- In a skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Remove from the heat; stir in the ketchup, relish, salt, basil and pepper. Stir in cheese. , Spread meat mixture onto buns. Wrap sandwiches individually in foil and place in a baking pan. Bake at 325° for 15-20 minutes or until cheese is melted.

- Preheat a grill to medium high. Heat the olive oil in a skillet over medium-high heat. Working in batches, add the salami in a single layer and cook, turning once, until crisp, about 1 minute per side. Drain on paper towels.
- Add the mushrooms to the skillet and cook, undisturbed, until browned, about 2 minutes. Stir and continue to cook until tender, about 5 more minutes. Season with salt and pepper.
- Form the beef into four 6-ounce patties, about 3/4 inch thick; press the center of each patty with your thumb to make a 1/2-inch-deep indentation. Season the patties on both sides with salt and pepper. Lightly brush the grill grates with vegetable oil, then grill the patties, indentation-side up, until marked on the bottom, about 5 minutes. Flip and cook until marked and slightly firm, about 3 more minutes for medium doneness. Remove the patties to a plate and let rest 5 minutes. Grill the rolls, cut-side down, until lightly toasted, about 1 minute.
- Toss the arugula, vinegar, and olive oil to taste in a bowl; season with salt and pepper. Spread the ricotta on the bun bottoms and top with the burger patties, salami, mushrooms and arugula salad. Cover with the bun tops.

Steps:
- Heat grill.
- In a bowl, combine ground beef, salt and pepper. Mix. Shape into 8 thin patties, 4 inches in diameter.
- In another bowl, combine onion, olives, chilies, basil and salad dressing. Mix well.
- Place 1/4 of mixture on top of each of the 4 patties to within 1/4 inch of edges.
- Top with remaining patty and seal edges.
- Grill 10-12 minutes, turning once.
- Put cheese on patty and serve on rolls.

- In a large bowl, combine Parmesan cheese and garlic. Crumble turkey and turkey sausage over mixture and mix well. Shape into six patties. , Grill burgers, covered, over medium heat or broil 4 in. from the heat for 5-8 minutes on each side or until a thermometer reads 165° and juices run clear., Brush buns with oil; grill, uncovered, for 1-2 minutes or until toasted. - In a bowl, mix turkey, tomato paste, currants, capers, basil, fennel seeds and salt. Form turkey mixture into four 3/4-inch-thick patties. Coat a grill rack or grill pan with cooking spray. Grill patties over medium-high heat until underside is well browned, about 7 minutes; flip and cook 5 minutes more. Top each patty with 2 tablespoons Parmesan; close lid or cover pan. Cook until internal temperature reaches 165°F, about 2 minutes. Brush bottom of each roll with 1 teaspoon vinegar; top with 1 burger, tomato, if desired, and other half of roll.

- In small bowl, combine cheese, olives, and onion.
- Shape ground beef into eight patties, approximately 4 1/2-inch diameter.
- Place approximately 1/4 cup of cheese mixture in center of four patties; top with remaining patties. Press edges firmly together to seal; gently pat to 3/4-inch thickness.
- In small bowl, combine Italian seasoning, garlic powder, and pepper. Press evenly into both sides of each patty.
- Place patties on grill over medium, ash-covered coals. Grill, uncovered, 22 to 24 minutes to medium doneness (160 degrees) or until centers of patties are no longer pink and juices show no pink color; turn occasionally.
- Season burgers with salt, as desired. Line bottom of each roll with one tomato slice; top with burger.
- Add choice of toppings, if desired.
