4 bone-in pork loin chops (7 ounces each)
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon canola oil
3/4 cup strong brewed coffee
2 tablespoons steak sauce
1 tablespoon molasses
1/4 teaspoon garlic powder
1/4 teaspoon dried thyme
1 ounce semisweet chocolate, chopped

Steps:

  • Sprinkle pork chops with salt and pepper. In a large nonstick skillet, cook chops in oil over medium heat for 4-6 minutes on each side or until a thermometer reads 160°. Remove and keep warm., Add the coffee, steak sauce, molasses, garlic powder and thyme to the pan. Bring to a boil; cook until liquid is reduced by half. Whisk in chocolate until melted. Return pork chops to pan; heat through.

6 pork chops
3 tablespoons all-purpose flour
6 potatoes, peeled and sliced
1 (14.5 ounce) can green beans, drained
1 (10.75 ounce) can condensed tomato soup
½ (10.75 ounce) can water

Steps:

  • Coat chops with flour. In a large skillet brown chops in oil. Remove from skillet.
  • Put sliced potatoes in bottom of skillet and add green beans. Place chops on top and cover with tomato soup and water. Simmer, covered on low for 35 minutes or until potatoes are tender.

This is my father-in-law's famous 'top secret' pork chop marinade. Top secret means that he shared it with everyone the last 20 years, even my brother, who is no relation to Virgil, but he would never share with me until recently. I gave him so much grief about it that he finally shared it with me. I know what you're thinking, 'Virgil didn't share it with you because he didn't want it blabbed on the internet.' Nope. He only did that to pester me. This is a very good marinade that was developed by Virgil and his brother specifically for pork chops, but also works on beef and chicken.

14.5 oz can organic stewed tomoatoes
3 cloves garlic, minced
3 t. All Spice
3 t. ground ginger
3-4 T. Frank's Red Hot

Steps:

  • Add all ingredients into crockpot and cook for 4-6 hours on low heat. Or you can put all ingredients into a baking dish, cover and bake on 375F for one hour.
