1/4 tsps kosher salt
1/4 tsps freshly ground pepper
1 tbsp extra-virgin olive oil
8 oz whole-wheat angel hair pasta
1/2 cup white wine
1/2 cup clam juice
2 tsps cornstarch
1/4 cup garlic, chopped
3 tbsp lemon juice
1 tbsp capers, rinsed and chopped
2 tsps butter
2 tbsps chopped fresh parsley

Steps:

  • Put a large pot of water on to boil. Sprinkle scallops on both sides with salt and pepper. Heat oil in a large nonstick skillet over medium-high heat. Reduce heat to medium and add the scallops; cook, turning once, until browned on both sides, about 6 minutes total. Transfer to a plate. Cook pasta in the boiling water until not quite tender, about 4 minutes. Drain and rinse. Whisk wine, clam juice and cornstarch in a small bowl until smooth. Cook garlic in the pan over medium-high heat, stirring often, until softened, 1 to 2 minutes. Add the wine mixture; bring to a boil and cook until thickened, about 2 minutes. Stir in lemon juice, capers and butter; cook until the butter melts, 1 to 2 minutes. 2 teaspoons olive oil, divided
1 small onion, chopped
2 garlic cloves, minced
1 cup vegetable broth

1/8 teaspoon pepper

1 teaspoon ground white pepper
¼ tablespoon salt
¾ teaspoon dry mustard
¾ teaspoon cayenne pepper
½ teaspoon garlic powder
⅛ teaspoon dried thyme leaves
1 pound scallops
2 tablespoons butter, or as needed
½ onion, chopped
1 cup mushrooms, sliced
1 (12 ounce) package angel hair pasta
olive oil
½ tomato, chopped
1 tablespoon lemon juice

Steps:

  • Mix black pepper, white pepper, salt, mustard, cayenne pepper, garlic powder, and thyme together. Dredge scallops in blackening spices.

1 (16 ounce) package angel hair pasta
¼ cup butter
2 cloves garlic, minced
2 pounds sea scallops, rinsed and patted dry
3 tablespoons chopped fresh basil
2 tablespoons chopped fresh flat-leaf parsley
2 tablespoons fresh lemon juice
salt and freshly ground black pepper to taste
½ cup heavy cream
1 tablespoon grated Parmesan cheese to taste

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the angel hair pasta, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, 4 to 5 minutes. Drain well in a colander set in the sink.
  • Melt butter in a skillet over medium heat. Stir in the garlic and cook just until fragrant and softened, about 1 minute. Slice any scallops over 3/4-inch thick in half so they'll cook evenly; stir scallops, basil, and parsley into the skillet. Cook and gently stir just until scallops feel slightly firm when pressed with a finger, 2 to 3 minutes. Scallops will become tough and chewy if overcooked.
