CREPES

Go French with Alton Brown's foolproof Crepes recipe from Good Eats on Food Network. Add veggies for a savory version; use chocolate and berries for dessert.

Provided by Alton Brown

Categories     dessert

Time 1h25m

Yield 17 to 22 crepes

Number Of Ingredients 6

2 large eggs
3/4 cup milk
1/2 cup water
1 cup flour
3 tablespoons melted butter
Butter, for coating the pan

Steps:

  • In a blender, combine all of the ingredients and pulse for 10 seconds. Place the crepe batter in the refrigerator for 1 hour. This allows the bubbles to subside so the crepes will be less likely to tear during cooking. The batter will keep for up to 48 hours.
  • Heat a small non-stick pan. Add butter to coat. Pour 1 ounce of batter into the center of the pan and swirl to spread evenly. Cook for 30 seconds and flip. Cook for another 10 seconds and remove to the cutting board. Lay them out flat so they can cool. Continue until all batter is gone. After they have cooled you can stack them and store in sealable plastic bags in the refrigerator for several days or in the freezer for up to two months. When using frozen crepes, thaw on a rack before gently peeling apart.

SUNNY'S FAKE CREPES

Sunny's Fake Crepes image

Provided by Sunny Anderson

Time 15m

Yield 4 servings

Number Of Ingredients 5

1/2 cup chocolate hazelnut spread (recommended: Nutella)
4 (8-inch) round whole-wheat tortillas, room temperature
4 tablespoons butter
1 1/3 cups miniature marshmallows
1/2 cup finely chopped toasted hazelnuts

Steps:

  • Spread hazelnut spread on 1 side of each tortilla.
  • In a large pan over medium heat add 2 tablespoons of butter and let it melt until bubbly. Add 2 of the tortillas with the chocolate hazelnut spread side facing up. Using an imaginary line add 1/3 cup of marshmallows down 1 half of each tortilla, making sure to keep them in a single layer. Allow the tortilla to slightly bubble on the pan and check underneath for a golden, toasted color. Fold the tortilla over to form a half circle and slightly press down to seal. Cook until marshmallows start to melt but don't lose their shape. Transfer them to a cutting board. Repeat with the remaining tortillas.
  • Meanwhile, put the hazelnuts on a plate. Cut the tortillas in half, then quickly press the opened sides into the chopped hazelnuts. Arrange them on a serving platter and serve immediately.

CRêPES CAKE

Crêpes Cake image

Provided by Food Network

Categories     dessert

Time 6h20m

Yield 12 servings

Number Of Ingredients 18

4 cups all-purpose flour
4 cups whole milk, at room temperature
12 tablespoons (1 1/2 sticks) unsalted butter, melted
2 tablespoons granulated sugar
1 tablespoon plus 1 teaspoon pure vanilla extract
1/2 teaspoon kosher salt
8 large eggs, at room temperature
Cooking spray
One 8-ounce block cream cheese, at room temperature
3 cups heavy cream
1 cup sour cream
1/2 cup powdered sugar
2 teaspoons pure vanilla extract
4 cups thinly sliced strawberries, plus 7 small strawberries, halved, for garnish
One 26.5-ounce jar chocolate-hazelnut spread
Powdered sugar, for garnish
Whipped cream, for garnish
Shaved dark chocolate, for garnish

Steps:

  • To make the crêpes: In a blender, combine the flour, milk, butter, sugar, vanilla, and salt. Blend until smooth. Add the eggs and blend until completely smooth, scraping down the sides as needed, about 1 minute. Transfer the batter to a large bowl, cover, and refrigerate for at least 1 hour and up to 24 hours.
  • Heat an 8-inch crêpe pan or 10-inch nonstick skillet over medium high and spray with cooking spray. Gently stir the chilled crêpes batter. Add 1/4 cup of the batter and tilt the pan to make sure the mixture evenly and lightly coats the skillet. Cook for about 30 seconds, until the crêpe is lightly browned. Using a spatula, carefully flip the crêpe to cook the other side, about 30 seconds. Slide the crêpe onto a plate. Cool slightly, then transfer to a clean, dry surface. Arrange crêpes in a single layer to cool completely. Repeat with remaining batter, buttering pan occasionally. If crêpes are browning too quickly, reduce heat to medium.
  • To make the frosting: In a chilled bowl of a stand mixer fitted with the paddle attachment, beat the cream cheese on medium speed until smooth, 30 seconds. Switch to the whisk attachment and add the heavy cream, sour cream, powdered sugar, and vanilla. Whip on medium speed until almost stiff peaks form (tips almost stand straight).
  • To make the cake: On a platter, place one crêpe and spread with a generous 1/4 cup of the frosting. Top with a crêpe, then evenly spread on a generous 1/4 cup of the chocolate-hazelnut spread. Top with sliced strawberries. Repeat with the remaining crêpes, frosting, chocolate-hazelnut spread, and sliced strawberries. Cover the cake and refrigerate for at least 4 hours.
  • To serve, sprinkle the cake with powdered sugar. Top with whipped cream and the halved strawberries. Use a serrated knife to slice.

CRAB CREPES

Crab Crepes image

This is delicious on spring or summer evening with a green salad on the side.

Provided by KerriJ

Categories     100+ Breakfast and Brunch Recipes     Crepes     Savory

Time 2h50m

Yield 8

Number Of Ingredients 19

2 cups flour
1 cup cold water
4 eggs
2 tablespoons melted butter
½ teaspoon salt
4 tablespoons butter
½ cup chopped green onion
¾ cup dry sherry
¼ teaspoon salt
¼ teaspoon ground black pepper
3 cups fresh crabmeat, cooked and diced
4 tablespoons butter
6 tablespoons all-purpose flour
2 cups hot milk
¼ teaspoon salt
¼ teaspoon ground black pepper
½ cup heavy cream
2 egg yolks
1 cup grated Swiss cheese

Steps:

  • Place flour, water, eggs, 2 tablespoons melted butter, and 1/2 teaspoon salt into a blender. Cover and blend for 2 minutes. Chill batter in refrigerator for two hours.
  • Heat an oiled, non-stick skillet over medium heat. Pour in enough of the chilled batter to cover half of the skillet. Tip and rotate the skillet until the batter covers the entire area. Cook until the batter turns from wet to moist, and the edges begin to curl away from the sides of the skillet. Turn the crepe over, and continue cooking until lightly golden on the other side. Place the crepe onto a plate, and cover with a kitchen towel to keep moist. Repeat with the remaining batter, lightly oiling the skillet as needed to keep the crepes from sticking.
  • Cook and stir green onions with 4 tablespoons butter in a skillet over medium-high heat until tender, 3 to 5 minutes. Add sherry, 1/4 teaspoon salt, and 1/4 teaspoon ground black pepper; stir to combine. Mix in crab.
  • Melt 4 tablespoons butter in a saucepan over medium-high heat. Whisk in flour. Add milk, 1/4 salt, and 1/4 teaspoon ground black pepper; bring to a boil for 1 minute. Remove from heat.
  • Beat heavy cream and egg yolks together in a small bowl. Gradually add egg mixture to butter-flour mixture, stirring constantly. Fold in grated cheese to form a thick sauce.
  • Pour sauce into crab meat mixture, reserving 1 cup of the sauce; stir to combine.
  • Lay out one crepe on a flat surface. Spoon 2 heaping spoonfuls of crab mixture at one end of the crepe, then roll crepe up around the filling. Repeat with remaining crepes. Top each with reserved cheese sauce and serve.
