Shredded Beef for Tacos or Burritos image

We love tacos around here, so this is a favorite. I have used the meat to make burritos and enchiladas too. This recipe also works well with pork. The house smells so good when it is cooking! Leftovers freeze great too.

3 lbs beef roast, trimmed of excess fat (I have used brisket, chuck, sirloin, bottom round)
1 large onion, diced
1 cup beef broth
4 ounces tomato sauce
1/4 cup lime juice
2 garlic cloves, minced
1 teaspoon cumin
1 tablespoon chili powder
1 1/2 teaspoons salt
1 teaspoon cilantro
1 jalapeno pepper, seeded and chopped (leave some seeds if you want it spicier)

Steps:

  • Place onion in slow cooker and top with beef roast.
  • In a small bowl, whisk together remaining ingredients and pour over beef roast.
  • Cook on low for about 8 hours.
  • Remove roast from slow cooker, reserving juice.
  • Use 2 forks to shred meat; mix in enough of the reserved juice until it is the desired consistency.
  • Use as filling to tacos, burritos, enchiladas, quesadillas, or nachos.

No Fuss Shredded Beef Tacos image

This recipe was created for a Cinco De Mayo work potluck taco bar that was a big hit. The coffee in the recipe adds a hint of smokiness and assists with tenderizing the meat as it cooks. Serve with warm tortillas and your favorite toppings. For less heat, omit jalapenos.

1 large yellow onion, sliced into thin rings
1 (3 pound) boneless beef chuck roast, trimmed
2 (14.5 ounce) cans chili-seasoned diced tomatoes
1 (14 ounce) can beef broth
1 cup cold coffee
1 (4 ounce) can diced green chiles
2 jalapeno peppers, sliced
4 cloves garlic, chopped
1 teaspoon chili powder
½ teaspoon ground cumin
½ teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • Layer half the onion rings into the bottom of a slow cooker. Place chuck roast on top of onions.
  • Pour diced tomatoes, beef broth, and coffee into the cooker over the roast; stir in diced green chiles, jalapeno peppers, garlic, chili powder, cumin, salt, and black pepper. Spread remaining onion rings over the mixture.
  • Cover the cooker and cook on Low until beef is very tender, 6 to 10 hours.
  • Transfer chuck roast to a bowl and shred meat. Return meat to sauce. Remove onions and serve with meat.

Like the rolled tacos you get from the Mexican restaurants? Now you can get that same taste at home! My family loves this. I hope you do too.

1 1/2 lb shredded chuck roast
2 Tbsp minced garlic
1 pkg onion soup mix
2 pinch pepper to taste
12 corn tortillas or flour tortillas
vegetable oil
guacamole
sour cream
shredded lettuce
shredded cheese

Steps:

  • 1. Place chuck roast in crockpot, add garlic, onion soup mix and pepper. Cover with water and cook on high overnight. You could even add a can of green chilli or jalapeño depending on your taste.
  • 2. Take roast out, shred and place in colander to drain. Get as much liquid put of the meat as possible.
  • 3. Heat a small amount of oil in a pan and dip the corn tortillas in to soften. If you are using flour tortillas you can skip this step. Don't cook too long. Take out tortilla, blot off excess oil and roll meat inside. Set aside and do remaining tortillas and meat until gone.
  • 4. Heat 3 Inchest of oil in a frying pan to 375°. Taking tongs pick up tacos holding them closed with the tongs and hold under oil until they are hard enough to stay closed. Let cook a couple more minutes until crisp. Place on paper towel to drain .
  • 5. Place a bed of shredded lettuce on a plate, top with tacos, guacamole, sour cream and hot sauce if desired. Enjoy!

1 cup beef broth
4 oz tomato paste
1 tsp ground cumin
1 T ground mild chili powder
1/2 tsp salt
12 tortillas
cotija cheese
cilantro
diced onions

Steps:

  • Lay onions in a 6-Quart Crock Pot
  • Lay chuck roast over onions
  • Combine the beef broth, tomato paste and seasonings in a measuring cup.
  • Pour broth mixture over chuck roast and cook on high for 4 hours or low for 8 hours.
  • Once meat is cooked, shred with two forks in the tomato and broth mixture.
  • Put beef on tortillas and top with toppings of your choice.

Homemade Taquitos image

Crispy Homemade Taquitos (also called Rolled Tacos) made with seasoned shredded beef corn tortillas all of the best toppings. They can be baked or fried and are sure to be your new favorite recipe!

1 2.5-4lb beef chuck roast *
Salt and freshly ground black pepper
14 oz can beef broth
½ cup salsa
1 1/2 Tbsp chili powder
1 teaspoon garlic powder
1/2 Tbsp cumin
1 teaspoon dry minced onion powder
20 corn tortillas
Oil for frying
toothpicks
Salsa
Sour cream
Guacamole
Shredded cheese

Steps:

  • For the Slow Cooker: Season roast with salt and pepper. Add chili powder, garlic, cumin, minced onion, beef broth and salsa. Cook on LOW for 7-8 hours or until meat is tender and shreds easily.
  • Remove roast to a plate and shred the meat. Discard any large pieces of fat. Return to the pot to keep warm.
  • For the Instant Pot: Season roast with salt and pepper. Cut it into four large pieces and place in instant pot. Add chili powder, garlic, cumin, minced onion, beef broth and salsa. Cook on manual/high pressure for 50 minutes. When timer beeps allow the pressure to naturally release before removing the lid (about 15-20 minutes).
  • Remove roast to a plate and shred the meat. Discard any large pieces of fat. Return to the pot to keep warm.
  • Assembly:
  • If frying, add about 1 1/2 inches of oil to a large skillet and heat to medium-high.
  • Drain beef and set aside. Heat a non-stick griddle over medium high heat. Cook tortillas for about 15 - 30 seconds on each side until soft and pliable. Remove tortillas to a plate covered with tinfoil to keep them warm and pliable.
  • Spoon about 2 tablespoons of the meat mixture into a line at one end of a tortilla and tightly roll it up. Use a toothpick to secure it.
  • Fried Taquitos:
  • Your oil should be hot (the tortillas should sizzle immediately when you put them in).
  • Fry the rolled tacos in small batches, for a few seconds on each side, rotating them as they cook, until they are golden and crispy on all sides. Place them on a paper towel lined plate.
  • Baked Taquitos:
  • Preheat oven to 425 degrees F. Spray the tops of the tacos with cooking spray , or brush them lightly with oil. Bake for 15-20 minutes or until the shells are crispy.
  • Serve taquitos with guacamole, shredded cheese, salsa and sour cream.

  • Preheat oven to 425°F. Spray large baking sheet with cooking spray. Drain tomatoes and reserve liquid; set aside.
  • Heat large nonstick skillet over medium-high heat. Cook beef until crumbled and brown. Stir in taco skillet sauce and 1/3 cup tomatoes; bring to a simmer.
  • Place 6 tortillas on a microwave safe plate. Cover with a damp paper towel and microwave 45 seconds, until hot and pliable. Working 1 at a time, sprinkle tortillas with about 1 tablespoon cheese and add about 1/3 cup beef. Roll tightly and place seem side down on baking sheet. Repeat with all remaining tortillas, meat mixture and additional cheese.
  • Brush tortillas with oil. Bake 14 to 16 minutes, until crispy. Meanwhile, place beans and tomato liquid in a microwave safe bowl; cover. Microwave on HIGH 2 minutes, stirring halfway through.
