- In an oblong dish put the rice and and the amount of water called for on the box and mix. Place chicken on top of the rice. Salt and pepper the chicken and top each piece with a pat of butter. Bake at 350 for 45 to 1 hr. Every 15 mins. check chicken and mix the rice with the chicken.

- In a large bowl, combine the rice, contents of seasoning packet, cream soups and water. Spread into a greased 13x9-in. baking dish. Top with chicken; sprinkle with onion soup mix. , Cover and bake at 350° for 2 hours or until a thermometer reads 180° and rice is tender.

SHARON'S AMAZING CHICKEN CASSEROLE
This is my mother-in-law's recipe, and one of my husband's favorite meals! It is a warm and delicious comfort food casserole. Note: Using the blue package of Herb Seasoned Pepperidge Farm stuffing is a MUST! It sets up the whole flavor of the meal. If you are trying to clear out the cupboard or are unable to get the blue package, then you'll need to use two of the standard sized boxes (8 oz.) of stuffing, preferably herb seasoned.

Steps:
- Preheat oven to 350 degrees F.
- In large pot, melt butter over medium-high heat.
- Add dry stuffing, stir to coat evenly with butter.
- Layer 1/2 stuffing on bottom of an ungreased 9 x 13 baking dish.
- In large bowl, combine evaporated milk, cream soups, and onion.
- Gently fold in peas and chicken.
- Pour chicken/soup mixture over stuffing in baking dish.
- Top with remaining stuffing.
- Bake for 45 minutes, or until bubbling in the middle.
- Serve and enjoy!

If you love rice, cream of chicken soup, and biscuits, this is the casserole for you. I remember when I was younger and my mother had made something similar to this from a kit. I decided to try to remake it without a kit to how I remember it. It's perfect for those cool rainy days.

Steps:
- Bring water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the rice is tender and liquid has been absorbed, 20 to 25 minutes.
- Preheat the oven to 350 degrees F (175 degrees C).
- Pour just enough water into a large skillet to cover the bottom in a shallow layer; add chicken pieces in a single layer. Season chicken with salt and pepper. Turn heat to medium-high and cook chicken until no longer pink in the center and the juices run clear, adding water as needed to keep pan wet, 7 to 10 minutes; drain liquid.
- Stir cooked rice, cooked chicken, cream of chicken soup, milk, and Mexican blend cheese together in a casserole dish. Smooth the top of the mixture with the back of a spoon. Arrange biscuit dough over the rice and chicken mixture, breaking dough pieces as needed to get maximum coverage and to avoid overlap.
- Bake in the preheated oven until the biscuit topping is golden brown and the bottom layer is heated through completely, 20 to 35 minutes.
