My Aussie friend uses this recipe as her standard pancake recipe. Pikelets are the Scottish version of the southern British crumpet. They are also great for afternoon teas. Serve with fresh-squeezed lemon juice and sugar, or with butter and jam. I always thought that I had the best pancake recipe in the world until I tried these!

1 cup self-rising flour
¼ cup sugar
¼ teaspoon baking soda
1 egg, lightly beaten
¾ cup milk
1 tablespoon butter

Steps:

  • Sift together the flour, sugar, and baking soda in a large bowl. Slowly add the egg and milk while stirring continually until smooth.
  • Place a skillet over medium heat. Lightly coat the surface of the skillet with butter. Pour 1/8 cup of batter into the skillet. Cook until bubbles begin to appear on the surface of the batter; flip and continue to cook until lightly browned on the bottom, 1 to 2 minutes each side. Reapply butter to the skillet between batches.

1 1/2 cups all-purpose flour
3 tablespoons sugar
1 tablespoon baking powder
1/4 teaspoon salt
1/8 teaspoon freshly ground nutmeg
2 large eggs, at room temperature
1 1/4 cups milk, at room temperature
1/2 teaspoon pure vanilla extract
3 tablespoons unsalted butter, plus more as needed

Steps:

  • In a large bowl, whisk together the flour, sugar, baking powder, salt, and nutmeg.
  • In another bowl, beat the eggs and then whisk in the milk and vanilla.
  • Melt the butter in a large cast iron skillet or griddle over medium heat.
  • Whisk the butter into the milk mixture. Add the wet ingredients to the flour mixture, and whisk until a thick batter is just formed.
  • Keeping the skillet at medium heat, ladle about 1/4 cup of the batter onto the skillet, to make a pancake. Make 1 or 2 more pancakes, taking care to keep them evenly spaced apart. Cook, until bubbles break the surface of the pancakes, and the undersides are golden brown, about 2 minutes. Flip with a spatula and cook about 1 minute more on the second side. Serve immediately or transfer to a platter and cover loosely with foil to keep warm. Repeat with the remaining batter, adding more butter to the skillet as needed.
  • Procedure for adding fruit to pancakes: Once the bubbles break the surface of the pancakes, scatter the surface with sliced or diced fruit, or chocolate chips, nuts, etc. Flip with a spatula and cook for 1 minute more, being careful not to burn toppings.

My mother made these pancakes frequently, especially during summer months. We would pick wild raspberries that were made into jam & my mother would make batches of pancakes to serve with the jam. Just reminds me of summer!

Yield Makes 18-20 Pancakes

Number Of Ingredients 8

1 egg
1 cup of milk (250 ml)
2 oz sugar
8 oz self-raising flour
1 oz butter/margarine
1 dessert spoon syrup
1 level teaspoon baking soda
1 level teaspoon cream of tartar

Steps:

  • Place syrup & butter/margarine in microwavable dish & melt gently in microwave for about 45-60 seconds.
  • In a bowl, beat egg, milk & sugar. Add flour, baking powder & cream of tartar, mix.
  • Add slightly cooled melted syrup & butter/margarine to rest of ingredients in bowl, mix well.
  • Heat & grease girdle (or heavy based frying pan). Drop approximately a tablespoon of mixture on to girdle/pan. When bubbles begin to form on surface, turn pancake & cook other side. Cook until golden or darker if you like. If using a frying pan only cook 3-4 at a time to allow easier turning.

  • In a blender, combine the first six ingredients. Cover and process until blended. Heat a lightly greased 8-in. nonstick skillet; pour 1/4 cup batter into center. Lift and tilt pan to evenly coat bottom. Cook until top appears dry; turn and cook 15-20 seconds longer. , Repeat with remaining batter, adding oil to skillet as needed. Steps:

  • Bring oats and heavy cream to a simmer in a pot over medium-high heat. Stir and cook for 1 minute and turn off the heat. Let cool down to room temperature, at least 10 minutes.

  • Warm the milk to 90F and stir together with dry.
  • Cover the bowl and place in the refrigerator overnight
  • Remove from fridge 1 hour before using and place at room temperature
  • Heat a large skillet. Fry these pancakes in olive oil instead of butter and you won't be disappointed.

1 tbsp caster sugar

300ml milk
vegetable oil, to fry

Steps:

  • Add the dry ingredients to a mixing bowl. Beat the egg and milk into the mixture with a handheld or electric whisk. Heat a non-stick frying pan over a medium heat and add some oil.
