SPANISH STYLE PRESSED HAM AND CHEESE SANDWICHES



Spanish Style Pressed Ham and Cheese Sandwiches image

8 slices crusty bread
4 pequillo peppers or 2 whole roasted red peppers, thinly sliced
3/4 pound thinly sliced manchego cheese
1/2 pound sliced serrano ham or prosciutto

Steps:

  • Preheat a grill pan to medium. Build sandwiches of sliced peppers, cheese and ham. Place sammies on grill and press with a foil covered brick or weighted down with a heavy skillet and cook to crust and mark bread and melt cheese, 3 to 4 minutes on each side. Cut sandwiches into 3 sections each and serve for a simple starter to any meal.

4 slices pork loin (thin slices)
salt & freshly ground black pepper
4 soft rolls, halved and lightly toasted on the inside
4 tablespoons garlic mayonnaise
4 green peppers, roasted, peeled and chopped
4 slices serrano ham
4 slices tomatoes
1 garlic clove, for rubbing
2 tablespoons olive oil

Steps:

  • Preheat the broiler. Season the pork loin with salt and freshly ground pepper. Broil the pork for 2-3 minutes on each side until cooked through.
  • Spread half of each toasted roll with the aioli, then top with the pork.
  • Over the pork, layer the roasted green pepper, Serrano ham and tomato.
  • Rub the garlic clove over the toasted side of the other bread roll halves and drizzle over the olive oil.
  • Put the rolls together and serve at once.

4 ripe tomatoes, chopped
1 garlic clove, finely chopped
3 tablespoons olive oil
salt
pepper
20 slices baguette
5 -6 slices serrano ham

Steps:

  • Mix together the chopped tomatoes, garlic glove, olive oil, salt and pepper. Keep in the fridge until needed.
  • To serve, toast 20 slices of baguette. Spoon a little tomato topping on to each piece of toast. Tear 5-6 slices of jamón serrano into pieces and put one piece on each slice of bread.
