- Cream room temperature butter with a hand mixer, the paddle attachment of a stand mixer, or a wooden spoon until smooth and fluffy. Gradually beat in confectioners' sugar until fully incorporated. Beat in vanilla extract.
- Pour in milk and beat for an additional 3 to 4 minutes. Add food coloring, if using, and beat for thirty seconds until smooth or until desired color is reached.

SIMPLE AND DELICIOUS BUTTERCREAM FROSTING
I decided on a whim yesterday that I wanted to make cupcakes for Canada Day. I didn't have time to buy frosting before getting ready for the fireworks show, so I ended up making my own with ingredients I already had. I was shocked at how quick and easy this was! This basic vanilla recipe makes enough to cover a dozen cupcakes, but feel free to double it (for cakes), triple it, add food coloring or different flavor extracts. If you find this too sweet, you can add a dash of salt to the milk or the vanilla. Personally I like it sweet, and I used salted butter, so I didn't find it necessary.

- Combine the sugar and water in a heavy-bottomed pan, and bring to a boil. Boil, stirring occasionally to clean the sides, until the mixture reaches 248 degrees, the soft ball stage, on a candy thermometer.
- Pour the boiling sugar syrup into the beaten egg, vigorously whisking the egg as you pour so it cooks but does not curdle.
- Slowly add the butter, whisking each addition until it is incorporated. When smooth, spread on cake.

EASY BUTTERCREAM ICING
This is the icing recipe I used when taking Wilton cake decorating classes. It works really well. Since it doesn't have butter in it the icing is more stable, and won't melt therefore works great when the cake is going to be left out. You can store it in the fridge in a airtight container for a month, you will just have to whip it again. I've made the recipe for my vegan friends by removing the meringue powder. For a chocolate version mix in 3/4 cup cocoa. Colours very well, but use food colouring gel so you don't change the consistency. The thin consistency recipe will cover about an 8 inch round cake or 24 cupcakes.

- For stiff consistency icing (flowers), dissolve salt in water.
- Cream shortening, vanilla and water in a standup mixer.
- Mix the meringue powder into the icing sugar.
- Add the sugar to the mixer about a 1/4 cup at a time on medium speed.

- For medium consistency icing (boarders, writing), add 1 tbsp + 3 tsp of extra water.
