These great little fritters are a breakfast favorite.

½ cup milk
2 bananas, mashed
2 cups all-purpose flour
½ teaspoon salt
3 teaspoons baking powder
2 eggs, beaten
1 tablespoon margarine, melted
1 quart vegetable oil for frying
½ cup confectioners' sugar

Steps:

  • In a mixing bowl, combine the milk and bananas. Sift in the flour, salt, and baking powder. Thoroughly mix in the eggs and margarine.
  • Heat the oil in a large skillet to 365 degrees F (180 degrees C).
  • Carefully place spoonfuls of the mixture into the hot oil and fry until brown. Flip the fritter and continue to brown. Remove fritters from the oil and drain on paper towels. Dust the fritters with confectioners' sugar and serve while warm.

3 eggs, beaten
3/4 cup milk
1/4 cup brown sugar
3 cups baking mix
3 ripe bananas, diced
2 cups canola oil, for frying
1 1/2 cups powdered sugar
1 1/2 teaspoons pumpkin pie spice

Steps:

  • For the fritters: In a large bowl, whisk the eggs with the milk and sugar until blended. Stir in the baking mix and bananas until just combined.
  • Heat the canola oil in a large, heavy-bottomed skillet over medium heat. Using a small ice cream scoop, drop the batter into the skillet. Fry in batches until golden brown and cooked through the center, 2 to 3 minutes per side. Remove from the oil and allow to drain on a wire cooling rack set over a baking sheet.
  • For the glaze: Whisk together the powdered sugar, 1/4 cup water and pumpkin pie spice.
  • While the fritters are still warm, pour the glaze over top. Allow the glaze to set up slightly before serving.

1 cup all-purpose flour

1 quart oil for frying

Steps:

1 generous cup buttermilk
8 apple bananas, peeled and split
Oil, for deep-frying
1 cup granulated sugar, for dredging fritters

Steps:

  • Sift dry ingredients into a medium bowl. Combine egg and buttermilk, and stir into dry ingredients, mixing until well combined. Place bananas carefully in batter. (They can rest in the batter, covered until you are ready to fry them.)
  • Heat the oil to 350 to 390 degrees F or until the oil gives off a slight haze. Make sure bananas are well coated with batter before setting them in oil. This is an old traditional snack in most of Malay families, especially when there are too many ripe bananas at the back yard. We used to eat this for breakfast or evening tea. This is a trial an error recipe. You have to keep on trying to do it until you get the right texture and flavour. Once you master it you can do it with your eyes closed. But, it is worth trying since it is a really nice and tasty snack. The ingredients below are flexible. It's up to individual taste. If you like more bananas you have to add less flour and the fritters will be a softer. If you prefer the fritters to be more rounded and spongy use more flour. Either way the batter must look like cake batter before frying. I prefer more flour.

1/2 teaspoon bicarbonate of soda
1/2-1 cup sugar
