SWEDISH SCRAMBLED EGGS
Found this on a Swedish recipe site... My husband used to make something similar to this (though he never measured anything!) :)

Steps:
- Whisk together the eggs until they are light yellow and frothy.
- Add the chunks of cream cheese, the dill and the garlic powder to the eggs and stir to combine. Season with salt and pepper as desired.
- Spray a medium-sized skillet with non-stick cooking spray, and heat over high heat until the fat begins to sizzle.
- Pour the egg mixture into the pan and reduce heat slightly. Stir eggs gently to scramble until they reach the desired consistency.
- Serve immediately.

These light and fluffy scrambled eggs are a snap to put together for a big crowd. I usually make 2 pans for our Christmas Brunch, and I never have much left over!

- Preheat the oven to 350 degrees F (175 degrees C).
- Pour melted butter into a glass 9x13 inch baking dish. In a large bowl, whisk together eggs and salt until well blended. Gradually whisk in milk. Pour egg mixture into the baking dish.
- Bake uncovered for 10 minutes, then stir, and bake an additional 10 to 15 minutes, or until eggs are set. Serve immediately.

DILLY SCRAMBLED EGGS
My good friend had me over for brunch and we had these eggs. Most of us know how to make good scrambled eggs. This is a delicious change from the norm. Great for brunch or dinner.

Steps:
- 1. Heat butter and/or oil in a medium skillet over medium low heat.
- 2. Whisk together eggs, dill and onion until well blended and frothy. (Don't do this too early)
- 3. Pour into skillet and stir gently until set, a little moist, but not runny.(They will continue to cook a bit after you take them off of the heat) Season with salt and pepper and serve.

- In a medium size mixing bowl, crack your eggs into the bowl. Add your chopped fresh dill along with 1 tsp of melted dairy-free butter. Whisk until well combined.
- In a non-stick pan set on low heat, add in 1 tsp of your butter and swirl it around to coat the pan. When the pan is warm enough, pour your egg mixture in. With a spatula slowly move it through the eggs for about 5 minutes until they reach form.
- Once the eggs reach solid shape on the outside and look moist on the inside, fold your eggs over. Cook for another 1 minute and plate your eggs immediately to remove them off the heat. Season with salt and pepper. Garnish with more dill if desired. Serve immediately and enjoy!
