This is tasty, and has been one of the things that's helped my kid with Crohn's gain weight while controlling symptoms, while on a very limited early stage of the Specific Carbohydrate Diet. - Use a whisk to mix the 3 ingredients together, to taste. We find we like this with more salt than you might expect. Just like salt on salted caramel brings out & balances the sweetness of the caramel, so too does enough salt really elevate a frosting. I like to use ground Pink Himalayan Salt. This is not a frosting for decorating or making a cake pretty. It's likely to melt/slide off. It is, however, absolutely delicious on/with things. It is very similar to "honey butter." My kid even likes it as a contrasting condiment on the side of their plate with savory foods, like their omlettes, and it helps up their calorie intake when they are on limited ingredients due to IBD an flare. - Store covered, at room temperature. If it is super hot in your kitchen, you may place it in the fridge to harden up.
- We really like this with our local raspberry or blackberry honey, which are honeys with a unique & delicious flavor. Since this is so few ingredients, the flavor of your honey will shine.

- Place the honey into a small saucepan over medium heat, occasionally stirring. Keep the honey over the heat until a candy thermometer reaches 240F (the honey will be very bubbly and frothy).
- While the honey is heating on the stove, place the room temperature egg whites into the clean bowl of a stand mixer fitted with the whisk attachment.
- Whisk on high speed until the eggs become frothy. Add the lemon juice and continue to whisk until soft peaks form.
- Once the honey has reached a temperature of 240F, reduce the mixer speed to medium and pour the hot honey in a slow, steady stream into the egg whites. (Be sure to avoid pouring the honey directly into the whisk or it will fling honey everywhere.)
