GRANDMA'S BUTTERSCOTCH PIE



Grandma's Butterscotch Pie image

This is one of my favorite holiday pies. Serve with whipped cream. Yum!

1 cup packed light brown sugar
4 tablespoons cornstarch
½ teaspoon salt
2 cups milk
2 egg yolks, beaten
1 tablespoon butter
1 teaspoon vanilla extract
1 (9 inch) pie crust, baked

Steps:

  • In top of double boiler, combine brown sugar, cornstarch, salt and milk. Cook, stirring constantly, until mixture starts to thicken, about 20 minutes.
  • Whisk in egg yolks; continue to cook and stir until filling is thickened.
  • While pudding mixture is cooking, preheat the oven to 400 degrees F (200 degrees C).
  • Remove filling from heat, and stir in butter and vanilla.
  • Pour filling into prepared pie crust. Bake in preheated oven until top begins to brown, about 5 minutes.

Number Of Ingredients 12

1 cup gingersnaps, crushed finely
1/4 cup melted butter
1 (14 ounce) can evaporated milk, chilled in a shallow dish until slushy at the edges
2 tablespoons gelatin
3/4 cup milk
3/4 cup sugar
2 egg yolks
3 ounces semisweet chocolate
1/4 cup screech rum
1 teaspoon vanilla
1 cup whipping cream
1/4 cup sugar

Steps:

  • Preheat oven to 350 degrees F.
  • Mix the gingersnaps and the butter and press into a pie pan.
  • Bake for 10 minutes.
  • Soften the gelatin in 1/4 c milk.
  • In the top of a double boiler, mix the sugar, gelatin mixture, remaining milkand egg yolks until well blended.
  • Cook over boiling water until mixture is slightly thickened.
  • Melt 2 oz chocolate and mix into the gelatin mixture.
  • Chill until syrupy.
  • Whip evaporated milk until thick.
  • Fold Evaporated milk, rum and vanilla into the gelatin mixture.
  • Pour into pie shell and chill thoroughly.
  • Whip cream and sweeten with 1/4 c sugar.
  • Spread over pie.
  • Shave the remaining chocolate into curls and sprinkle on top.

This is a most lucious and delicious pie. A mennonite recipe that I got from the book "Food that Really Schmecks" I have been making this pie for years and I have to tell you, I have gotten up more than once in the middle of the night to eat that last piece before anyone else can get it!

Number Of Ingredients 7

1 pastry for single-crust pie, 9 inch pie
5 -6 apples, peeled,cored and cut into wedges
1 cup brown sugar
3 tablespoons butter
1/3 cup flour
2/3 cup cream (sweet, sour, or turning)
3/4 teaspoon cinnamon

Steps:

  • Mix together sugar, flour and butter until crumbs.
  • Sprinkle half in the bottom of the shell.
  • Arrange the apple slices on top of the crumbs.
  • Mix half of the remaining crumbs with the cream and pour over the apple slices.
  • Finally, mix the cinnamon with the rest of the crumbs and sprinkle these over the top.
  • Bake at 425*F for 10 minutes.
  • Reduce temperature to 350*F and bake about half an hour longer.
  • WOW!
