Steps:
- Preheat oven to 350°. Line bottom and sides of an 8-inch pan with aluminum foil, allowing 2 to 3 inches to extend over sides; lightly grease foil.
- Microwave chocolate squares and butter in a large microwave-safe bowl at HIGH 1 1/2 to 2 minutes or until melted and smooth, stirring at 30-second intervals. Whisk in granulated and brown sugars. Add eggs, 1 at a time, whisking just until blended after each addition. Whisk in flour, vanilla, and salt.
- Pour mixture into prepared pan.
- Bake at 350° for 40 to 44 minutes or until a wooden pick inserted in center comes out with a few moist crumbs. Cool completely on a wire rack (about 1 hour). Lift brownies from pan, using foil sides as handles. Gently remove foil, and cut brownies into 16 squares.
KATHARINE HEPBURN'S BROWNIES
Steps:
- 1. Melt together 1 stick butter and 2 squares unsweetened chocolate and take the saucepan off the heat.
- 2. Stir in 1 cup sugar, add 2 eggs and 1/2 teaspoon vanilla, and beat the mixture well.
- 3. Stir in 1/4 cup all-purpose flour and 1/4 teaspoon salt. (In the original recipe, 1 cup chopped walnuts is added here as well.)
- 4. Bake the brownies in a buttered and floured 8-inch-square pan at 325°F for about 40 minutes.
- You can cut these brownies into squares, once they have cooled, and eat them out of the pan, but it is so much nicer to pile them on a fancy plate, from which people are going to eat them with their hands anyway. If you want to smarten up your act you can put a square of brownie on a plate with a little blob of créme fraîche and a scattering of shaved chocolate.
FIVE-STAR BROWNIES
There's a bit of my state's history behind these brownies' name and shape. In 1990, when I entered them at our state fair, Kansas was celebrating the 100th birthday of a famous native son, Dwight Eisenhower. In fact, that occasion was the theme of the fair. - In a large bowl, beat the eggs, sugar and vanilla until blended. Beat in butter and shortening until smooth. Combine the flour, cocoa and salt; gradually add to egg mixture. - Grease a 9x13-inch (23x33-cm) dark metal pan with softened butter, then line with parchment paper, leaving overhang on all sides. Grease the parchment with softened butter.
- Combine the chopped chocolate, ¼ cup (30 g) of cocoa powder, and espresso powder in a heatproof liquid measuring cup or medium bowl and set aside.
- Add the butter to a small saucepan over medium heat and cook until the butter just comes to a vigorous simmer, about 5 minutes, swirling the pan occasionally. Immediately pour the hot butter over the chocolate mixture and let sit for 2 minutes. Whisk until the chocolate is completely smooth and melted, then set aside.
- Combine the granulated sugar, brown sugar, vanilla extract, salt, and eggs in a large bowl. Beat with an electric hand mixer on high speed until light and fluffy, about 10 minutes. It will be similar to the texture of very thick pancake batter.
- With the mixer on, pour in the slightly cooled chocolate and butter mixture and blend until smooth.
- Position a rack in the middle of the oven and preheat to 350°F (180°C).
- Sift in the flour and remaining cocoa powder and use a rubber spatula to gently fold until just combined.
- Pour the batter into the prepared baking pan and smooth the top with a spatula. Bake until lightly puffed on top, about 20 minutes.
- Remove the baking pan from the oven using oven mitts or kitchen towels, then lightly drop the pan on a flat surface 1-2 times until the brownies deflate slightly. Sprinkle with flaky sea salt.
- Return the pan to the oven and bake until a wooden skewer inserted into the center of the brownies comes out fudgy but the edges look cooked through, about 20 minutes more. The center of the brownies will seem under-baked, but the brownies will continue to set as they cool.
- Set the brownies on a cooling rack and cool completely in the pan.
- Use the parchment paper to lift the cooled brownies out of the pan. Cut into 24 bars and serve immediately.

VICTORY BROWNIES
I made these on election day and friends and co-workers loved the hint of orange and the sparkle of heat from a pinch of cayenne pepper. Hazelnuts are a star in these brownies, but walnuts can be substituted.

- Preheat oven to 350 degrees F (175 degrees C). Butter 8 inch square baking pan.
- Melt unsweetened chocolate, semisweet chocolate, and butter in a saucepan over low heat. Remove from heat.
- Stir in brown sugar, white sugar, and honey; mix until sugar is dissolved. Beat in eggs, a little at a time. Add flour, salt, baking powder, vanilla, hazelnuts, cayenne pepper, and orange zest. Stir until blended well and mixture is glossy. Pour batter evenly into pan.

FUDGY BROWNIES RECIPE

- Preheat oven to 325 degrees.
- Grease a 9 x 13 inch baking pan. Melt butter or margarine, and then stir in cocoa.
- Add in sugar and eggs to the mixing bowl and stir together.
- Add in vanilla, flour, nuts and salt and beat together well.
- Spoon batter into the prepared pan. Bake 25 to 30 minutes, or until cooked through.
- Mix the frosting ingredients together and spread over the hot brownies and serve.
- You can also let the brownies cool and then frost. This way the frosting is thicker.

SILVER STATE BROWNIES
This recipe was in a raffle basket I won at a convention. The basket was provided by the Silver State Stitchers in Nevada. My family and guests love this recipe; makes good brownies I sometimes use regular chocolate chips and stir them into the batter; instead of the mini chocolate chips sprinkled on top.
