Steps:
- Preheat oven to 325° with racks in center and upper third. Line 2 baking sheets with parchment paper.
- Beat butter and sugar until light and fluffy.
- Whisk together flour, cornstarch, salt, and sesame seeds. Add flour mixture to butter mixture, 1 cup at a time, beating after each addition until incorporated. Transfer mixture to a surface and knead into a smooth dough. Wrap in plastic and refrigerate for 20 minutes.
- Transfer chilled dough to a lightly floured surface; roll into a 1/2"-thick rectangle. Cut into 2" squares, then cut each square into triangles. Transfer to prepared baking sheets.
- Bake until edges are light golden brown, 20-22 minutes. Let cool.

- In a large bowl, cream butter and sugar until light and fluffy. Add 1 egg at a time, beating well after each addition. Add vanilla. Combine the flour, baking powder and salt; gradually add to creamed mixture and mix well., Turn onto a lightly floured surface, knead 10-12 times or until smooth. Divide dough into 8 portions. Shape each portion into a 24-in. log. Cut logs into 2-in. pieces., Place sesame seeds and milk in separate shallow bowls. Brush pieces with milk, then roll in sesame seeds. Place 2-in. apart on greased baking sheets. Bake at 350° until set and bottoms are lightly browned, 7-9 minutes. Cool for 2 minutes before removing from pans to wire racks.

TAHINI SHORTBREAD COOKIES
Flavored with sesame seeds and tahini paste, these sophisticated shortbread cookies, adapted from "Soframiz" by Ana Sortun and Maura Kilpatrick, have a pleasing crumbly texture and an intense, almost nutty flavor. Serve them as part of a cookie plate for dessert, or with coffee or tea as a midafternoon snack.

- Toast sesame seeds: Put them in a nonstick pan over medium-low heat and stir every 30 seconds until golden brown, about 4 minutes. Pour onto a large plate to cool.
- Combine butter, confectioners' sugar and tahini in the bowl of a stand mixer fitted with the paddle attachment. Mix on medium speed until smooth, 4 to 5 minutes. Scrape bowl. Add flour and salt, and mix on low speed until dough is smooth.
- Transfer dough to a lightly floured work surface. Divide it in half and knead until smooth. Roll each piece of dough into a log about 1 inch in diameter.
- Roll each log in sesame seeds, coating logs completely. They may be difficult to maneuver, but they patch up easily. Wrap them tightly in parchment paper, twisting at each end. Refrigerate until firm, at least 4 hours or up to overnight.
- Heat oven to 300 degrees. Line 2 baking sheets with parchment paper.
- Slice logs into 1/4-inch-thick coins and place on prepared baking sheets 2 inches apart. Bake until firm around edges and not colored, 14 to 16 minutes. Cool completely on baking sheet. Store in an airtight container for up to 5 days.

BLACK SESAME SHORTBREAD COOKIES
A yummy and easy recipe for black sesame shortbread cookies.

Steps:
- Toast black sesame seeds for ~30 seconds until you can smell a toasted black sesame aroma. Pour into a spice grinder and pulse until it becomes very fine.
- Mix the flour and powdered black sesame seeds together. Set aside.
- Cream powdered sugar and butter until fluffy. Add in the vanilla extract and salt. Mix until well combined.
- Sift the dry ingredients from step 2 into the wet ingredients. Combine with a spatula until a soft dough forms.
- Roll out the dough onto a silicone mat until it is 1/4 an inch thick.
- Transfer the silicone mat onto a baking sheet. Rest dough in the fridge for at least 30 minutes.
- Move the oven rack to the center of the oven. Preheat oven to 350 degrees F.
- Prepare 2 baking sheets by covering them with parchment paper.
- After 30 minutes, take the dough out from the fridge. Use a cookie cutter that is 2.5 inches in diameter to cut out your cookies. After you cut out your first batch, combine the remaining dough, and roll it out to cut more cookies. Repeat this process until you run out of dough.
- Place cookies onto the prepared baking sheets. Bake cookies for 9-11 minutes until the edges start to turn a golden color.
- Cool cookies for 10 minutes.
- Combine the ingredients for the glaze and drizzle onto the cookies.

- Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
- In a large bowl, stir together the flour, sugar, baking powder and salt. Blend in butter and shortening until the mixture resembles coarse meal. Make a well in the center and add eggs, 1/4 cup of milk and vanilla. Mix until a soft dough forms. Divide the dough into 4 pieces. Roll each piece out into a long snake 1/2 inch in diameter. Steps:
- Cream butter, sugar and brown sugar. Add eggs and vanilla, blend well.
- Stir together flour, baking powder and salt. Add gradually to the creamed mixture, blending well.
- Turn out the dough onto a floured surface and knead 1-2 minutes until the dough is smooth. Break off a small piece of dough and roll it in your palms to make an oval about 2 inches long and 3/4 inch thick.
- Dip the oval in milk and roll it in sesame seeds. Place on the greased cookie sheet. Repeat with the remaining dough.
- Bake at 350 degrees F (175 degrees C) for 15 minutes or until golden. Remove to wire racks to cool.

- Brush bottom and sides of a 10-by-15-inch baking pan with softened butter. Line pan with parchment, with a 2-inch overhang on each long side, then brush parchment with more butter. Preheat oven to 350 degrees.
- Place flour, ginger, salt, baking powder, and 1/2 cup sugar in a food processor; pulse to combine. Add cold butter and pulse until dough just comes together. Scatter evenly in pan, then press firmly to flatten. Brush dough with egg white to moisten, then scatter with almonds, sesame seeds, and remaining 1/4 cup sugar in alternating even layers.
- Bake until golden, about 35 minutes. Transfer bark on parchment to a cutting board. Immediately cut into 24 pieces (4 strips on short side, 6 on long side), then transfer to a wire rack and let cool completely. Bark can be made 3 days ahead and stored at room temperature.
SESAME SEED SNACK COOKIES
Not too sweet, covered in delicious sesame seeds, these are a favourite snack for my family. They keep about three days in a tin. I have tried using less oil, also draining some onto a paper towel after cooking, but without good results. The oil seems to be the magic ingredient for the special slightly chewy texture. The recipe is adapted from the same in "Chinese Cooking" by Mary Wilson.

- Preheat oven to 350.
- Toast sesame seeds in a frying pan at medium heat. Stir them occasionally and watch them like a hawk! They will stay light and then suddenly brown in a few seconds - remove them from heat to a small bowl once they are golden brown.
- Combine flour, baking powder, spice powder, salt, brown sugar, corn oil, egg, vanilla in a mixing bowl. Mix well.
- Knead dough with hands until slightly rubbery.
- Roll into balls about one inch in diameter.
- Dip each ball into toasted sesame seeds to cover with seeds.
- Place on a cookie sheet. Flatten with a fork.
- Bake at 350 for 8-10 minutes.

- Preheat the oven to 375 .
- In a large bowl, sift the flour, sugar, and baking powder together.
- Work in the shortening as you would when making pie dough, to the consistency of coarse meal.
- Beat into the dough the eggs, milk, vanilla, and anise oil. The dough should be moist but not sticky. If the dough is too sticky, add a little more flour.
- Take a small portion of the dough and roll out to a 1/2 inch diameter cylinder.
- Spread some sesame seeds on a large piece of waxed paper and roll the dough in the seeds until the cylinder is completely covered.
- Cut the dough into 1 1/2 pieces on a diagonal.
- Place the cookies on a lightly greased sheet pan and bake for approximately 10-15 minutes, or until golden brown.
