1 1/4 pounds large sea scallops, tough ligament from side of each discarded
7 tablespoons unsalted butter, cut into tablespoons, divided
2 tablespoons finely chopped shallot
1/4 cup dry white wine
1/4 cup white-wine vinegar
1 tablespoon finely chopped tarragon

Steps:

  • Pat scallops dry and sprinkle with 1/4 teaspoon each of salt and pepper (total).
  • Heat 1 tablespoon butter in a 12-inch nonstick skillet over medium-high heat until foam subsides, then sear scallops, turning once, until golden brown and just cooked through, about 5 minutes total. Transfer to a platter.
  • Add shallot, wine, and vinegar to skillet and boil, scraping up brown bits, until reduced to 2 tablespoons. Add juices from platter and if necessary boil until liquid is reduced to about 1/4 cup. Reduce heat to low and add 3 tablespoons butter, stirring until almost melted, then add remaining 3 tablespoons butter and swirl until incorporated and sauce has a creamy consistency. Stir in tarragon and salt to taste; pour sauce over scallops.

4 large shucked diver scallops
4 large sea urchins for sauce to put on scallops
1 dehydrated scallop roe sac for sauce to put on scallops
4 sprigs fresh tarragon
2 finely chopped medium size shallots
3 tablespoons 35 percent whipping cream
4 tablespoons white wine vinegar
1/2 cup crisp acidic white wine
1/2 cup fish stock
250 g sea greens
1 large parsnip, peel and rough chopped
2 bay leaves
5 cups 2% milk
2 tablespoons honey
1 pinch kosher salt
1/2 lb unsalted butter (diced and cold)

Steps:

  • For the beurre blanc:.
  • In a medium sauce pot, simmer shallots, white wine vinegar and tarragon for 3-4 minutes.
  • Add white wine and fish stock, continue to reduce by half and strain.
  • In a medium sauce pot, slowly add a ¼ lb of butter to the mixture until emulsified.
  • With a hand held blender, puree the sea urchin and whipping cream to the emulsified mixture.
  • Season to taste, with salt and pepper.
  • In a large fry pan over medium heat, pan sear scallops 3-4 minutes.
  • Assemble ingredients in a scallop shell.
  • For the parsnip puree:.
  • In a medium size pot, cook chopped parsnip with milk, honey, bay leaf and a pinc of salt for 15-20 minutes.
  • Strain and puree in a food processor, slowly adding 3 T of butter.
  • Pass through tamis to remove any fibrous strands.

6 tablespoons white wine vinegar
1/4 cup finely chopped shallot
2 tablespoons whipping cream
10 tablespoons chilled unsalted butter, cut into tablespoon-size pieces
1 pinch white pepper
1 1/4 lbs sea scallops
1/4 cup all-purpose flour
2 tablespoons olive oil
4 teaspoons chopped fresh chives

Steps:

  • Boil first 3 ingredients in heavy medium saucepan over medium-high heat until mixture is reduced to 1/4 cup, about 10 minutes.
  • Add cream; reduce heat to low.
  • Add butter, 1 piece at a time, whisking until just melted before adding more.
  • Strain sauce, pressing on solids to extract as much liquid as possible.
  • Return sauce to pan.
  • Season with salt and white pepper.
  • Place pan in skillet of warm water.
  • Sprinkle scallops with salt and white pepper, then dredge in flour, shaking off excess.
  • Heat oil in large nonstick skillet over medium-high heat.
  • Add scallops; cook until golden brown and just opaque in center, about 1 1/2 minutes per side.
  • Divide scallops among plates.
  • Top with sauce and chives.
  • Makes 6 first-course or 4 main-course servings.

1-1/2 tablespoons chopped shallots
2 tablespoons tarragon-flavored or white wine vinegar
2 tablespoons dry white wine
1 teaspoon whole black peppercorns
1 tablespoon heavy whipping cream
8 tablespoons or 1 stick cold unsalted butter, chopped into 1/2-inch pieces
1/2 teaspoon kosher salt
1-1/2 tablespoons fresh tarragon, finely chopped
1 pound large 16-20 count sea scallops
2 tablespoons olive oil

Steps:

  • In a small sauce pan, combine the shallots, vinegar, wine and peppercorns. Bring to simmer over medium-low heat and cook until the liquid is reduced to about tablespoon. Remove from heat and stir in whipping cream. Reduce the heat to low and return pan to heat. Add the chopped butter, one piece at a time, allowing each piece of butter to melt before adding the next. Whisk as the butter melts. If the sauce begins to simmer, pull the pan from the heat and add another piece of butter to cool the sauce. The sauce will be the consistency of hollandaise when all the butter is added. Strain the beurre blanc through a fine sieve into a small bowl, pressing on the solids with a spatula. Stir in salt and tarragon. Taste and add more salt if needed. Place the bowl with the beurre blanc in a water bath (a pan of hot water) to keep warm while cooking the scallops. The sauce is delicate and will separate if too cold or hot. Place scallops in a single layer on paper towels, pat dry. Heat a large skillet over medium-high heat. Add the olive oil. Season the scallops generously wit salt and pepper. Add only enough scallops as the pan will comfortably hold. Work in batches if necessary. Do not crowd the pan of scallops. Sear 2 minutes on one side. Use tongs to gently turn over and cook for an additional 2 minutes. Transfer cooked scallops to a plate and hold in warm oven while finishing all the scallops. Divide beurre blanc among 4 plates and top each with an even portion of scallops. Serve immediately.

Seared Sea Scallops in Beurre Blanc with Baby Spring Vegetables in Puff Pastry image

1 sheet of frozen puff pastry, thawed and cut into 4 1/2-inch diameter circles
1 egg, lightly beaten
Sea salt
1 cup sweet baby peas, frozen or fresh
2 bunches baby carrots, trimmed and peeled with a little stem left on
1 pound sea scallops
Kosher salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
1 pint chanterelles, halved (or similar wild mushroom if chanterelles aren't available)
1/2 bunch fresh flat-leaf parsley, for garnish
2 shallots, sliced
2 cups dry white wine
1 cup white wine vinegar
8 sprigs fresh thyme
2 bay leaves
Kosher salt and freshly ground black pepper
1/4 to 1/2 cup heavy cream
2 sticks unsalted butter, cut into cubes and chilled
2 tablespoons freshly chopped chives

Steps:

  • Preheat oven to 350 degrees F.
  • Begin by baking the puff pastry "cups". Lay the thawed puff pastry sheets on a lightly floured, cool surface. Using a 4 1/2-inch round cutter, cut out 4 circles. Set them on a parchment-lined sheet tray. Lightly score the tops of the puff pastry with a 4-inch round cutter. This will help remove the top of the puff pastry after it is cooked, to create a "cup". Beat egg then use a pastry brush to brush the tops. Season with sea salt and place into the preheated oven. Bake in oven for 12 to 15 minutes until golden and crispy. Once cooled, cut the "tops" of the "cups" and lay bases out on plates.
  • While the "cups" are baking, make the beurre blanc. In a large, clean saucepan add shallots, white wine, white wine vinegar, fresh thyme and bay leaves. Simmer until reduced by half then season well with salt and plenty of freshly ground black pepper. Strain the sauce, place back over low heat and reduce. Add the cream and stir. Add butter several cubes at a time while stirring until the sauce thickens. Keep warm and set aside.
  • Blanch the peas and carrots. Set a pot of salted water over high heat and bring to a boil. Add carrots first to give them a head start then add the peas briefly to cook the vegetables until tender but still firm - about 2 minutes. Drain and set aside.
  • Clean scallops and season with kosher salt and freshly ground black pepper. Set a large saute pan over high heat and add olive oil. Once heated, add scallops and cook undisturbed for 2 to 3 minutes on each side until well browned. Set aside on paper towels.
  • Increase the heat and add the chanterelles and saute. Add carrots and peas to the pan and saute for 1 to 2 minutes until heated through. Add the scallops back to the pan, on top of the vegetables, to heat through.
  • To serve, portion out amongst the pastry cups. Top with a matching pastry lid - rest it just off center so you can see the filling and garnish with chives and a stem of fresh parsley. Serve immediately.
