LOW CARB SHRIMP AND SAUSAGE SKILLET



Low Carb Shrimp and Sausage Skillet image

This shrimp and sausage skillet is an easy, one-pan meal that can be made in 30 minutes! It is paleo, low carb and loaded with flavor.

2 Tbls Avocado Oil (or oil of choice)
1 lb Andouille Sausage (sliced - or kielbasa)
1 lb Large Shrimp (raw, peeled, deveined, )
1 Red Bell Pepper (sliced)
1 Green Bell Pepper (sliced)
1 Yellow Bell Pepper (sliced)
1/2 Yellow Onion (diced)
3 cloves Garlic (minced)
2 Small Zucchini (sliced - or one large)
1 Jalapeno (diced)
1 tsp Salt
1 tsp Chili Powder
1 tsp Garlic Powder
1/2 tsp Dried Oregano
1/2 tsp Smoked Paprika
1/4 tsp Crushed Red Pepper Flakes
2 Tbls Parsley (chopped )

Steps:

  • In a small bowl, mix the seasonings together
  • Pat your shrimp dry and season with half the seasoning mixture on both sidesHeat the oil in a large skillet over medium heat and cook the shrimp on the first side for 2 minutesThen flip and cook for an additional 1-2 minutes (or until just cooked through) remove from pan and set aside
  • Add a little more oil to the pan if needed and cook the sliced sausage in the skillet until browned evenly - remove from pan and set aside
  • Add in the peppers and onions, sauté until onions just start to get translucent and peppers are slightly softenedThen stir in the garlic, jalapeno, zucchini and remaining seasoning mixture; cook for an additional 5-7 minutes
  • Then the shrimp and sausage get added back in, leave over heat for 1 minute just to warm them back upRemove from heat and top with parsley if desired

1 pound baby Yukon Gold potatoes, quartered
4 ears corn, husked
4 tablespoons olive oil, divided
3 tablespoons Creole seasoning
1 lemon, juiced
1 tablespoon minced garlic
2 teaspoons Italian seasoning
1 teaspoon paprika, divided
½ teaspoon red pepper flakes
1 pinch salt and ground black pepper
1 red bell pepper, cut into 2-inch pieces
1 yellow bell pepper, cut into 2-inch pieces
1 orange bell pepper, cut into 2-inch pieces
1 ½ cups cherry tomatoes, halved
1 onion, cut into 2-inch pieces
4 andouille sausages, sliced
1 lemon, cut into wedges
1 pound uncooked medium shrimp, peeled and deveined
½ teaspoon Creole seasoning
2 tablespoons chopped fresh parsley, or to taste
finely chopped green onion, or to taste

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Spray a large sheet pan with cooking spray.
  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 10 to 12 minutes. Add corn and boil for an additional 5 minutes. Drain. Cut corn into thirds.
  • Meanwhile, combine 3 tablespoons olive oil, 3 tablespoons Creole seasoning, juice from 1 lemon, garlic, Italian seasoning, 1/2 teaspoon paprika, red pepper flakes, salt, and pepper in a small bowl. Mix well to combine and set seasoning mixture aside.
  • Combine boiled potatoes and corn, all the bell peppers, cherry tomatoes, onion, and sausage slices in a large bowl. Add seasoning mixture and mix evenly.
  • Spread potato mixture onto a sheet pan in a single layer. Place lemon wedges evenly on all sides of the sheet pan.
  • Bake in the preheated oven for 8 minutes.
  • Meanwhile, combine shrimp, 1 tablespoon olive oil, 1/2 teaspoon paprika, and 1/2 teaspoon Creole seasoning in a bowl. Marinate for a few minutes. Add shrimp to the sheet pan with the potato mixture after 8 minutes of baking and mix to combine.
  • Return sheet pan to the oven and cook until shrimp are opaque, 6 to 8 minutes. Remove lemon wedges and garnish with parsley and green onions.

1 pound trimmed whole Brussels sprouts
3 parsnips, cut into 1/4-inch slices
3 sweet potatoes, cut into wedges
2 red onions, cut into quarters
3 tablespoons olive oil
1/2 teaspoon dried sage
Sprinkle of kosher salt
Sprinkle of freshly ground black pepper
12 Italian sausages

Steps:

  • Preheat the oven to 375 degrees F.
  • Add the Brussels sprouts, parsnips, sweet potatoes and onions to a baking sheet. Add the olive oil, sage, salt and pepper and toss. Put the sausages in and around the vegetables.
  • Bake until the sausages are cooked through and the vegetables are tender, 40 to 45 minutes. Serve.

8 ounces andouille sausage, cut into 1/4-inch slices
2 tablespoons ground paprika
1 tablespoon ground cumin
½ teaspoon cayenne pepper
½ cup diced tomatoes
1 large green bell pepper, diced
2 stalks celery, sliced 1/4 inch thick
4 green onions, thinly sliced
1 teaspoon salt
1 bay leaf
1 cup uncooked brown rice
3 cups chicken stock
1 pound large shrimp, peeled and deveined
salt and ground black pepper to taste

Steps:

  • Place butter and sausage in a large stockpot over medium heat; cook and stir for 5-6 minutes until sausage begins to brown.
  • Stir in paprika, cumin and cayenne; cook for 1 minute.
  • Stir tomatoes, celery, green pepper, green onions, salt, and bay leaf into sausage mixture.
  • Add brown rice and stir to combine. Stir in chicken stock and turn heat to low. Cover and cook for until rice is just tender, about 45 minutes.
  • Stir in shrimp, replace lid and cook for 5 minutes. Season with salt and black pepper.
