1 cup sweet cherries, pitted, with juice saved
1/2 cup olive oil
2 tablespoons walnut oil (or 2 more T extra-virgin olive oil, but the walnut oil adds a ton to the flavor, so I would use that)
1/4 cup balsamic vinegar (white balsamic, red wine or raspberry vinegar)
2 tablespoons lemon juice
2 tablespoons almonds or 2 tablespoons walnuts, chopped
pepper, to taste

Steps:

  • Blend everything in a food processor or blender until smooth.

2 cups cantaloupe balls
2 nectarines, cut into wedges
lettuce leaf
1/2 cup mayonnaise (lowfat is fine)
1/2 teaspoon grated lime rind
2 tablespoons lime juice
1 tablespoon honey

Steps:

  • To make the dressing: mix together all the dressing ingredients until smooth; chill.
  • To make the salad: mix together the fruit; place in a lettuce lined bowl.
  • Serve with Lime Dressing.

If you love cherries, this dressing is really yummy! I use Sleeping Bear Farms cherry concentrate (found in the cooler by the fresh OJ at my grocery store)....it is so good. I usually have to triple this recipe for our family of 6, especially if salad is our main dish.

2 tablespoons 100% cherry juice concentrate
1/4 teaspoon dry mustard
1/4 teaspoon salt
1/2 teaspoon sugar
1/4 cup olive oil or 1/4 cup canola oil

  • Mix all ingrediants in a shaker and shake like crazy.

3 medium fresh beets (about 1 pound)
1 package (5 ounces) spring mix salad greens
2 medium apples, thinly sliced
1 medium carrot, shredded
1/2 cup grape tomatoes, halved
1/2 cup yellow grape tomatoes or pear tomatoes, halved
1/2 cup chickpeas, rinsed and drained
1/2 cup coarsely chopped walnuts, toasted
4 thick-sliced bacon strips, cooked and crumbled
CHERRY VINAIGRETTE:
1/2 cup tart cherry preserves
3 tablespoons olive oil
2 tablespoons red wine vinegar
2 teaspoons Dijon mustard
1 garlic clove, minced
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Preheat oven to 400°. Scrub beets and trim tops to 1 in. Wrap in foil; place on a baking sheet. Bake 50-60 minutes or until tender. Remove foil; cool completely. Peel beets and cut into 1/2-in. pieces., In a large bowl, combine salad greens, apples, carrot, tomatoes, chickpeas, walnuts, bacon and cooled beets. In a small bowl, whisk vinaigrette ingredients until blended. Serve with salad.,

1 garlic, cloved minced
1/2 cup cherry preserves
1/4 cup red wine vinegar
1 cup canola oil
kosher salt
pepper

Steps:

  • In a medium saucepan on medium high heat add vinegar, sugar and garlic till boiling then simmer till reduced by half. Add preserves and cook 1 minute. Remove from heat and cool to room temperature. Whisk in red wine vinegar and then canola oil. Season with salt & pepper.
