2 pounds boneless skinless chicken breast (cut into large chunks)
½ cup plain whole milk yogurt
¼ cup lemon juice
¼ cup olive oil
6 garlic cloves (crushed)
1 tablespoon tomato paste
1 teaspoon paprika
¾ teaspoon cinnamon
½ teaspoon oregano
½ teaspoon ground ginger
1 teaspoon salt
¼ teaspoon black pepper

Steps:

  • In a large bowl, add the ingredients for the marinade (yogurt, lemon juice, olive oil, garlic, tomato paste, all the seasoning and salt/pepper) and whisk to combine.
  • Place the chicken cubes in the same bowl and coat the chicken in the marinade. Cover, and let rest/marinate in the fridge for at least 4 hours.
  • Thread the chicken on skewers right before grilling. Add one wedge of onions to each skewer, if desired.
  • Grill on medium heat for 5-8 minutes per side.
  • Serve with pita bread, lettuce and garlic sauce, if desired.

¼ cup lemon juice
¼ cup vegetable oil
¾ cup plain yogurt
4 cloves garlic, minced
2 teaspoons tomato paste
1 ½ teaspoons salt
1 teaspoon dried oregano
¼ teaspoon ground black pepper
¼ teaspoon ground allspice
¼ teaspoon ground cinnamon
⅛ teaspoon ground cardamom
2 pounds skinless, boneless chicken breast halves - cut into 2 inch pieces
2 onions, cut into large chunks
1 large green bell pepper, cut into large chunks
1 cup chopped fresh flat-leaf parsley

Steps:

  • Whisk together the lemon juice, vegetable oil, plain yogurt, garlic, tomato paste, salt, oregano, pepper, allspice, cinnamon, and cardamom in a large bowl; add the chicken and toss to coat. Transfer the chicken mixture into a large plastic bag; refrigerate at least 4 hours.
  • Preheat an outdoor grill for medium-high heat and lightly oil grate. Thread the chicken, onions, and pepper onto metal skewers. Cook on preheated grill until the chicken is golden and no longer pink in the center, about 5 minutes each side. Sprinkle the parsley over the skewers.

2 garlic cloves, minced
1/2 teaspoon of :cinnamon, nutmeg ,ginger, black pepper,ground cloves, allspice
1/4 teaspoon cumin

2 tablespoon kechup
2 tablespoon lemon juice

3 tablespoon water
For Toum sauce:
5 garlic cloves ,minced
1/2 - 2/3 cup oil
3 tablespoon mayonnaise
juice from half of lemon
salt ,black pepper

Steps:

  • In a bowl, mix together all ingredients, except for chicken cubes. Place chicken in glass baking dish.Pour marinate over chicken in baking dish.Cover with plastic wrap and refrigerate for about two hours. Bake in preheated 350°F oven for approximately 15-20 minutes covered with aluminium foil and another 5-10 minutes uncovered . When ready, serve with lettuce, french fries and Toum Sauce Toum sauce: Place salt,garlic and lemon juice in a small bowl; add 1 teaspoon of oil- mix it, then gradually add remaining oil, remembering to mix it all the time while pouring oil.At the end, add mayo ,season with salt and black pepper-mix until well blended .

  • To make dipping sauce, mix together mayonnaise, yogurt, garlic, and salt. Cover, and refrigerate.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Transfer chicken pieces to a shallow baking dish. Bake in a preheated oven 30 minutes.

3 garlic cloves, crushed
1/4 cup olive oil
1 lemon, juice of
1 tablespoon paprika
1 (6 ounce) can tomato paste
1 cup yogurt

Steps:

  • Cut chicken breasts into pieces for skewers.
  • Mix remaining ingredients together to make a marinade.
  • Add chicken to marinade, mix well and refrigerate in a non-reactive container from 2-8 hours.
  • Thread chicken on skewers and grill or cook under a broiler.

1 lb good quality chicken breast, cut into 1/2 inch cubes (They're easier to cube if you cut them while still a little frozen)
1 garlic clove, peeled and crushed, is what the recipe i have calls for, but I used 1 tablespoon of minced garlic fr
3/4 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon black pepper
1/4 teaspoon allspice
2 tablespoons best quality olive oil
3 tablespoons lemon juice, but I used Lime juice

Steps:

  • In non-reactive container (glass, good ceramic or stainless steel) combine the cubed chicken, garlic, salt, cinnamon, black pepper, allspice, oil and lemon juice, mix well, cover (you can use saran wrap).
  • *Note* You should marinate the chicken for several hours in the refrigerator to get the best taste out of the chicken.
  • Thirty minutes before grilling remove from refrigerator, allowing it to reach room temperature.
  • Thread onto skewers *note*.
  • If using wooden skewers, be sure to soak them in cold water for at least 20 minutes prior to using.
  • Grill over medium charcoal fire, basting and turning several times, until delicately browned.
  • The recipe also says you can also grill in the oven, but if you've got a charcoal grill, it works much nicer.
  • But if you dont have a charcoal grill; pre-heat the grill. Place chicken on skewers over an oven sheet and cook until browned (6-8 minutes), turning skewers and basting occasionally with the marinade to keep moist.
  • I serve this with baked pita,hummus, Kibbee, and a nice green salad with feta cheese dressing.
