SHRIMP SALTIMBOCCA WITH POLENTA
As stated in the Nov/Dec 2009 edition of Eating Well, "Saltimbocca is an Italian word that literally means "jump mouth," presumably because of its bold flavors. The dish is traditionally made with veal and seasoned with sage and prosciutto. We love these flavors in our simple version made with shrimp. Store-bought polenta turns golden brown under the broiler for an easy accompaniment. Serve with: Sautéed green beans and red peppers."

- Position rack in center of oven; preheat broiler. Coat a baking sheet with cooking spray.
- Place polenta rounds and prosciutto on the baking sheet. Broil on the center rack until the prosciutto is crisp, 4 to 5 minutes. Transfer the prosciutto to a plate. Continue broiling the polenta, turning once, until golden brown, about 10 to 12 minutes per side.
- Meanwhile, whisk lemon juice and cornstarch in a small bowl. Sprinkle shrimp with 1/8 teaspoon pepper. Heat oil in a large nonstick skillet over medium heat. Add onion and cook, stirring, until beginning to brown, 2 to 3 minutes. Add shrimp and cook, stirring, until the shrimp just turn pink but aren't cooked through, about 2 minutes. Pour in clam juice (or broth), bring to a boil and cook until the liquid is slightly reduced, about 2 minutes more.
- Whisk the cornstarch mixture again and add to the pan along with sage and the remaining 1/8 teaspoon pepper. Cook, stirring, until thickened, 1 to 2 minutes. Top the polenta with the shrimp and sauce, crumble the prosciutto over the top and serve immediately.

SHRIMP SALTIMBOCCA WITH FENNEL AND ARUGULA SALAD

- For the shrimp: Peel and devein the shrimp, leaving the tails on; reserve the shells. Break off and reserve the heads. Add a drizzle of EVOO to a medium saucepot over medium-high heat. Add the shrimp heads and shells and saute for a few minutes. Add the bay leaf and enough chicken stock to cover; simmer for 15 to 20 minutes to infuse. Strain the shrimp stock and set aside.
- Rinse and dry the peeled shrimp and place them in a large mixing bowl. Add some EVOO, salt and pepper, and the lemon zest, chile flakes and garlic; toss to combine. Place a sage leaf down the back of each shrimp, where it has been deveined, and then wrap each shrimp carefully and snugly with a slice of prosciutto.
- In a large skillet, heat the EVOO (one turn of the pan) over medium to medium-high heat. Add the wrapped shrimp and cook, turning occasionally, until the prosciutto is crisp and the shrimp are pink and firm, 6 to 8 minutes. Remove to a platter and set aside. Douse the pan with the vermouth and about 1/2 cup shrimp stock, and swirl. Swirl in the butter to make a sauce, then squeeze in the lemon juice. Pour the sauce over the shrimp.
- For the salad: Toss the fennel with the arugula. Add the lemon juice and some salt and pepper. Drizzle with olive oil to coat. Toss well. Add the shaved Parm.
- Serve the shrimp with some crusty bread and the fennel and arugula salad on the side.
SHRIMP SALTIMBOCCA LINGUINI
This easy Shrimp Saltimbocca Linguini takes all of the ingredients of a classic chicken saltimbocca and turns it into a seafood lover's dream.

- Bring a large pot of water to a rolling boil. Season liberally with salt.
- Cut prosciutto in pieces that will fit each shrimp. Wrap shrimp tightly with prosciutto. Roughly chop the remaining prosciutto.
- Heat a large non-stick skillet to a medium heat. Add shrimp, cook until prosciutto is brown and crisp, and shrimp are cooked, about 1-2 minutes per side. Remove shrimp and set aside.
- Add pasta to boiling water. Cook until aldente. (It should finish cooking around the time the sauce is done)
- Add butter to the same pan and turn the heat up to medium-high. Once butter has melted, continue to cook over a medium heat until the butter begins to brown, swirl the pan until the butter becomes deep golden brown, about 2 minutes. Turn the heat down to medium and add in onion. Cook until onion is slightly softened, about 2 minutes. Add garlic and sage, cook another minute.
- Add in white wine, and then reduce the heat to a simmer. Simmer for 1-2 minutes until reduced and the alcohol has cooked out. Add in lemon juice, salt, capers, and chopped prosciutto, Cook another minute.
- Using tongs, add pasta to the sauce. Toss until the sauce has completed coated the noodles. If necessary, add some salty, starchy pasta water to loosen the sauce up.
- Season to taste with salt and pepper. Transfer to a platter and top with shrimp.
SHRIMP SALTIMBOCCA
Shrimp wrapped in prosciutto with sage leaves served with a tasty browned buttery, lemony sage dipping sauce.

Steps:
- Wrap the shrimp up in the prosciutto along with one small sage leaf optionally skewering them either on sticks or with toothpicks to hold the prosciutto on.
- Heat the oil in a pan over medium heat, add the shrimp and cook, about 2-3 minutes per side and set aside.
- Melt the butter in the pan, add the sage leaves and cook until the just start to change a darker color, and set aside on paper towels.
- Add the garlic and saute until fragrant, about a minute.
- Add the wine to the pan, deglaze, simmer until it has reduced by half, about 3-5 minutes, add the lemon juice and butter and remove from heat stirring in the butter as it melts.
- Season the sauce with salt and pepper to taste, crumble the fried sage leaves and mix them in.
- Serve the shrimp along with the dipping sauce and enjoy!

- Cook fettuccine according to package directions. Meanwhile, in a large skillet, saute spinach in oil for 2 minutes or until spinach begins to wilt.
