AIR FRYER BANANA BREAD
Baking banana bread is much quicker in an air fryer, thanks to the convection-like heat and the need for less batter. Make this round loaf your everyday breakfast go-to: The wheat germ adds a little extra fiber and whole-grain toastiness to your morning.

- Spray a 7-inch round air-fryer insert, metal cake pan or foil pan with nonstick spray. Set aside.
- Whisk together the flour, wheat germ, salt and baking soda in a medium bowl. Mash the bananas until very smooth in a separate medium bowl. Add the granulated sugar, oil, yogurt, vanilla and egg to the banana and whisk until smooth. Sift the dry ingredients over the wet and fold together with a spatula until just combined. Scrape the batter into the prepared pan and smooth the top. Sprinkle the top of the batter with the turbinado sugar if desired, for a crunchy, sweet topping.
- Put the pan in a 3.5-quart air fryer and cook at 310 degrees F, turning the pan halfway through, until a toothpick inserted in the middle of the bread comes out clean, 30 to 35 minutes. Transfer the pan to a rack to cool for 10 minutes. Unmold the banana bread from the pan and let cool completely on the rack before slicing into wedges to serve.

- Mash the bananas in a bowl.
- Stir in all-purpose flour, rice flour, baking soda and salt until mixed. Mix in sugar.
- Heat up cooking oil for deep frying in a small pan.
- Once the oil is hot, scoop up a spoonful, roughly a tablespoon, of batter into the frying pan. Deep fry until golden brown.
- Place the fritters on a paper towel to remove excess oil.
- Serve the fritters with a scoop of vanilla ice cream. Drizzle with chocolate syrup and sweetened condensed milk.

- Add the bananas to a mixing bowl and mash well. Add the yogurt, baking soda, baking powder and salt and mix well. Add the flour and mix it slowly with a wooden spatula until everything comes together. Flour your clean hands lightly, turn it out onto a floured surface and knead the dough slowly. If the dough is wet, add more flour, 1 tablespoon at a time, and roll it back and forth to get it smooth. Place the dough in a bowl, cover and let rest for 2 hours.
- Pour the vegetable oil into a pot to a depth of 3 to 4 inches (7.5 to 10 cm), place over medium-high heat and bring to 350°F (180°C) on a deep-frying thermometer.
- Divide the dough into 14 to 16 equal portions. Add some nigella seeds to each piece and roll them to about 4 inches (10 cm) in diameter and ½ inch (1.3 cm) thick. Carefully add the rolls to the hot oil in batches and fry them over medium to medium-low heat for about a minute on each side, or until golden brown. Remove from the oil with a spider and drain on paper towels. Bring the oil back up to temperature in between batches.
