FRUIT KABOBS WITH STRAWBERRY CREAM CHEESE YOGURT DIP
I love cooking with my nieces and nephews, and these kabobs are a great way to get the kiddos involved in the kitchen. Everyone can choose their own combination of fruit to thread onto the kabobs, and the dip is a great make ahead recipe that will keep fresh in the refrigerator for several days.

- For the fruit kabobs: Thread the fruit onto eight 12-inch metal or wooden skewers. Chill until ready to serve.
- For the strawberry cream cheese and yogurt dip: Put the cream cheese, strawberries, yogurt and honey in a food processor and pulse until the strawberries are minced and the mixture is smooth. Serve with the kabobs.

BORANI-YEH ESFENAJ (SPINACH YOGURT DIP)
There are many types of Iranian borani, or yogurt-based dishes, and spinach borani is a classic. What sets borani-yeh esfenaj apart from a simple mix of wilted spinach and yogurt is that the spinach is first cooked down with flavorful golden onions, garlic and turmeric. The preparation of the onion is the backbone of the dish and not to be overlooked. Rather than cooking the onion low and slow, as is done when caramelizing, it's cooked quickly over a higher heat to draw out its sweet and sharp flavors. Creamy Greek yogurt is mixed with thinner regular yogurt for a balanced consistency. Use more or less of either depending on your preference: You can serve the borani thicker as a dip with pita crackers or flat breads, or thinner as a light lunch or snack alongside rice.

- In a large (12-inch) pan, heat the oil over medium-high. Add the onion and cook, stirring occasionally, until golden brown, 6 to 8 minutes. Reduce the heat to medium-low, add the garlic, sprinkle with a little salt, stir and cook until fragrant, about 2 minutes. Add the turmeric, stir and cook until fragrant, about 30 seconds.
- Add about half the spinach and increase the heat to medium. Using tongs, quickly and continuously toss the spinach with the onion mixture until slightly wilted and reduced in volume. Add the rest of the spinach, ½ teaspoon salt and ¼ teaspoon black pepper. Toss and cook until the spinach is wilted and any liquid has evaporated, 3 to 5 minutes. Increase the heat slightly if the spinach releases too much water. Transfer the spinach mixture to a bowl and cool to room temperature.
- To the cooled spinach, add the Greek yogurt, regular plain yogurt, lemon zest and lemon juice. Stir well to combine, and add salt to taste. If the mixture is too thick, thin out with more regular yogurt, 1 tablespoon at a time. Taste and add more salt and lemon juice as needed. Cover and refrigerate for at least 2 hours and up to 24 hours. Stir to combine, then drizzle with olive oil and serve.
SECRET SANDWICH (LUNCH BOX SURPRISE)
For our 5 year olds lunch box for either snack time or lunch for his first year at kindergarten that are reasonably healthy but will bring a smile to his face when he finds them. Kids tire of the same old sandwich, so I came up with this as a new and fun way to make sure he doesn't skip his sandwich! I was surprised at how much lunch meat and cheese I was able to get in the muffin! If you child likes lettuce you could stuff some of that inside as well. You could actually fill the hole with just about any type of sandwich filling. :)

- Using a small paring knife, pierce the bottom of the muffin until the knife almost reaches the top. Cut a circle and pull out the bread cylinder and set aside.
- Using your fingers, press the inside bread walls to make them thinner.
- Add condiment of your choice to inside of roll.
- Add lunch meat until it is about a 1/3 full. Then add cheese until it is 2/3 full and fill with more lunch meat.
- Cut a bit of the cylinder off and apply condiment to the bready side of the circle. Press into bottom of muffin.

- Preheat oven to 350°F
- Combine all ingredients in a large mixing bowl.
- If there is not enough liquid to mix all the ingredients after 5 minutes of stirring, add a tiny amount of milk to aid in mixing of remaining ingredients.
- Taste batter before cooking and adjust amount of sugar to your liking.
- Place on a lightly greased cookie sheet and bake for 8-12 minutes, depending on how large you made your cookies.
- Can be cooked for a shorter time for chewier cookies, or longer for a drier, crisp cookies.
SCOOBY SNACKS
Great little shooter recipe. If you do not have creme de banana you can leave it out (1 1/2 oz Malibu coconut rum, 1 oz Midori melon liqueur, 1 1/2 oz pineapple juice, 1 ounce orange juice, 1/2 oz half and half or heavy whipping cream) Enjoy!
