1 lb lump crabmeat, jumbo, picked clean (all cartilage and shell removed)
1/4 lb butter, melted
1 teaspoon champagne vinegar
1/2 teaspoon Worcestershire sauce
1/2 teaspoon hot sauce

Steps:

  • Preheat oven to 450º.
  • Mix all ingredients together gently, to avoid breaking up jumbo lumps.
  • Spread into a baking dish (pie pan or small - 8 X 8).
  • Bake for 6-8 minutes, until it starts to lightly brown.

My friend got this out of Ladies' Home Journal many years ago. You can substitute scallops, or use a combination of seafood, if you like.

1/4 cup softened butter
2 teaspoons chopped fresh basil
1 tablespoon chopped fresh parsley
2 teaspoons white wine vinegar
1 teaspoon dry breadcrumbs (use gf if necessary)
1/2 teaspoon fresh lemon juice
1/4 teaspoon white pepper
1 tablespoon butter
1 lb fresh peeled shrimp
1/4 cup white wine
chopped fresh parsley (for garnish)
lemon slice (for garnish)

Steps:

  • Norfolk Butter: Combine ingredients and beat until smooth.
  • Makes enough for 1 lb of shrimp or 2 to 3 servings.
  • Shrimp: Melt the 1 T butter in skillet over medium heat.
  • Add shrimp and stir-fry until just pink; transfer to serving plate and keep warm.
  • Add wine to skillet and reduce to 1 T (3 to 4 minutes); remove from heat and gradually whisk in Norfolk Butter until just incorporated and sauce is slightly thickened.
  • Pour over shrimp, sprinkle with fresh chopped parsley and garnish with lemon slices.
  • Serve over linguine or rice.

1 lb Shrimp, Jumbo Lump Crab or scallops, raw and shelled
4 Tbsp Butter
4 cloves Garlic, chopped
Dash of Old Bay Seasoning
Juice of 1 Lemon
Few dashes of Tabasco
1/4 cup of White Wine
Salt and Black Pepper

Steps:

  • Heat your pan until fairly hot, then add butter and garlic and keep stirring so the garlic does not brown and turn bitter. Add your seafood and continue stirring, then. add all remaining ingredients and cook until the seafood is done You will want to have all ingredients handy, as you need to work quickly. If it's shrimp, they are done when they curl and turn pink and if it's langoustines or crab, they just need to be heated through. It's 2-3 minutes max. Then remove the seafood with a slotted spoon and set aside in your serving plates and then reduce the sauce down by half and pour over the seafood and serve.

6 jumbo shrimp (fresh or frozen)
1 tablespoon sliced green onion
1 tablespoon butter or 1 tablespoon margarine
1/2 teaspoon lemon juice
1 dash bottled hot pepper sauce
2 1/4 ounces canned crabmeat, drained,flaked,and cartilage removed
1 tablespoon fine dry breadcrumb
lemon wedge (to garnish)

Steps:

  • Thaw large shrimp, if frozen.
  • To shell fresh or thawed shrimp, open each shell lengthwise down the body.
  • Hold the shrimp in one hand and carefully peel back the shell starting with the head end.
  • Gently pull on the tail portion of the shell to remove the entire shell.
  • Butterfly shrimp by cutting down the back almost but not all the way through; remove vein, and repeat with remaining shrimp- set aside.
  • In a small nonmetal bowl microwave sliced green onion and butter or margarine, uncovered, on 100% power for 1 to 1½ minutes or till the green onion is tender.
  • Stir in lemon juice and bottled hot pepper sauce.
  • Toss with flaked crab meat and bread crumbs.
  • Spread shrimp open.
  • Place cut side up, in a 10-inch oval casserole.
  • Cover with vented clear plastic wrap.
  • Microwave, covered, on 100% power for 45 seconds, rotating the casserole a half-turn once.
  • Drain off liquid and rearrange shrimp, placing the least cooked portions to the outside of the casserole, and then spoon crab mixture over shrimp.
  • Microwave, covered, on 100% power about 1½ minutes or till shrimp are done and crab mixture is heated through, rotating the casserole a half turn once.
  • Serve with lemon wedges.

½ lemon, juiced

1 teaspoon minced garlic
½ teaspoon salt
½ teaspoon ground black pepper
½ teaspoon garlic powder
3 (4.25 ounce) cans white crabmeat, drained
1 (4 ounce) can tiny shrimp, drained
2 tablespoons canola oil, or as needed

Steps:

  • Combine bread crumbs, mayonnaise, eggs, mustard, capers and brine, lemon juice, Worcestershire sauce, dill, Creole seasoning, garlic, salt, pepper, and garlic powder in a bowl; mix until well combined.
  • Combine crabmeat and shrimp in a small bowl. Fold into the mayonnaise mixture until well blended. Cover and refrigerate for 30 minutes.
  • Remove from the refrigerator and form into 12 patties.
  • Heat oil in a large skillet over medium-high heat. Cook seafood patties in batches in the hot oil, until browned, 5 to 6 minutes per side. Transfer to a paper towel-lined plate and repeat with remaining patties, adding more oil if needed.

1/2 lb white crab meat, picked and chopped
1/2 bunch green onion, chopped finely (use some of the green tops)
1/4 cup chopped fresh parsley
1 (14 ounce) package pepperidge farm cornbread stuffing mix
1/4 cup sherry wine or 1/4 cup marsala wine
1 egg
1/2 cup melted butter
salt and pepper

Steps:

  • Pick shell bits, if any, out of the crab, and chop.
  • Melt the butter and let it cool while you chop the shrimp, onions and parsley.
  • Combine all ingredients and mix well.
  • Stuff into fish, beef, chicken, pork, mushrooms--whatever takes your fancy and cook according to the directions of whatever you stuffed.
  • If cooking alone as a side dish, bake at 350 degrees for 25 minutes.
