SICHUAN-PEPPER OIL

Sichuan-Pepper Oil image

We tried making this oil with Sichuan peppercorns that were not ground but found eating them whole just too numbing. Like the red-chile oil above, it's the perfect thing for adding a final blitz of flavor.

Time 30m

Yield Makes about 1/4 cup

Number Of Ingredients 3

2 teaspoons Sichuan peppercorns
1/4 cup peanut oil
an electric coffee/spice grinder

Steps:

  • Pulse peppercorns in grinder until coarsely ground.
  • Heat oil with peppercorns in a 1- to 1 1/2-quart heavy saucepan over moderate heat, swirling pan occasionally, until peppercorns turn a shade darker, about 1 minute, then transfer to a heatproof bowl and cool to room temperature. Stir before using.

Provided by Liberty Mendez

Categories     Dinner

Time 20m

Number Of Ingredients 11

2 tbsp rapeseed oil
300g steak, sliced into thin strips
1 tbsp cornflour
2 mixed peppers, deseeded and finely sliced
200g baby corn, halved on an angle
2 small red onions, finely sliced
½ tsp chilli flakes
1 tsp Sichuan peppercorns, ground using a pestle and mortar
2 tbsp low-salt dark soy sauce
1 tbsp chilli oil (optional)
300g cooked brown basmati rice

Steps:

  • Heat 1 tbsp rapeseed oil in a large wok or frying pan over a medium- high heat. Add the steak strips and cornflour, stir to coat the steak in the flour, and fry for 2-3 mins until the steak is golden. Remove to a plate and set aside until needed.
  • Add the remaining oil, the peppers, baby corn and red onions and fry for 3-4 mins until starting to soften. Sprinkle in the chilli flakes, Sichuan pepper, then add the steak back along with its resting juices. Fry for 1 min until fragrant. Splash in the soy sauce and 50ml water and stir until the sauce coats the beef and veg. Drizzle with chilli oil, if you like, and serve with the rice.

Yield Makes 1 cup

Number Of Ingredients 5

1/4 cup crushed red-pepper flakes
2 tablespoons Szechuan peppercorns
2 cinnamon sticks, broken in half
1 star anise
1 cup safflower or other neutral oil

Steps:

  • Place red-pepper flakes in a small heat-resistant bowl or pint-size jar. In a small saucepan fitted with a candy thermometer, combine peppercorns, cinnamon, star anise, and oil over medium-low heat. Heat mixture until it registers 325 degrees on the thermometer, 10 to 12 minutes. Turn off heat and let steep 8 to 10 minutes until temperature reaches about 240 degrees. Pour through a strainer into bowl or jar with pepper flakes and let cool completely. Transfer to an airtight container or seal lid if using a jar. The chili oil can be stored in the refrigerator for up to 4 weeks.

SICHUAN CHILE OIL

Sichuan Chile Oil image

Spicy chile crisp is a versatile condiment. Use it on noodles, over stir-fries, on eggs, with cold leftover meats, or in cold salads. (It's especially good paired with yogurt and crisp, refreshing vegetables like cucumbers or raw snap peas.)

Provided by J. Kenji López-Alt

Categories     easy, condiments, sauces and gravies

Time 15m

Yield About 1 1/4 cups chile oil

Number Of Ingredients 13

4 dried chiles de árbol, stems and seeds removed (see Note)
2 dried ancho chiles, stems and seeds removed (see Note)
1 cup neutral oil, such as canola, rice bran or soybean oil
4 garlic cloves, smashed with the side of a knife, skins discarded
1 (1-inch) unpeeled knob fresh ginger, smashed with the side of a knife
1 tablespoon Sichuan peppercorns
1 whole star anise pod
1 teaspoon whole cumin seeds
1 teaspoon whole fennel seeds
1 tablespoon granulated sugar
1 tablespoon sesame seeds (black, white or a mix)
1/2 teaspoon kosher salt
1/4 teaspoon MSG powder, such as Aji-no-moto or Ac'cent (optional)

Steps:

  • Using a pair of kitchen shears, cut all of the chiles into 1/2-inch pieces. Toast chiles in a dry wok or saucepan over medium heat, stirring and shaking constantly, until fragrant and lightly darkened in color, about 2 minutes.
  • Transfer toasted chiles to the bowl of a food processor or mortar and pestle, and pulse or pound until the chiles break into 1/8- to 1/4-inch pieces that resemble store-bought red-pepper flakes or flaky sea salt. (Be careful not to overprocess.) Transfer the chile flakes to a heat-proof mixing bowl.
  • Combine oil, garlic, ginger, Sichuan peppercorns, star anise, cumin and fennel seeds in a small saucepan. Heat over low heat until gently bubbling, then cook for 10 minutes, adjusting heat to maintain the barest of bubbling.
  • Set a fine-mesh strainer over the bowl with the chiles. Pour the hot oil through strainer over the chiles. Discard solids. Stir sugar, sesame seeds, salt and MSG, if using, into oil mixture until combined. Allow to cool, transfer to a sealed container, and let rest at room temperature overnight before using. You can store chile oil in a cool, dark pantry for a few weeks, or indefinitely in the refrigerator.
