AIR-FRYER SHRIMP CAESAR SALAD
My friend Jane and I have a favorite lunch spot that serves a fantastic shrimp caesar salad on Wednesdays. I made my own version so I can eat it whenever I want. Save a lot of time by using your air fryer! -Marla Clark, Albuquerque, New Mexico

- Preheat air fryer to 375°. In a large bowl, combine romaine, tomatoes and cheese; refrigerate until serving. In a shallow bowl, mix flour, salt and pepper. Add shrimp, a few pieces at a time, and toss to coat; shake off excess., In batches, place shrimp in a single layer on greased tray in air-fryer basket; spritz with cooking spray. Cook until lightly browned, 2-3 minutes. Turn; spritz with cooking spray. Cook until lightly browned and shrimp turn pink, 2-3 minutes longer. Remove and keep warm., Drizzle dressing over romaine mixture and toss to coat. Top with shrimp. If desired, sprinkle with additional cheese and pepper; serve immediately.

- Prep: Drain and pat chickpeas dry with a paper towel. Toss together with oil and salt (or your chosen seasoning).

GARLIC SHRIMP AND CHICKPEAS

- Position a rack in the upper third of the oven and preheat to 450 degrees F. Toss the chickpeas with 1 tablespoon olive oil and 1/2 teaspoon salt in a large baking dish, then spread out in a single layer. Bake until golden, about 20 minutes.
- Meanwhile, toss the shrimp with 4 tablespoons olive oil, the garlic, lemon zest, red pepper flakes and 1 teaspoon salt in a medium bowl. Marinate 10 minutes.
- Remove the baking dish from the oven and scatter the shrimp over the chickpeas. Return to the oven and bake until the shrimp are pink, 5 to 8 minutes. Drizzle with the remaining 1 tablespoon olive oil and sprinkle with the parsley. Serve with lemon wedges.

AIR FRYER FRIED SHRIMP
These air-fryer shrimp are perfectly crispy and easy to make without the hassle of heating up a large pot of oil. Serve with our spicy remoulade, or substitute any of your favorite condiments for dipping.

- For the fried shrimp: Spray the basket of a 3.5-quart air fryer with cooking spray and set aside. Pat the shrimp dry between a couple paper towels, then season with a pinch of salt and a few grinds of black pepper.
- Whisk the flour with 3/4 teaspoon salt and few grinds of pepper in a shallow bowl or baking dish. Whisk the eggs with a pinch of salt in another shallow bowl. Add the panko to a third shallow bowl. Dip a shrimp in the seasoned flour, shaking off any excess, then dip in the beaten eggs. Dredge in the panko, turning until evenly coated. Transfer to a large plate or a rimmed baking sheet and repeat with the remaining shrimp.
- Preheat the air fryer to 385 degrees F. Working in batches, place some of the shrimp in a single layer in the fryer basket, then spray lightly with more cooking spray. Cook until the shrimp are golden brown and cooked through, flipping halfway through, about 10 minutes.
- For the spicy remoulade sauce: Meanwhile, stir together the mayonnaise, pickled jalapenos, mustard, ketchup, hot sauce and scallion in a small bowl until smooth. Serve with the fried shrimp for dipping.
SPICY SHRIMP AND CHICKPEA SALAD
This warm salad of garlicky shrimp and herby chickpeas comes together in just 15 minutes and requires very little effort. Canned chickpeas, Fresno chiles, parsley and red onion get a quick marinade in a creamy citrus dressing while the shrimp cooks in a little garlic and olive oil. Fresno chile adds a little heat, but if you're sensitive to spice, you can remove the membranes and seeds before adding the chile to the salad. Make the dish your own by adding arugula, or swap the parsley for cilantro or the shrimp for scallops. Serve warm with a hunk of crusty bread, and enjoy leftovers straight from the fridge the next day with a squeeze of lime or lemon juice.

- In a large serving bowl, combine the lemon zest and juice, lime zest and mustard. Whisk in 3 tablespoons olive oil until smooth; season with salt and pepper. Add the chickpeas, onion, chile and most of the parsley (reserving some for garnish), and toss to coat with the dressing. Season with salt and pepper; set aside.
- Heat the remaining 2 tablespoons olive oil in a 12-inch skillet over medium-high until shimmering. Add the garlic and red-pepper flakes, and cook, stirring constantly, until fragrant, about 30 seconds, pulling the pan from the heat briefly if it seems like the garlic is burning.
- Add the shrimp to the pan, season with salt and pepper and stir to coat with the garlic and oil. Cook until the shrimp are pink all over with a golden crust in parts, stirring and flipping the shrimp halfway through, about 4 to 6 minutes total. Turn off the heat, then squeeze the lime juice over the shrimp in the pan, stirring to combine and scraping up anything on the bottom of the pan to coat the shrimp.
- Serve the shrimp on top of the salad. Garnish with the remaining parsley and serve.
SHRIMP CAESAR WITH AIR FRIED CHICKPEAS
Steps:
- First make the air fried chickpeas by combining all the ingredients in a mixing bowl.
- Add to air fryer basket and cook at 380 degrees F for 12-14 minutes, or until crispy enough to your liking. Tossing half way through.
- Pat dry your shrimp and season with salt, pepper, garlic powder and paprika.
- Add oil to a skillet over medium high heat and add the shrimp in a single layer.
- Let cook about 2-3 minutes per side or until cooked through.
- Remove from heat and set aside.
- Assemble salads by combining romaine, cucumber, air fried chickpeas, avocado, shrimp and shaved parmesan. Add more cracked pepper if desired.
- Drizzle with vegan caesar and enjoy!
