SCARY GOOD PORK CARNITAS FOR HALLOWEEN NIGHT!



Scary Good Pork Carnitas for Halloween Night! image

This is a great make-ahead meal for Halloween night that both the kids and adults will love. You can serve this with soft tacos and fixins' or make pulled pork sandwiches.

5 lbs pork shoulder
16 ounces green chili salsa (mild or medium)
1 large onion
1 1/2 tablespoons ground cumin
1 tablespoon dried oregano
20 soft flour tortillas
1 bunch cilantro
2 limes
1 cup shredded cheese
1 cup sour cream
salt and pepper
1 tablespoon canola oil

Steps:

  • Season the pork shoulder with salt, pepper, cumin and oregano.
  • Heat canola oil in a large pot or heavy skillet. Pan sear each side of the pork shoulder until browned (a few minutes per side).
  • Place the chopped onions into crock pot. Put the pork shoulder on top (fat side on bottom). Pour the bottle of salsa on top.
  • Cook for 5 hours on high or 8 hours on low.
  • Once cool enough, shred the pork into bite sized pieces.
  • Strain the liquid, discarding solids, and pour some of the liquid over the meat.
  • Serve with soft flour tortillas, cilantro, sour cream and lime wedges.

Before I had a smoker, I used this to satisfy my pulled pork or carnitas craving. This meat is great in pulled pork sandwiches (see my coleslaw recipe) or in tacos. If you do not have all the spice rub ingredients, just get creative and use what you have. It will still turn out great. It is always a party-favorite. Enjoy.

6 tablespoons brown sugar
2 tablespoons garlic powder
2 tablespoons chili powder
2 tablespoons paprika
2 tablespoons dried oregano
2 tablespoons onion powder
1 tablespoon mustard seed
1 tablespoon ground black pepper
½ teaspoon ground cumin
½ teaspoon ground coriander
salt to taste
1 (3 pound) pork butt roast, or more to taste
3 tablespoons vegetable oil
2 cups water
2 tablespoons liquid smoke flavoring
2 dried chipotle chile peppers, or to taste

Steps:

  • Mix brown sugar, garlic powder, chili powder, paprika, oregano, onion powder, mustard seed, black pepper, cumin, coriander, and salt together in a small bowl.
  • Rub pork roast liberally with brown sugar mixture.
  • Heat oil in a large skillet over high heat. Add pork roast; cook until browned, 3 to 5 minutes per side.
  • Transfer pork to a slow cooker. Add water, liquid smoke, and chipotle peppers.
  • Cook on Low until pork is tender, about 6 hours. Transfer pork to a cutting board and pull apart with tongs.

Easy Carnitas (Pulled Pork) image

Why go to your local taco stop when you can make your own authentic carnitas at home. Very simple, just throw ingredients in pan and put in oven. Taste delicious with warm corn tortillas, chopped onions and chopped cilantro.

1 1/2-2 lbs boneless pork (butt, roast or pork for carnitas (cut into 1 1/2-2 in cubed chunks )
1/4 cup orange peel
1/2 cup sliced white onion
2 -3 tablespoons cumin powder
salt
pepper

Steps:

  • Preheat oven to 375. In a bowl, mix pork, orange zest/peel, cumin (to your taste), and salt to taste. Place seasoned pork in large rectangular baking pan and top with onions.
  • Bake covered with aluminium paper for about 1 hr 45 minutes. During the cooking time, about every 30 mins or so, check on the pork and turn to prevent the pork from burning. To creat a crispy texture to pork, bake in oven 15 min more UNCOVERED and turn once so that all sides get crispy texture.
  • Shred and serve with warm tortillas.

2 1/2-3 lbs pork butt, cut into large pieces at least 2x2
1 lb lard
1/2 orange, skin on, quartered
1 lime, skin on, quartered
4 medium garlic cloves, skinned but whole, slightly smashed
1 medium white onion
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon oregano
1 teaspoon cumin
1/4 cup bacon fat
1 tablespoon olive oil

Steps:

  • 1. Preheat the oven to 275 degrees.
  • 2. In a 9x11x2 casserole dish, place all ingredients. Cover and bake for five hours.
  • 3. Remove from oven, and scoop out meat with a strainer. Dispose of remaining liquids and solids.
  • 4. Brush a sheet pan with the olive oil, and place the pork, single layer, and put under the broiler for five minutes. Watch it! Don't let the meat dry out, or burn!
  • 5. Serve with tortillas, flour or corn. Add some cilantro or extra onion if you like.
