It is so simple to make and absolutely packed with flavor. Tender chunks of chicken with smoky pieces of sausage in a rich and delicious homemade Cajun-flavored Alfredo sauce.

1 pound chicken, cut into bite-sized pieces
½ teaspoon kosher salt
freshly ground black pepper to taste
4 tablespoons extra-virgin olive oil
14 ounces smoked sausage, sliced on the diagonal
4 cloves garlic, minced
2 cups low-sodium chicken broth
1 ¼ cups heavy cream
2 cups dried penne pasta
1 ½ tablespoons Cajun seasoning, plus more to taste
½ cup freshly shredded Parmesan cheese
1 tablespoon minced Italian flat-leaf parsley

Steps:

  • Season chicken with salt and pepper. Heat olive oil in a large, covered cooking pot over medium-high heat. Brown chicken in the hot oil, 5 to 7 minutes.
  • Add sausage to the pot and continue to cook until lightly browned, about 5 minutes more. Stir in garlic and cook for about 2 minutes. Add chicken broth, heavy cream, pasta, and Cajun seasoning. Stir together and bring to a simmer over medium-high heat, about 5 minutes.
  • Reduce heat to low, cover the pot, and cook until pasta is tender, 15 to 20 minutes.
  • Remove the pot from heat and stir in Parmesan cheese. Stir in chopped parsley and sprinkle with additional Cajun seasoning if desired.

8 ounces pasta
1 teaspoon olive oil
1 pound smoked sausage
1 clove garlic
1 small onion
2 bell peppers
2 teaspoons Cajun seasoning
1 pint heavy cream
1/2 cup shredded parmesan.
1/4 teaspoon cayenne pepper, optional

Steps:

  • Cook and drain the pasta according to the instructions on the package. Meanwhile, slice the onion, bell peppers, and smoked sausage into bite sized pieces.
  • Over medium-high heat, cook the sausage, garlic, onions and peppers in the olive oil for 5-6 minutes. or until the sausage is browned and the vegetables have softened.
  • Add the Cajun seasoning and cream. Simmer for 4-5 minutes until the sauce begins to thicken.
  • Add the parmesan and cooked pasta to the sauce. Heat through until the cheese has melted. Serve immediately.

12 ounces fettuccine
1 tablespoon vegetable oil
6 ounces andouille sausage, sliced into rounds
4 scallions, chopped
1 celery rib, chopped
1 green bell pepper, chopped
1 teaspoon Cajun seasoning
1 cup heavy cream
1/2 cup freshly grated Parmesan, plus more for serving
2 tablespoons flat-leaf parsley

Steps:

  • Bring a large pot of salted water to a boil. Cook the fettuccine according to package directions.
  • While the pasta cooks, heat the oil in a large skillet over medium-high heat. Add the sausage and cook, stirring occasionally, until golden brown on both sides, about 3 minutes. Add the scallions, celery, bell pepper, and Cajun seasoning and cook, stirring occasionally, until the vegetables are slightly softened, about 5 minutes. Add the cream and simmer until slightly thickened, about 1 minute.
  • Once the pasta is cooked, transfer it directly from the boiling water into the cream sauce using tongs or a pasta fork. Sprinkle the pasta with the Parmesan and toss to combine. Add a splash of the starchy pasta water to help the sauce thicken and coat the pasta. Top with chopped parsley and serve with additional Parmesan.

2 chicken breasts, sliced
1 lb cooked andouille sausage
4 tablespoons olive oil
3 cloves garlic, minced
3 bell peppers, diced
1 medium onion, diced
6 cups milk, whole preferred
1 lb fettuccine pasta, uncooked
¾ cup parmesan cheese, plus more for serving
3 tablespoons fresh parsley, chopped, plus more for serving
1 teaspoon cayenne pepper
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon onion powder
1 teaspoon dried oregano
1 teaspoon dried thyme

Steps:

  • In a small bowl, combine all spices for the cajun seasoning and mix together. Set aside. Store any extra in an airtight container for future use.
  • In a heavy bottom pot (such as a Dutch oven), heat 2 tablespoons of olive oil over medium heat.
  • Add the sliced chicken and 2½ tablespoons of the prepared cajun seasoning.
  • Add the andouille sausage and cook until the chicken is no longer pink, about 4-5 minutes.
  • Remove the meat from the pot and add the remaining olive oil.
  • Add the garlic, diced peppers and onions and cook until the onions are transparent and softened, about 5 minutes.
  • Add the milk and stir so that the seasoning is incorporated into the liquid.
  • Turn the heat to high and bring to a boil.
  • Add the uncooked fettuccine, stirring constantly until the noodles are al dente, about 10 minutes.
  • On low heat, add the meat back in and stir so that it's evenly incorporated.
  • Add the cheese and parsley, and stir. Remove from the heat.
  • Enjoy!

¼ cup butter
2 tablespoons olive oil
1 (12 ounce) package pork sausage links, sliced
1 (10 ounce) package frozen bell pepper, celery, and onion blend (such as Pictsweet® Farms Seasoning Blend)
1 (4 ounce) jar sliced mushrooms, drained
2 tablespoons Creole seasoning (such as Tony Chachere's®)
1 tablespoon minced garlic
2 teaspoons ground black pepper
1 pound uncooked medium shrimp, peeled and deveined

Steps:

  • Heat butter and olive oil in a large skillet pan over medium-high heat. Add sausage, frozen vegetables, and mushrooms. 1 12oz package mini rotini pasta (see notes for gluten free and grain free options)
1/2 cup finely diced onion
6 tablespoons unsalted butter
1 pound smoked sausage or andouille sausage, cut into 1/2-inch slices
1 medium red bell pepper, thinly sliced
1 cup heavy cream
1 cup finely grated Parmigiano-Reggiano
1/2 teaspoon salt
1 teaspoon Big and Zesty Creole Seasoning or any other creole seasoning, optional (omit salt if using)

Steps:

  • Cook pasta according to package directions. Remove from heat, drain reserving 1/4 cup of the pasta water, and set aside.
  • Heat oil inlarge skillet over medium-high heat. Add sausage; cook and stir 5 minutes or until lightly browned. Remove from skillet.
  • Melt the butter in the skillet over medium-high heat. Add bell pepper and onion to skillet; cook and stir 2 minutes or until tender. Add heavy cream and creole seasoning (optional) and bring to a boil. Cook until sauce has reduced slightly, about 5 minutes. Remove from the heat.
  • Return the pasta to the pot it was cooked in, set over medium-high heat along with the reserved cooking liquid. Add the veggie butter-cream mixture, sausage, and half of the Parmesan and toss to combine thoroughly. Season with salt and pepper, to taste. Sprinkle with remaining Parmesan and garnish with parsley, if desired. Serve immediately.
