- Ahoy! In the mood for a simple tuna noodle casserole? Swap the noodles for rice and try our Seven Seas Casserole, which combines tuna, cheese and Minute® Instant White Rice in a delicious entrée for your next meal or gathering. Step 1
- Preheat oven to 400°F. Step 2
- Combine soup, water, onion, salt and pepper in a medium saucepan. Bring to a boil, stirring occasionally. Step 3
- Spray a 1 1/2-quart baking dish with nonstick cooking spray. Pour 1/2 of the soup mixture into the prepared dish. Step 4
- Add rice, peas and tuna to prepared dish and top with remaining soup mixture. Stir to blend well. Sprinkle cheese over top. Step 5
- Cover and bake for 20 to 25 minutes, or until heated through. Recipe Tips To change things up, try this dish with different garnishes. For color and a tangy pop of flavor, top this dish with strips of roasted red pimiento, before serving. Or, sprinkle crispy onions and fresh parsley over the top for crunch and an upgraded presentation.

Tasty and filling, this is a wonderful 'got everything in the house' recipe!! This recipe is very versatile. I have substituted many different ingredients like yams, corn and even cheese soup. It all comes out yummy!

- Preheat oven to 350 degrees F (175 degrees C).
- In a lightly greased 9x13 inch baking dish layer the rice, potatoes, onion, carrots, peas, tomato soup with water, and sausage. Salt and pepper to taste.
- Bake covered at 350 degrees F (175 degrees C) for 45 minutes, or until fork tender. Remove cover for last 5 minutes of baking.

Elegant, quick, and EASY casserole that is good enough for company! A favorite of mine--I could eat this several times a week LOL! From my mother. Over the years, I have tweaked the original recipe to suit my tastes. Hope you like it as much as I do! (Note: you may add a dash or two of celery salt, or "Beau Monde" seasoning, to the soup mixture for extra 'ooomph', if you like, but it is excellent as written.)

Steps:
- Mix soup and milk in saucepan.
- Bring to a boil over medium heat, stirring occasionally.
- Combine with cooked rice, seafood (cut seafood into bite-size pieces, if necessary), peas, onion, lemon zest and juice, and sherry.
- Turn into a buttered 2-quart casserole dish.
- Bake at 375 degrees for 25-30 minutes.
- remove from oven and top with slices of cheese; sprinkle with paprika.
- Return to oven for an additional 5 minutes, or until cheese melts.
- Remove from oven, and let rest for about 10 minutes before serving.
- Helpful Tips: I like to put the onion in with the rice while the rice is cooking. Also, be sure to use the designated small-sized shrimp, or bay scallops or other bite-sized seafood in this dish---DO NOT use large or jumbo shrimp or sea scallops unless you cut them up--- as you want a morsel of yummy seafood in every bite!
