Quick and Easy Fish Tacos image

You can serve these delightful tacos with a tossed salad and french fries, or just throw it all together for a quick and tasty snack. If you use salsa and tartar sauce, you can make it ahead or use store-bought.

30 breaded frozen fish sticks
½ cup vegetable oil
10 corn tortillas
½ pound finely shredded red cabbage
¾ cup tartar sauce
¾ cup salsa

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Arrange fish sticks in a single layer on a baking sheet, and bake 20 minutes in the preheated oven, or until crisp and golden brown. Remove from heat and cut into thirds.
  • Heat the vegetable oil in a skillet over medium-high heat. Fry the tortillas until soft. Drain on paper towels.
  • Fill the heated tortillas with fish stick portions, cabbage, tartar sauce, and salsa to serve.

I'm posting this recipe by popular request. It is an easy peasy recipe using readily available ingredients. Give it a try! You'll be surprised at this new and delicious way to use fish sticks.

Number Of Ingredients 5

10 frozen fish sticks (use your favorite brand) or 10 fillets (use your favorite brand)
coleslaw mix (just buy the shredded cabbage and carrot mix in your local grocer)
1 diced roma tomato
steamed tortilla (I prefer steamed corn tortillas but flour tortillas are delicious, too)
ranch dressing

Steps:

  • Cook the fish sticks according to package directions ( I prefer the Gorton's Beer Batter brand) but use whatever you have.
  • Mix about two cups of the shredded slaw mix with the diced roma tomato and toss until combined.
  • Place a fish stick or two with a couple of pinches of the cabbage/tomato mixture with a big squirt of (about 1 TB) of Ranch dressing into a steamed corn or flour tortilla.
  • A squirt of lime juice gives them a great fresh taste if you have some.
  • Fold it in half and enjoy.

I came up with this recipe because I love fish tacos and couldn't find any where I live that weren't overly breaded and kind of soggy. We love the crispiness and great flavor of this fish!

vegetable oil for frying
2 eggs
¼ cup milk
2 teaspoons taco seasoning mix
2 cups panko bread crumbs
6 cod fillets, quartered lengthwise
1 (10 ounce) package corn tortillas
1 cup sour cream
2 limes, cut into wedges
½ head napa cabbage, shredded
1 tomato, diced
½ onion, diced
1 green bell pepper, chopped
1 avocado, sliced

Steps:

  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Beat eggs, milk, and taco seasoning together in a bowl using a whisk or a fork. Place panko bread crumbs in a separate bowl.
  • Coat each piece of cod in egg batter, followed by bread crumbs.
  • Place cod in hot oil and fry until golden brown and flaky, flipping halfway through if using a saucepan, 4 to 8 minutes, depending on size and fry method. Transfer to a platter covered with paper towels to drain. Keep warm.
  • Warm tortillas in a microwave oven, 30 seconds to 1 minute.
  • Divide fish evenly between tortillas. Top tacos evenly with sour cream; squeeze lime juice over each. Top each with cabbage, tomato, onion, bell pepper, and avocado, in that order. Squeeze additional lime juice over each taco and serve.

¼ cup fresh cilantro, chopped
1 small jalapeño, diced

1 tablespoon old bay seasoning
½ teaspoon baking powder
1 cup lager beer
vegetable oil, for frying
1 lb fresh cod, cut into 1-inch (2-cm) thick strips

Steps:

  • Make the cabbage slaw: Combine the cabbage, onion, tomato, cilantro, jalapeño, lime juice, and salt in a large bowl. Toss well, then set aside.
  • Make the crispy fish: In a large bowl, combine the flour, Old Bay, and baking powder. Add the beer and whisk until smooth. Let sit for 15 minutes.
  • Heat the vegetable oil in a large pot until it reaches 350°F (180°C).
  • Coat the fish in the batter, then transfer to the oil and fry until golden on the outside and cooked through, 5-7 minutes. Drain the fish on a wire rack set over a baking sheet lined with paper towels.
  • Make the avocado crema: Add the avocados, sour cream, lime juice, and salt to a blender and blend until smooth.

1/4 cup olive oil
1 teaspoon ground cardamom
1 teaspoon paprika
1 teaspoon salt
1 teaspoon pepper
6 mahi mahi fillets (6 ounces each)
12 corn tortillas (6 inches)
2 cups chopped red cabbage
1 cup chopped fresh cilantro
Salsa verde, optional
2 medium limes, cut into wedges
Hot pepper sauce (Tapatio preferred)

Steps:

  • In a 13x9-in. baking dish, whisk the first 5 ingredients. Add fillets; turn to coat. Refrigerate, covered, 30 minutes., Drain fish and discard marinade. On an oiled grill rack, grill mahi mahi, covered, over medium-high heat (or broil 4 in. from heat) until it flakes easily with a fork, 4-5 minutes per side. Remove fish. Place tortillas on grill rack; heat 30-45 seconds. Keep warm., To assemble, divide fish among the tortillas; layer with red cabbage, cilantro and, if desired, salsa verde.
