TURKEY SOUP
My daughter got this recipe from her husband's mother. As in many households, our turkey gets picked over for a few days after the holidays. This soup is especially good on cold winter nights when it's snowing...which happens a lot where I live! -Carol Brethauer, Denver, Colorado

- In a stockpot, place turkey carcass, water and broth. Bring to a boil. Reduce heat; cover and simmer 4-5 hours. , Remove carcass from stock. Remove any meat; dice. Return to stock along with rice, onion, celery, carrots, bay leaf and poultry seasoning. Add remaining seasonings to taste. Cover; simmer over medium-low heat until rice is cooked. Discard bay leaf.

SEASONED TURKEY PATTY SOUP
I had a turkey patty leftover from Recipe#147396 By CulinaryQueen and along with a few other " odds & ends " decided to create a simple soup. I think this a very good way to use leftovers.Feel free to adjust the seasonings according to your own tastes.I wanted to put in " Seasoned Turkey Patty " as one of the ingredients but wasn't able to.Posted to Food.com (a.k.a. Steps:
- In a medium saucepan, add chicken broth and diced seasoned turkey patty; heat until warmed through over medium heat.
- Add rest of ingredients, and simmer for 10 minutes or until heated through.
- At this, time adjust seasoning if needed. ( For extra flavor add a few tablespoons of Turkey gravy to the soup.).

SEASONED TURKEY BURGERS
These burgers are great on the 'que' or indoors. Dress them up as you like, even on a whole wheat bun. Baked garlic home fries go great with it! Serve with the 'works': lettuce, tomato, avocado, sprouts, onion, mayonnaise, mustard, ketchup, etc.

- In a large bowl, mix the turkey with the onion soup mix, pepper, garlic powder, soy sauce, and egg. Refrigerate the mixture about 10 minutes, then form into 6 patties.
- Preheat the grill for medium-high heat.
- Lightly oil the grill grate. Place the patties on the grill. Cook for 20 minutes, turning once, or until well done. The inside of the burgers will look whitish in color when cooked through. Serve on buns.

HOMEMADE TURKEY SOUP
This recipe comes from a number of years of playing in the kitchen. I find that the addition of beef stock to the recipe adds depth to a usually bland soup. Any type of pasta can be used.

- Heat oil in a large pot over medium heat; saute celery, carrots, onion, parsley, and bay leaf until vegetables are tender, about 10 minutes. Add beef stock, chicken stock, turkey, salt, and pepper to vegetable mixture; bring to a boil. Reduce heat, cover pot with a lid, and simmer until soup is heated through, about 15 minutes.
- Stir rotini into soup and cook until pasta is tender yet firm to the bite, about 15 minutes.
