2 tablespoons unsalted butter
4 teaspoons all-purpose flour
1 1/4 cups whole milk
1/4 teaspoon salt
1/8 teaspoon ground black pepper
Pinch ground nutmeg
1 (15-ounce) container whole milk ricotta cheese
1 (10-ounce) package frozen chopped spinach, thawed, squeezed dry
1 cup plus 2 tablespoons grated Parmesan
3 ounces thinly sliced prosciutto, chopped
1 large egg, beaten to blend
3/4 teaspoon salt, plus more for salting water
1/2 teaspoon freshly ground black pepper
1 to 2 tablespoons olive oil
12 uncooked lasagna noodles
2 cups marinara sauce
1 cup shredded mozzarella (about 4 ounces)

Steps:

  • To make the sauce: Melt the butter in a heavy medium saucepan over medium-low heat. Add the flour and whisk for 3 minutes. Whisk in the milk. Increase the heat to medium-high. Whisk the sauce until it comes to a simmer and is thick and smooth, about 3 minutes. Whisk the salt, pepper, and nutmeg into the bechamel sauce.
  • Preheat the oven to 450 degrees F.
  • Whisk the ricotta, spinach, 1 cup Parmesan, prosciutto, egg, salt, and pepper in a medium bowl to blend.
  • Add a tablespoon or 2 of oil to a large pot of boiling salted water. Boil the noodles until just tender but still firm to bite. Drain. Arrange the noodles in a single layer on a baking sheet to prevent them from sticking.
  • Butter a 13-by-9-by-2-inch glass baking dish. Pour the bechamel sauce over the bottom of the prepared dish. Lay out 4 lasagna noodles on a work surface, then spread a large spoonful (about 3 tablespoons worth) of ricotta mixture evenly over each noodle. Starting at 1 end, roll each noodle like a jelly roll. Lay the lasagna rolls seam side down, without touching, atop the bechamel sauce in the dish. Repeat with the remaining noodles and ricotta mixture. Spoon 1 cup of marinara sauce over the lasagna rolls. Sprinkle the mozzarella and remaining 2 tablespoons of Parmesan over the lasagna rolls. Cover tightly with foil. Bake until heated through and the sauce bubbles, about 20 minutes. Uncover and bake until the cheese on top becomes golden, about 15 minutes longer. Let stand for 10 minutes. Meanwhile, heat the remaining marinara sauce in a heavy small saucepan over medium heat until hot, and serve alongside.

1 pound bulk Italian sausage
2 jars (26 ounces each) spaghetti sauce
1 carton (15 ounces) ricotta cheese
2 cups shredded part-skim mozzarella cheese, divided
3/4 cup shredded Parmesan cheese, divided
1 large egg
2 tablespoons minced fresh parsley or 2 teaspoons dried parsley flakes
2-1/2 teaspoons minced fresh rosemary or 3/4 teaspoon dried rosemary, crushed
2 teaspoons lemon juice
1-1/2 teaspoons minced fresh thyme or 1/2 teaspoon dried thyme
1 teaspoon grated lemon zest
1 teaspoon coarsely ground pepper
1/2 teaspoon salt

Steps:

  • Preheat oven to 350°. Cook noodles according to package directions. , Meanwhile, in a large skillet, cook sausage over medium heat until no longer pink; drain. Stir in spaghetti sauce., In a large bowl, combine ricotta, 1 cup mozzarella, 1/4 cup Parmesan, egg, parsley, rosemary, lemon juice, thyme, lemon zest, pepper and salt. Drain noodles. Spread 2 tablespoons cheese mixture on each noodle; carefully roll up., Spread 2/3 cup meat sauce into each of two greased 11x7-in. baking dishes. Place roll-ups seam side down over sauce. Top with remaining meat sauce. Sprinkle with remaining mozzarella and Parmesan cheeses., Cover and bake until bubbly, 45-50 minutes. Freeze option: Cover and freeze unbaked casseroles up to 3 months. To use, thaw in the refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Cover and bake until bubbly, 50-60 minutes.

1 jar (14 ounces) spaghetti sauce
1 teaspoon fennel seed, optional
2 cups shredded part-skim mozzarella cheese, divided

Steps:

  • Cook lasagna noodles according to package directions. Meanwhile, in a large skillet, cook beef over medium heat until no longer pink; drain. Stir in spaghetti sauce and, if desired, fennel seed; heat through., Drain noodles. Spread 1/4 cup meat sauce over each noodle; sprinkle with 2 tablespoons cheese. 12 lasagna noodles
2 cups ricotta cheese
1 egg
2 cups shredded mozzarella cheese, divided
8 ounces Italian sausage or 8 ounces ground beef
1 (28 ounce) jar marinara sauce, divided
8 ounces chopped fresh mushrooms
8 ounces frozen spinach

Steps:

  • Preheat oven to 375°F Cook noodles according to package directions. Drain noodles and rinse with cold water.
  • Mix ricotta, egg and 1 cup mozzarella in bowl, set aside.
  • If you decided to use the fresh mushrooms chop and sautee, set aside.
  • If you decided to use frozen spinach drain out excess water.
  • Cook sausage (beef) in skillet over medium heat until browned and crumbly; drain fat.
  • Spread 1/2 cup sauce in a 9 x 13 inch baking dish. Spread 3 tablespoons ricotta mixture on each noodle; top with some sausage (mushrooms & spinach). Roll up each noodle. Arrange seam sides down in baking dish.
  • Top roll-ups with remaining sauce and mozzarella. Bake, loosely covered, for 15 minutes. Remove cover, bake for 10 more minutes or until brown and bubbly.
  • *You may prepare this dish up to 2 days before baking. Wrap them seperately in foil and put in freezer bag. Let thaw at room temperature before baking or microwaving.

1 (26 ounce) jar chunky tomato sauce (such as Ragu®)

1 egg, beaten
2 tablespoons chopped fresh parsley
¾ cup grated Parmesan cheese

Steps:

This is a great quick recipe that's meatless and light. You can lighten it even more by using lower fat ingredients. Great for kids to make! This is a microwave recipe, but can be made in the oven. Also, ricotta cheese is easily substituted for the cottage cheese, if you prefer!

2 cups cottage cheese (or ricotta cheese)
1 1/2 cups mozzarella cheese, shredded

1 (32 ounce) jar spaghetti sauce
1 -2 cup mozzarella cheese, shredded, for topping

Steps:

  • Mix cottage cheese, 1-1/2 cup mozzarella and parmesan cheese with eggs and parsley.
  • Place one lasagna noodle on work surface.
  • Spread 1/3 cup cheese mixture on noodle evenly.
  • Roll up tightly like a pinwheel.
  • Place seamside down in microwave-safe baking pan, that has 2 cup of spaghetti sauce in bottom.
  • Continue until with remaining ingredients.
  • Cover rolls with remaining sauce and sprinkle with additional mozzarella cheese.
