- Heat the oven to 425°F. LEMON ZEST BREADCRUMBS: In a large skillet, heat the oil over medium-high heat. Add the breadcrumbs and cook, stirring, until golden and crunchy, about 2 minutes. Transfer to a small bowl and let cool. Stir in the lemon zest and season to taste with salt and pepper. Set aside at room temperature. HORSERADISH AIOLI: In a small bowl, mix the aïoli ingredients, adding salt and pepper to taste. Cover and refrigerate. FISH: Heat the oil in a heavy 12-inch nonstick ovenproof skillet over medium-high heat. Pat the fish dry with a paper towel and season on both sides with 1/2 teaspoon salt and 1/4 teaspoon black pepper. When the oil is shimmering hot, arrange the fillets evenly in the pan, skin side up. Sear for about 2 minutes, without moving; then use a slotted metal spatula to lift a piece of fish and check the color. When the fillets are nicely browned, flip them and remove the pan from the heat.

SEARED FISH STEAKS WITH HORSERADISH BUTTER

- 1. Set a heavy-bottomed 12-inch skillet over low heat for 5 to 10 minutes, or medium heat for 3 to 4 minutes, while preparing the meal and seasoning the fish steaks. Three to four minutes before searing the fish steaks, turn on the exhaust fan and increase the heat to high.
- 2. Set steaks on a plate, drizzle with oil; turn to coat. Sprinkle with salt and pepper.
- 3. A minute or so after the residual oils in the skillet send up wisps of smoke, put the fish steaks in the pan. Cook over high heat until the steaks develop a thick, rich brown crust, about 3 1/2 to 4 minutes. Turn the steaks and continue to cook over high heat until the other sides develop a thick, rich brown crust and the fish is medium-rare to medium, 3 1/2 to 4 minutes longer. (For medium-well-done fish, turn the heat to low and cook, turning once, for 1 to 2 minutes longer.) Remove to a plate and let stand 5 minutes.
- 4. Serve with lemon wedges, or an uncooked relish or flavored butter. Or make a pan sauce by adding 1/2 cup liquid to the skillet; boil until the liquid is reduced to about 1/4 cup. Tilting the skillet so that the reduced liquid is at one side of the pan, whisk in butter or other enrichments until the sauce is smooth and glossy.

- Mash the horseradish and butter into a paste. Add the vinegar and season to taste with salt and pepper. Smear a tablespoon of flavored butter over each portion and serve immediately.

This recipe is for one, but can easily be increased. From Wegmans, the big grocery poobah in these parts.

- Coat haddock evenly on all sides with flour.
- Pat off excess.
- Heat skillet on Medium-High.
- Pour approximately 1 1/2 teaspoons olive oil to lightly coat skillet.
- Wait until oil faintly smokes before adding haddock.
- Place haddock carefully in hot oil.
- When sides have changed color about 1/3 to 1/2 of way up--1 to 2 minutes--turn carefully.
- Lower heat and cook until internal temperature of 130 is reached.
- Add butter, shallots and thyme to pan.
- Melt and blend, but do not burn the butter.
- Baste the fillet and continue cooking until temperature is 140.

- Heat oven to 220C/fan 200C/gas 7. Lightly oil a large baking tray, then lay the haddock and tomatoes alongside each other. In a small bowl, mix the mayonnaise with the garlic paste or crushed garlic, then spread evenly over the fish.
- In a separate bowl, toss together the breadcrumbs, lemon zest, juice and parsley, and season to taste. Top the fish with the breadcrumb mixture. Drizzle olive oil over the fish and tomatoes, and bake for 15 mins or until the fish flakes slightly when pressed and the crust is golden and crunchy.

- Preheat oven to 425.
- Wash and dry fish fillets, then season with salt.
- Meanwhile, mix breadcrumbs, melted butter, juice of a lemon, salt, pepper, and garlic powder.
- You will need to spray some cooking spray on the breadcrumbs to make sure they are moist enough. The breadcrumbs should be forming into moist crumbs.
- Place fish in shallow baking pan.
- Pour the white wine around the fish, making sure it does not actually cover the fish.
- Place the breadcrumb mixture evenly over the fish.
- Put the fish(for haddock or cod) in the oven for about 10-12 minutes, until almost done.
- You then may want to broil the fish for a minute or two just to crisp up the topping.
