Chocolate Sour Cream Frosting image

This is a delicious chocolate frosting that is not too sweet. It is equally good on chocolate or yellow cakes, and the only frosting I use for my chocolate sauerkraut cake.

1 cup semi-sweet chocolate chips (6oz pkg)
4 tablespoons butter
1 teaspoon vanilla
1/2 cup sour cream
1/2 teaspoon salt
2 1/2-2 3/4 cups confectioners' sugar, sifted

Steps:

  • In a small sauce pan, over low heat, melt chocolate and butter together, stirring until smooth.
  • Remove pan from heat, blend in sour cream, vanilla and salt.
  • Gradually add enough confectioner's sugar to make frosting a spreading consistancy.
  • Beat together well (by hand).
  • Spread on cooled cake.

1 1/4 pounds fine-quality milk chocolate, finely chopped
10 ounces fine-quality semisweet chocolate, finely chopped
3 cups sour cream
2 teaspoons vanilla

Steps:

  • Melt chocolates in a double boiler or a large metal bowl set over a saucepan of simmering water, stirring occasionally. Remove bowl from heat, then whisk in sour cream and vanilla. Cool to room temperature, stirring occasionally (frosting will become thick enough to spread). You must work quickly and spread the frosting before it becomes too thick. (If icing does become stiff, reheat over simmering water, then cool and try again.)

This fudge recipe is made with sour cream which gives the candy a pleasant tang. Whenever I sell it at our local Christmas bazaar I never have any left!

2 cups white sugar
½ cup sour cream
⅓ cup light corn syrup
2 tablespoons butter
1 teaspoon vanilla extract
2 (1 ounce) squares unsweetened chocolate
½ cup chopped walnuts

Steps:

  • Butter an 8 inch square baking dish, and set aside. In a heavy saucepan, combine the sugar, sour cream, corn syrup and butter. Bring to a boil; cover and cook one minute. Stir until well blended. Remove the lid, and without stirring, heat to between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface.
  • Remove from the heat, and add the chocolate and vanilla. Do not stir. Set the pan over a wire rack until the mixture cools to about 175 degrees F (80 degrees C). This should take about 15 minutes.
  • Beat the fudge with a wooden spoon until it thickens and loses its gloss. Stir in walnuts, and pour into the buttered dish. Spread evenly, then set aside to cool. Cut into small squares.

3 pkg. (4 oz. each) BAKER'S Semi-Sweet Chocolate (12 oz.), broken into pieces
1 container (16 oz.) sour cream
1/3 cup corn syrup
1/2 tsp. vanilla

Steps:

  • Microwave chocolate in microwavable bowl on HIGH 2 min., stirring after 1 min. Stir until chocolate is completely melted. Cool 5 min.
  • Mix sour cream, corn syrup and vanilla in large bowl until well blended. Stir in melted chocolate until smooth. Refrigerate 30 min. or until spreading consistency.

  • Add the butter and chocolate to a large, heatproof bowl. Bring 1-2 inches of water to a simmer in a medium saucepan. Turn the heat down to low and set the bowl on top. Stir together with a spatula until the chocolate and butter have melted together and are smooth, then remove the bowl from the heat.
  • Once combined, pour into a large bowl and whisk in the cocoa powder and vanilla extract (Note: you can also use an electric mixer for the following steps). Whisk in about half of the sugar and sour cream. The frosting will be very thick at this point.
