SHRIMP SCAMPI
The beauty of this dish is that it can be served many ways: over rice, tossed with pasta, plain with a side of crusty herb buttered bread, or as an appetizer with small toothpicks. Steps:
- Bring a large pot of water to a boil over high heat. Add the pasta and a generous pinch of salt and cook until al dente. Drain the pasta, reserving 1/2 cup of the pasta water.
- Meanwhile, heat a large saute pan over high heat. Add 1 1/2 tablespoons of the oil and swirl it to coat the pan. Add the shrimp in a single layer. Sprinkle with salt and pepper. After 2 minutes, turn the shrimp over; add the remaining 1 1/2 teaspoons of oil, the garlic, and the red pepper flakes. Stir constantly for 1 to 2 minutes, regulating the heat to avoid burning the garlic.
- Add the lemon zest and white wine to the shrimp. Stir to reduce the wine slightly. Add the lemon juice, cooked pasta, and reserved pasta water to the pan. Toss to combine. Remove from the heat and sprinkle with the parsley. Serve with a drizzle of olive oil and extra red pepper flakes on each serving.
CREAMY ONE-POT SPINACH SHRIMP PASTA RECIPE BY TASTY

- In a heated pot, melt butter and olive oil. Add garlic and shrimp, seasoning with salt and pepper.
- Cook until shrimp is pink, then put aside.
- In the same pot, add milk, broth, and pasta.
- Cook for 10 minutes, stirring occasionally, so that the pasta does not stick to each other.
- Once pasta is al dente, add in spinach, salt, pepper, seasoning, and cheese, and mix until spinach is wilted and everything is coated in the sauce.
- Add the shrimp back in and give it a stir until fully incorporated.
- Serve with some extra parmesan cheese, if desired.

- Bring a large pot of salted water to a boil; cook linguine in boiling water until nearly tender, 6 to 8 minutes. Drain.
- Melt 2 tablespoons butter with 2 tablespoons olive oil in a large skillet over medium heat. Cook and stir shallots, garlic, and red pepper flakes in the hot butter and oil until shallots are translucent, 3 to 4 minutes. Season shrimp with kosher salt and black pepper; add to the skillet and cook until pink, stirring occasionally, 2 to 3 minutes. Remove shrimp from skillet and keep warm.
- Pour white wine and lemon juice into skillet and bring to a boil while scraping the browned bits of food off of the bottom of the skillet with a wooden spoon. Melt 2 tablespoons butter in skillet, stir 2 tablespoons olive oil into butter mixture, and bring to a simmer. Toss linguine, shrimp, and parsley in the butter mixture until coated; season with salt and black pepper. Drizzle with 1 teaspoon olive oil to serve.

- Prepare angel hair pasta according to box directions. (boil 2 minutes).
- In a 2 qt pot, add olive oil and heat.
- Add garlic and cook until golden brown.
- Add shrimp, salt, pepper and lemon juice, bring to boil.
- Add spinach, stir and cover.
- Cook until spinach has shrank (4 to 8 minutes), stir once half way through.
- Stir well.
- Pour over prepared pasta.
- Stir well.
- I use very little salt when I cook, more can always be added at the table.

This is one of my daughters' favorite recipies that I have created. Her dad and I surprised her last week at her home with this dish. We had the extra key to her house and we decorated her home before she came home from work. She knew nothing, I picked her up as usual and when she entered she saw the display of food. She was so happy and very surprised. I made my famous Shrimp Scampi and Spinach Fettuccine. She loved it.

- Place fettuccine pasta in a medium pot, of 4 cup of water. Bring it to a boil, and place pasta into hot water. Season the Shrimp with lemon, olive oil, salt and pepper.
- In a serparate sauce pan put peeled and deveined shrimp in to the pan with olive oil and butter. Put the garlic in to the pan and let it sutee until it firm but soft. Then proceed to place shrimp into the pan. As the shrimp start to cook, 2 mintues before your shrimp starts to get tender, put in your spianch and simmer about 15 min. Set aside until pasta is ready. Then place pasta into a serving tray and top with Scampi. Best served hot. Sprinkle bread crumbs and fresh parsley as garnishment. Enjoy your family will love it.

- Cook the rice according to the package directions.
- Melt the butter in a large saucepan over medium high heat. Add the garlic and cook for 1 minute. Add the wine, tomatoes 1/4 teaspoon salt, and 1/4 teaspoon pepper. Simmer for 3 minutes, until the sauce has thickened slightly.
- Stir in the shrimp and simmer until cooked through, about 4 minutes.
- Add the spinach and stir until wilted.
- Spoon the rice into a serving dish or divide among individual plates. Top with the scampi and sprinkle with the tarragon.
