1/2 pound lean ground beef (90% lean)
1 small onion, chopped
1 teaspoon olive oil
1 garlic clove, minced
2 cans (14-1/2 ounces each) Italian diced tomatoes, undrained
1/4 cup golden raisins
1/4 cup dry red wine
2 tablespoons tomato paste
1 tablespoon sugar
1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon pepper
8 ounces uncooked spaghetti
2 tablespoons minced fresh parsley
2 teaspoons pine nuts, toasted

Steps:

  • In a large skillet, cook beef and onion in oil over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. , Stir in the tomatoes, raisins, wine, tomato paste, sugar, basil, salt and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes or until heated through. , Meanwhile, cook spaghetti according to package directions. Stir parsley and pine nuts into meat sauce. Drain spaghetti; top with sauce.

My mother's family originally came from Sicily and every family member makes his or her own version - this version came most recently via Brooklyn. If there are any leftovers, they freeze very well. MANGIA! Serve with red wine and a good loaf of crusty Italian bread.

3 slices white bread, torn into pieces
¼ cup milk or water
1 ½ pounds ground beef
2 eggs
½ cup grated Romano cheese
1 pinch dried parsley
¾ teaspoon salt, or to taste
¼ teaspoon ground black pepper
3 tablespoons olive oil
4 onion, chopped
6 cloves garlic, chopped
12 (3.5 ounce) links sweet Italian sausage
1 ½ pounds cubed beef brisket
½ pound pork neck bones
4 (6 ounce) cans tomato paste
3 (28 ounce) cans crushed tomatoes
½ cup red wine
4 bay leaves
¼ teaspoon ground cinnamon
¼ teaspoon dried parsley
1 teaspoon dried basil
salt and pepper to taste
3 (16 ounce) packages dry pasta

Steps:

  • To make the meatballs, combine bread and milk or water in a medium bowl. Mix in ground beef, eggs, Romano cheese, parsley, and salt and pepper to taste. Form golf ball-sized meatballs; place into freezer to firm up.
  • To make sauce, heat olive oil in a large pot on medium heat; stir in onion. Cook and stir until the onion has softened and turned translucent, about 5 minutes. Add garlic and 1 sausage link; cook about 3 minutes more.
  • Meanwhile, in a large skillet over medium heat, brown beef chunks and pork neck bones; set aside.
  • When onions and garlic are done, turn heat down to low. Add tomato paste and cook for a few minutes. Stir in the browned beef and pork, crushed tomatoes, wine, bay leaves, cinnamon, parsley, basil, and salt and pepper. Bring sauce to a simmer, then reduce the heat to low and cook for 3 to 4 hours.
  • Once you add the meatballs, let sauce simmer for 1 hour. When sauce is nearly ready, bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Cover pasta with sauce and meatballs and serve immediately.

3 cloves garlic, quartered
1 small dried chili, cut in half,lengthwise
2/3 cup good quality red wine vinegar
3 teaspoons crumbled dried spearmint
1 1/3 cups fruity extra virgin olive oil

Steps:

  • Drop the garlic into a clean 2-cup bottle.
  • Add the chili pepper and pour in the vinegar.
  • Add half the mint, cover the bottle, shake well and leave about 24 hours.
  • In the beginning, the flavouring will float on the surface of the vinegar, but after a day they will sink to the bottom of the bottle.
  • After the flavourings have sunk to the bottom, add the olive oil and the remaining mint.
  • Shake well and let stand 3-4 days, shaking once or twice a day, before using.
  • This sauce will keep for 2-3 months in a cool, dark place.
  • Shake well before using.

Top 1/3 of 3 large celery stalks with leaves
1 medium carrot
10 large fresh sage leaves
1 tightly packed teaspoon fresh Italian parsley leaves
2 tablespoons robust extra-virgin olive oil
1 (1/8-inch) thick slice salami (such as soppressata or Genoa), coarsely chopped
2 medium onions, cut into 1/2-inch dice
Salt and freshly ground black pepper
2 large cloves garlic, minced
Generous pinch to 1/4 teaspoon hot red pepper flakes, or to taste
3/4 cup dry red wine
1 tablespoon tomato paste
1 (28-ounce) and 1 (14-ounce) can whole tomatoes, both thoroughly drained
1 pound penne rigate or bucatini
6 quarts boiling salted water
1 pound creamy whole-milk ricotta (sheep's milk if possible)

Steps:

  • Mince together the celery and carrot, adding the herbs towards the end to chop only coarsely. Heat the oil in a 12-inch skillet over medium-high heat. Add the salami and cook to release a little of its fat. Stir in the minced celery blend, the onions, a little salt, and a generous amount of black pepper. Turn the heat down to medium and saute to golden brown.
  • Stir in the garlic and hot pepper, cooking a few minutes. Add the wine and slowly simmer the mixture until it is almost completely reduced, scraping up the brown bits at the bottom of the pan. Stir in the tomato paste and cook 1 minute. Add the tomatoes, crushing them with your hands as they go into the pan. Cook, uncovered, at a lively bubble (turn the heat up if necessary), stirring and scraping down the sides of the pan with a spatula. Cook 10 minutes, or until thick. Taste for seasoning, cover, and remove from heat.
  • Meanwhile, cook the pasta in rolling boiling water, stirring often, until slightly underdone. Drain in a colander.
  • Add the pasta to the sauce and toss together over medium heat for 2 to 3 minutes, tasting for hot pepper and salt. Spread about 1/3 of the pasta in a heated serving bowl and daub with a third of the ricotta. Layer in more pasta and ricotta, then the remaining pasta, finishing with a few spoonfuls of ricotta. Serve hot.

1 medium onion, chopped

3 bay leaves
2 tablespoons chopped fresh parsley
2 tablespoons chopped capers, drained
1/2 teaspoon dried basil
1/2 teaspoon dried rosemary, crushed
1/2 teaspoon dried thyme
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon salt
1/2 teaspoon sugar
1 cup beef broth
1/2 cup dry red wine or additional beef broth
Hot cooked pasta
Grated Parmesan cheese, optional

Steps:

  • In a Dutch oven, heat 2 tablespoons olive oil over medium-high heat. Brown pork ribs in batches; transfer to a 6-qt. slow cooker., Add remaining oil to Dutch oven; saute onion for 2 minutes. Add garlic; cook 1 minute more. Add next 11 ingredients. Pour in broth and red wine; bring to a light boil. Transfer to slow cooker. Cook, covered, until pork is tender, about 6 hours., Discard bay leaves. Remove meat from slow cooker; shred or pull apart, discarding bones. Return meat to sauce. Serve over pasta; if desired, sprinkle with Parmesan cheese.

4 boneless skinless chicken breasts

1 (19 ounce) can stewed tomatoes
2 teaspoons capers or 2 teaspoons green olives, chopped
2 teaspoons red wine vinegar
1/2 teaspoon cinnamon
fresh parsley, chopped

Steps:

  • Combine basil, oregano, salt and pepper; sprinkle half over both sides of chicken.
  • In large nonstick skillet, heat half of the oil over medium-high heat; brown chicken all over, about 4 minutes. Transfer to plate.
  • In skillet, heat remaining oil over medium heat; cook onion, garlic and remaining basil mixture, stirring occasionally, for about 5 minutes or until onion is softened.
  • Add tomatoes, breaking up with spoon. Add capers, vinegar and cinnamon; bring to boil.
  • Return chicken and any accumulated juices to pan; reduce heat, cover and simmer for 10 minutes or until chicken is no longer pink inside.
  • Sprinkle with parsley and serve.
