A slight variation on a recipe I received from a fellow Minnesota farm wife. A delicious soup that can also easily be cooked in a slow cooker and freezes well.

½ cup butter
1 finely chopped onion
½ cup chopped celery
½ cup sliced carrots
½ pound fresh sliced mushrooms
¾ cup all-purpose flour
6 cups chicken broth
2 cups cooked wild rice
1 pound boneless skinless chicken breasts, cooked and cubed
½ teaspoon salt
½ teaspoon curry powder
½ teaspoon mustard powder
½ teaspoon dried parsley
½ teaspoon ground black pepper
1 cup slivered almonds
3 tablespoons dry sherry
2 cups half-and-half

Steps:

  • Melt butter in a large saucepan over medium heat. Stir in the onion, celery and carrots and saute for 5 minutes. Add the mushrooms and saute for 2 more minutes. Then add the flour and stir well. Gradually pour in the chicken broth, stirring constantly, until all has been added. Bring just to a boil, reduce heat to low and let simmer.
  • Next, add the rice, chicken, salt, curry powder, mustard powder, parsley, ground black pepper, almonds and sherry. Allow to heat through, then pour in the half-and-half. Let simmer for 1 to 2 hours. (Note: Do not boil or your roux will break.)

Simple 2-Serving Chicken and Wild Rice image

This is one of my favorite chicken and rice meals that is very easy to put together. You can also use regular brown rice with this - I always used to make this with plain brown rice until one day I was out of brown rice and I tried it with a wild rice blend and loved it! The wine and the basil make this slightly sweet which is balanced by the lemon juice and broth. This makes 2 very good size servings and is also very good leftover if you are cooking for 1! If you don't start out with frozen chicken breasts they will be overcooked by the time the rice is perfectly cooked - if you are using thawed chicken I would suggest adding it during the last 45 minutes of cooking after removing the foil.

2 frozen chicken breasts
1 lemon, juiced
4 tablespoons butter
2 teaspoons dried basil leaves, crushed
2/3 cup wild rice (or brown rice, not instant!)
2/3 cup white wine
2/3 cup chicken broth
salt
pepper

Steps:

  • Preheat the oven to 375°F Place the butter in a 2 quart baking dish and place it in the preheating oven to melt the butter (or just melt the butter in the microwave or saucepan - I just like that I don't have to dirty another dish by melting it right in the baking dish while the oven is heating up anyway).
  • In the meantime juice your lemon and set aside. When the butter is melted take your baking dish out of the oven and stir in the rice, making sure all grains are coated with the butter.
  • Stir in the wine, broth and lemon juice. Add the dried basil crushing it between your fingers. Add salt and pepper to taste and stir well.
  • Place the frozen chicken breasts on top of the rice and cover the baking dish with foil.
  • Bake in the 375F oven, covered for 1 hour. Remove the foil and continue to bake for another 30-45 minutes, or until almost all of the liquid is absorbed and the rice is tender.

1 ¾ cups water
5 tablespoons butter, divided
1 large sweet onion, chopped
5 cups cubed cooked chicken
4 cups shredded Cheddar cheese, divided
2 (10.75 ounce) cans condensed cream of mushroom soup
2 (8 ounce) cans sliced water chestnuts, drained
1 (16 ounce) container sour cream
1 cup milk
½ teaspoon salt
½ teaspoon ground black pepper
½ cup soft bread crumbs
¼ cup sliced toasted almonds

Steps:

  • Combine rice, contents of included seasoning packet, 1 3/4 cups water, and 1 tablespoon butter in a medium saucepan. Stir well and bring to a boil. Reduce heat to medium or medium-low, and simmer, covered, for 5 minutes. Remove from heat and set aside until water is absorbed, about 5 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Melt remaining butter in a large skillet over medium-high heat. Add onion and saute until soft, about 5 minutes. Transfer to a large baking dish with cooked rice. Add chicken, 3 cups Cheddar cheese, condensed soup, water chestnuts, sour cream, milk, salt, and pepper and stir until well mixed. Top with bread crumbs.
  • Bake in the preheated oven for 35 to 40 minutes. Sprinkle with remaining Cheddar cheese and almonds and continue to bake until cheese has melted, about 5 minutes longer.

1 tablespoon garlic powder
1 tablespoon dried thyme

4 carrots, small diced
1 yellow onion, small diced
4 stalks celery, small diced
½ lb cremini mushroom, sliced
5 cloves garlic, minced
2 cups wild rice
8 cups chicken broth
2 cups grated parmesan cheese, plus more for garnish
1 cup heavy cream
1 tablespoon fresh thyme
½ cup sour cream
fresh parsley, for garnish

Steps:

  • In a large bowl, combine the chicken thighs with the salt, pepper, garlic powder, dried thyme, dried parsley, and olive oil. Toss until well coated.
  • In a Dutch oven over medium-high heat, add the chicken and cook until it's golden brown on one side, then flip, and cook the other side, about10 minutes total. Remove the chicken and set aside.
  • To the pan, add the butter, carrots, onions, celery, mushrooms, and garlic. Season with salt and pepper, stir, and cook until the veggies are soft. Scoop out and set aside.
  • Add the wild rice and the chicken broth to the pot. Bring to a boil, reduce to a simmer, and cook the rice for 45 minutes, or until tender.
  • Once the rice is cooked, stir in the Parmesan, vegetables, heavy cream, and fresh thyme. Bring to a boil. Stir in the sour cream.
  • Add the chicken back to the pan.
  • Serve the chicken over the rice and garnish with grated Parmesan and fresh parsley.
