil until it releases a nutty fragrance, about 1 minute. Pour in the chicken stock and bring the rice to a boil. Reduce the heat to low, cover the pan, and let the rice simmer until the liquid has been completely absorbed, about 18 to 20 minutes. Turn off the heat and let the rice sit, covered, for 10 minutes.
- Toss the scallions in a large bowl with the olive oil and season with salt and pepper, to taste. Arrange them on the grill and grill until they develop a nice char, about 1 to 2 minutes on each side. Remove them from the grill to a cutting board and roughly chop. Fold the scallions, bean sprouts, cilantro and jalapenos into rice and transfer to a serving bowl. Serve immediately.
CHICKEN AND RICE WITH SCALLION-GINGER SAUCE
Chicken and rice is a favorite combination around the world. This version, an Asian-inspired one-pot meal, coaxes a lot of flavor out of a limited ingredient list. Rinsing rice until the water runs clear helps remove extra starch on the outside of the grains and will make rice less gummy when cooked. The most essential step when cooking rice on the stovetop is to resist the urge to peek under the lid; the telltale sign that the rice is done is when the steam rising from under the lid has subsided. (In the early stages of cooking rice, there may be visible steam escaping the saucepan, but as the moisture is absorbed by the rice, you may notice less steam.)

Steps:
- Place rice in a fine-mesh sieve and rinse under cold water, shaking gently, until the water runs clear. In a medium saucepan, combine rice, broth and 1 tablespoon grated ginger. Season chicken all over with salt and pepper and place on top of rice mixture. Cover and bring mixture to a boil over high. Once mixture comes to a boil, reduce heat to medium-low and simmer until rice is plump, broth is absorbed and chicken is cooked through, 20 to 22 minutes. Turn off heat and let rest, covered, 10 minutes.
- Meanwhile, in a medium bowl, combine the vegetable oil, scallions, vinegar, jalapeño, sesame seeds, sesame oil, sugar and remaining ginger; season with salt and pepper.
- Remove chicken from saucepan and slice 1/2-inch thick crosswise. Fluff rice with a fork and divide among bowls. Top with chicken and scallion-ginger sauce.

- Add the rice to the pan and cook it for a minute, then add the chicken stock.

- In a large saucepan bring 4 quarts water to a boil with the salt. Sprinkle in the rice, stirring until the water returns to a boil, and boil it for 10 minutes. Drain the rice in a large colander and rinse it. Set the colander over a large saucepan of boiling water and steam the rice, covered with a kitchen towel and the lid, for 15 minutes, or until it is fluffy and dry. From thekitchn.com
- Top off soup. Finely sliced scallions sprinkled over a bowl of soup add bold eye-catching color as well as a zingy brightness to balance out rich stews, chilis, and more.
- Stir-fry them! Stir-fried rice is nice, but you can also throw big pieces of green onion into vegetable- and protein-heavy stir-fries too. Recipe: How To Make Weeknight-Friendly Szechuan Chicken.
- Make scallions the star of your cucumber salad. I add scallions to salads whenever I want a bit of onion flavor, but I don’t necessarily want the pungency of red or yellow onions.
- Bake them into quick biscuits. You can fold nearly a whole bunch of scallions into a single batch of biscuits. You hardly even need bacon or cheddar for these.
- Tuck them into sandwiches. Tuna fish salad on the menu for tomorrow’s lunch? Perk it up with some scallions. Your mouth will thank you. Recipe: The Perfect Tuna Salad.
- Turn them into scallion pancakes. Chewy, flaky, and savory scallion pancakes are one of our very favorite Chinese restaurant treats, and with this recipe you can make them at home, too.
- Bake them into loaves of bread. Fold big chops of green onions into any no-knead bread recipe and it is instantly upgraded. This version also includes jalapeño and cheddar too.
- Turn them into a vibrant sauce. Chimichurri uses tons of fresh herbs, but it can also be a home for scallions that need using up (or any other herb, for that matter).
- French-ify your potato salad. French potato salad is exactly as you’d expect — vibrant with mustard and tender petite potatoes — but gets a happy crunch from lots of green onions too.
- Turn them into salsa. Lastly, but probably most importantly, you can turn green onions into a batch of salsa with minimal other ingredients (think: canned tomatoes or frozen ones, those onions, and just a little pinch of cayenne too).
