SCHAUM TORTE
This is a simple recipe that tastes as wonderful and authentic as the dessert you would get in a German restaurant. I prefer to use strawberries, but anything goes with this one! You can make smaller mounds to have meringue cookies ...a low-fat snack!

Steps:
- Preheat oven to 250 degrees F (120 degrees C). Butter a large baking sheet or line it with parchment paper.
- In a large glass or metal mixing bowl, beat egg whites until foamy. Blend in vinegar and vanilla. Gradually add sugar, continuing to beat until stiff peaks form. With a large spoon, drop meringue in 8 mounds (about 4 inches diameter), close together on baking sheet. Indent the center of each meringue with the back of a spoon.
- Bake in preheated oven for 1 1/2 hours. Turn off oven, and let shells cool in the oven, about 1 hour.
- To serve: Fill each shell with a scoop of vanilla ice cream, and smother with thawed strawberries.

SCHAUM TORTE
Virtually unknown outside of Wisconsin, Schaum Torte is the German equivalent of Pavlova. It's perfect topped with fresh fruit, whipped cream, or ice cream!

Steps:
- Preheat oven to 250˚F. Line two sheet pans with parchment paper. With a Sharpie type permanent pen, trace 6 -3" circles on each sheet of parchment paper, and flip over in pan (marker side down).
- With an electric mixer on medium-high, beat the egg whites, water and salt till the mixture begins to stiffen and forms a point when beater is pulled out. Continue beating and add, very slowly (over 2-3 minutes), 1 cup sugar, cream of tartar and vinegar.
- Add the other 1 1/4 cups of sugar, again very slowly, and vanilla. Beat for 10 minutes on medium speed.
- Drop large spoonfuls of meringue onto the circles on prepared sheet pans and hollow out the centers with a teaspoon or follow directions in step 5 for piping.
- For piping, snip off a corner of a large zippered plastic bag or decorating bag. Place a large (I use a Wilton 1M) decorating tip into the corner opening. Spoon about 1/2 of meringue into the bag and twist the top closed. Starting in the center of each circle and moving in a circular pattern fill in each circle with meringue. Continue piping around outside edges, forming walls. I usually go around 2 or 3 more times, depending on how tall I want my Schaum Tortes. Use your finger to smooth out the top where the piping stops.
- Place in preheated oven and bake 1 hour, then turn heat off and leave Schaum Tortes in oven for another 30 minutes. Remove and store in an airtight container, or serve with fresh berries or ice cream.
- Follow the first 4 steps as written. Then, transfer the meringue to a 9-inch buttered spring form pan. Bake at 250 degrees for 1 hour, turn off heat, and leave shell in the oven for 1 hour more (instead of 30 minutes).

SCHAUM TORTE
Steps:
- Preheat the oven to 350°F (180°C).
- Pour the egg whites and vinegar into the bowl of your stand mixer and mix with the whisk on high speed until soft peaks form, about 4-5 minutes.
- Add the sugar, little by little, while mixing on high sped until the mixture forms stiff peaks, about 2 minutes.
- Add the cream of tartar and vanilla extract and mix for a minute.
- Spread the meringue on a baking sheet, creating 8 circles (2 1/2 inches each) with the sides higher than the middle, like 8 little nests.
- Put in the oven and reduce the heat to 200°F (95°C).
- Bake for 1h30. Make sure not to open the oven while baking.
- Turn the oven off and leave it open ajar.
- Meanwhile, put the liquid cream in the freezer for 30 minutes.
- Pour the cream into the bowl of your stand mixer and mix using the whisk until it become fluffy (mix on medium speed for 2 minutes, then increase the speed every 30 seconds until you reach maximum speed).
- Add the powdered sugar, little by little, while mixing.
- Add the cream of tartar while mixing.
- Continue to mix until the cream is well whipped and you can turn the bowl upside down without the cream spilling out from the bowl.
- Refrigerate until the meringues are lukewarm.
SCHAUM TORTE

Steps:
- Separate the egg whites from the yolks.
- Beat the egg whites in a clean stainless steel or copper bowl until frothy.
- Add in cream of tartar and vinegar.
- Beat on high until mixture forms soft peaks.
- Beating continually, add in 1 cup of sugar, 1 tablespoon at a time.
- Add in vanilla.
- Beating continually, add in the remaining sugar, 1 tablespoon at a time.
- Beat until mixture forms stiff peaks.
- Spoon mixture onto parchment paper lined baking sheets.
- Bake at 250 degrees for 1 hour.
- Turn the oven off but do not open the oven. Leave tortes in the oven for an additional hour.
- Remove tortes from baking sheets, top, and serve.
SCHAUM TORTE
Before the days of automatic mixers, this recipe involved long and tiresome beating. Many times, husbands were drafted to help when the tired arms of the wife gave out. But nowadays, Schaum Torte is a breeze to prepare.

BASIC MERINGUES WITH VARIATIONS OR A LARGE PAVLOVA
Everybody loves a meringue- they're not just for the kids! A great treat for anyone following a gluten-free diet too (check the cornflour/cornstarch used is from maize. In Australia 'White Wings' cornflour is gluten-free). Tips for great meringues....ensure your bowls and beaters are totally clean. Use eggs at room temperature and be careful with your eggs- must have no egg yolk at all. If your choice is for a white meringue-keep your oven temperature low and leave the meringue in longer to cook if needs be. Makes 50 meringues or 1 large pavlova.

- Preheat oven to 100°C - 120°C Do not use the oven fan if possible.
- Beat the four egg whites with the cream of tartar using an electric mixer. Bring to 'soft peak' stage.
- Add 1/3 of the sugar and continue to beat to 'firm peak' stage- approx another 3 minutes. Then add the remaining sugar one spoon at a time whilst continuing to beat.
- Continue beating until the mixture is shiny and the sugar has totally dissolved. Feel the meringue mix with your fingertips and you should not be able to feel any gritty sugar. Continue to beat until the sugar has dissolved, if required.
- Sift the cornflour over the meringue and add the vinegar. Fold in gently.
- Use a spoon or pipe the mixture to form meringues onto a cookie tray lined with baking paper.
- Bake approx 60 minutes, or until firm and dry. During cooking reduce the oven temperature if the meringues are browning rather than drying out. When cooked, turn the oven off and leave the oven door slightly ajar. Allow the meringues to cool in the oven for about an hour, or leave overnight.
- Store in an airtight container. They should keep at least a few days.
- ____VARIATIONS ____.
- Flavoured meringues-add some vanilla or other essence of your choice whilst folding in the cornflour.
- Coloured meringues- add some food colouring of your choice and beat through before folding in the cornflour.
- Chocolate meringues- sift in 2 tablespoons of Dutch cocoa with the cornflour. You can also add ground or finely chopped nuts if desired.
- Coconut meringues- lightly fold through 1/2 cup of shredded or dessicated coconut with the cornflour.
- Almond meringues- fold through 1/2 cup ground almonds with the cornflour. You can also add some almond essence if desired.
- Lime or Lemon Meringues- fold through finely zested lime or lemon zest with the cornflour. A teaspoon of juice can be used instead of/substitute for the white vinegar.
- Sprinkled meringues- sprinkle meringues with finely chopped nuts or 100's and thousands prior to baking.
- For a Large Pavlova- Draw a 22-25 cm (9-10 inch) circle on the baking paper. Turn paper over and place on a large cookie sheet/tray. Use the entire mixture to pile onto the circle. Smooth over the surface and bake for 90 minutes. Turn the oven off and leave the pavlova in the closed oven for another hour. After an hour open the oven door and leave the pavlova in the oven to cool. Serve topped with whipped cream or vanilla yogurt. Top with some fruit or grated chocolate. Can also be served with lemon butter/curd instead of cream.
- Small Pavlovas/Individual pavlovas- make as for large pavlova but use 6-8 spoonfuls of meringue per pavlova. Pile the meringue as high as possible. Bake for about 45 minutes.
