How to make old fashioned Scottish Tattie Soup. Simple, cheap to make and very nourishing!

Steps:
- Tip in the vegetables, give them a stir and season with salt and pepper. Cook over a low heat for 10-15 minutes or until the veg starts to soften a little. Pour in the chicken or vegetable stock, cover and simmer gently for 1/1 1/2 hours or until the vegetables are soft and the potatoes are starting to break up.
- Using a potato masher, mash everything up, but not to much - you still want some large tattie lumps. If the soup is too thick for your liking just add some water to thin it down.
- Check the seasoning and serve with fresh bread or oatcakes.

SCOTTISH TATTIE, NEEP AND CARROT SOUP
A hearty and comforting Scottish soup made with tatties (potatoes), neeps (turnip) and carrot.

Steps:
- In a large pot, saute the onion and garlic in olive oil until soft and translucent.
- Add the carrots and cook gently for a few minutes, then add the turnip and potatoes.
- Add the stock, bring to the boil, then reduce to a simmer, cover with a lid and leave to cook gently for 30-40 minutes until the soup is lovely and thick and the vegetables are tender.
- Add the fresh herbs and season with salt and pepper.
- Serve with crusty bread.
- Enjoy!

TASTY SCOTTISH COCK-A-LEEKIE SOUP
Cock-a-leekie soup is a staple dish in many Scottish homes and, if you've been brought up eating Scottish food, there is a high chance you'll be familiar with this warming chicken and leek based soup. Traditionally served in the winter and named 'Scotland's National Soup' Cock-a-leekie is a thick and flavoursome soup consisting of leeks, chicken and rice traditionally garnished with prunes.

Steps:
- Chop the green parts off the leeks and put in the bottom of a pot, place the chicken on top.
- Surround the chicken with the celery sticks, carrots, onion, and bay leaves. Cut them down to fit if necessary.
- Add liberal amounts of salt and white pepper.
- Pour cold water over the top (it should cover the chicken so you may need to use a little more or less than stated.
- Cover and bring to the boil, then turn down to simmer for about one hour, until juices run clear when you push a knife into the chicken, or the chicken is falling off the bone.
- Chop two whites of the leeks into rounds. The other two remains of the leeks are not necessary for the rest of the recipe so you can set aside to use for something else.
- Chop the 2 remaining carrots into small pieces.
- Use a spoon to remove some of the fat that floats to the top of the water.
- Remove the chicken (I find the most uncomplicated way is to put in a colander over a bowl to collect any extra liquid, then tip the liquid back in the pot).
- Set aside to cool a little.
- Take the green part of the leeks, the onion, celery, and carrots from your stock.
- Add the chopped whites of the leeks and the carrot and cook for 10 minutes.
- Add the rice and simmer for a further 15 minutes, until the rice is cooked.
- Meanwhile, remove the chicken from the bone and shred, and discard the bones.
- Taste the stock and add more salt and pepper if necessary or simmer for longer and allow it to reduce to strengthen the flavour.
- Add the shredded chicken back in and allow to heat through for a few minutes.
- Dish into a bowl and sprinkle with a few chopped, dried, prunes then serve.

EASY SCOTTISH LENTIL SOUP RECIPE (WITH VEGETARIAN OPTION)

- Finely chop the onion and leek and set aside, then chop the carrot, potato, and neep into small cubes, size dependent on how chunky you'd like the soup.
- Heat the pot and add the butter or butter alternative. Add the onions and leek and cook for about 5 minutes. Don't allow the onion to brown.
- Rinse the red lentils in cold water. There is no need to soak them.
- Add the rest of the vegetables and cook for a couple of minutes, then add the stock and lentils.
- Bring to a boil then turn down to simmer for 40 minutes. You may need to top up with a little extra water if the soup gets too thick.
- Serve with bannocks, crusty bread, or oatcakes.

SIMPLE SCOTTISH TATTIE SOUP RECIPE
Scottish Potato Soup, otherwise known as Tattie Soup, is a heart-warmingly delicious but simple recipe that is perfect for a winters day!

Steps:
- Peel and chop potatoes into large cubes
- Finely chop onion and celery if using
- Discard the green part of the leek (or save for making stock another time) and finely dice the white part
- Dice the carrots into small pieces about 1cm each
- Add the butter/oil to a large pot and allow to melt
- Add in the onion, leek, and celery if using and cook for 5 minutes, allowing them to "sweat" but not brown.
- Put the carrots and potato in the pot and cover with the stock
- Add a dash of salt and white pepper
- Bring to the boil, skimming off any sort of foam/scum with a wooden spoon to get rid of as it does so. This is just the protein releasing from the vegetables but it's nicer if you remove it rather than stir in later.
- Turn down to a simmer for 1 hour
- Use a masher or wooden spoon to break up some of the potatoes, but leave some large chunks as well
- Season more to taste and serve!

- Spray the bottom of a large soup saucepan 5 times with the low calorie oil spray.
- Heat the saucepan on a high heat, then when the oil spray begins to bubble turn the heat to medium.
- Sauté the leeks for approximately 3 - 4 minutes, but do not allow them to burn.
- Add the potatoes and vegetable stock.
- Bring to the boil and simmer for about 30 minutes until the potatoes are soft. Then turn off the heat and allow to cool a little.
- Using a potato masher or blender/food processor, mash / blend the soup to a required consistency.*
- Add the mustard (optional) and season to taste with salt and pepper.
- Garnish with parsley and serve.

TATTIE SOUP
This is a traditional Scottish peasant soup, easy to make and made with the most humble and easily obtained ingredients. Traditionally a handful of finely chopped nettle tops is thrown in 10 minutes before serving but parsley would be a reasonable alternative to freshen up the soup.

- Peel and slice the potatoes, coarsely shred the peeled onions and carrots and cut the bacon into squares.
- Bring the water or stock to the boil in a large pan and add the vegetables and bacon.
- Cover and simmer gently for 1½ hours until the soup is thick and creamy.
- Season.
- Add the chopped nettle tops or parsley 10 minutes before serving.
